TRYING INSANELY SPICY HOT POT IN CHENGDU, CHINA ????????
The fifth day of my journey around China, where I travel from Shanghai, to Chongqing, Chengdu, Xi'an and Beijing. I arrive in Chengdu after taking a short bullet train from Chongqing. I visit The Global Centre (the largest building in the world), Tianfu Square (with the iconic statue of Chairman Mao), drink handmade green tea in Chengdu People's Park, eat spicy local hot pot, and walk along Kuanzhaixiangzi Alley, all in one day.

Thanks so much for watching my food and travel videos!
Mao Cai (& Cooking Oil in China) // Chengdu: City of Gastronomy 42
One of the best things you can eat in Chengdu is Mao Cai, the “instant hot pot” dish that you don’t have to cook yourself. It really is one of my favorite Sichuan meals. Simply put, it’s a bunch of meat and vegetables boiled in a flavorful broth and then covered in a spicy sauce. It’s an easy meal out if you are a tourist and can’t speak Chinese. All of the items are laid out in a cooler and you pick which ingredients you want, keeping the meat and the vegetables separate (because they are different prices), and then they weigh it up and tell you the cost.
A short time later and you’ll be chopstick deep in a souped up bowl, fighting off the spice, and pulling out your favorite slices of meat, vegetable, and tofu.
Of course, almost every spicy dish in Sichuan comes with a generous helping of chili oil, and mao cai is no different. Oil can not be avoided in Sichuan province. There is so much of it that you’re likely to see men wheeling big blue barrels of used oil out of restaurants in the evening.
Being the ever-inquisitive person that I am, I decided to follow the oil to see where they were taking it.
My adventure led me down a path that I wish I didn’t take. A real problem in China is gutter oil - people taking used oil and refining it, boiling it, filtering it, repackaging it, and selling it as new oil. It’s very illegal - you could be executed for doing it - but it still remains a problem in the country. Since I’m living in probably the oiliest province in China (a single hot pot might use over a kilogram of oil), this is a huge concern for me. Gutter oil can cause indigestion, insomnia, and can even lead to stomach or liver cancer. The Chinese government have be taking huge steps to clean up the oil industry, but as we all know - oil isn’t an easy thing to wipe up.
WHERE TO GET MAO CAI IN CHENGDU
Well, after all that gutter oil talk you probably want a high end restaurant to try mao cai in.
One place that’s popular with the locals…
Restaurant: 川渝双骄 - Chuān yú shuāng jiāo
Address: 望平街134号 - 134 Wangping Street
Map:
A more exciting option that people can’t get enough of goes by the name Wúmíng mào cài, which means Nameless Mao Cai. This pretty much literal hole-in-the-wall does things a bit differently. They sell portions of ingredients (rather than weight). There is less selection, but the flavor is incredible. Just point at the bowls you want and you should be eating amazing food in no time.
Address: 西二道街19号附1(近金色夏威夷) - 19 West 2nd Street
Map:
Note: only open from 10:30-2PM
Or you can just watch for the symbols: 冒菜
There are many mào cài places all over Chengdu.
In this series, I am eating my way through a deck of cards. I bought a deck of food themed playing cards that feature a different Sichuan dish on every card. Every week I'll shuffle the deck and pick one random card to hunt down and sample. Chengdu was the first Asian city to be named a UNESCO City of Gastronomy. It's full of incredible food - a lot of which you probably don't know about.

FEASTING on AUTHENTIC and SPICY Sichuan Hot Pot! (Chengdu, China)
Sichuan: The home of spicy food! If you ever find yourself going to Sichuan province in China, you can't really avoid eating some spicy food. It is practically in everything over there!
In this video, I feast on authentic and spicy sichuan hot pot at a famous chain restaurant known as Xiao Long Kan Traditional Hot Pot! Highly recommended.
We ordered the medium spicy version and to be honest, it wasn't that spicy. What's more, the chilies from all the other customers' hot pot released some kind of irritant into the air. Upon entering this restaurant, my nose started feeling irritated and I started sneezing lol. When you have dozens of pots boiling/frying chilis in the pot, they are bound to send airborne particles in the air and I definitely felt it!
This feast was delicious! What an experience! The soup base was tasty and had a nice kick to it. Uber flavourful!
Thanks for watching!

In this food video travel vlog, I'm (Trevor James, The Food Ranger), bringing you to eat some of the most UNIQUE Chinese noodles!
We're starting the noodle tour in Beijing, China, and enjoying a huge bowl of Beijing Zhajiangmian AKA Beijing Zhajiang noodles, one of the most fragrant and satisfying noodle chews you'll ever experience. AND, we're complimenting that bowl of Beijing noodles with a delicious bowl of pork organ stew, an intense organ aroma stew with chopped intestines and lungs. Delicious!
After traveling to Beijing to eat noodles, we're flying direct into Lanzhou, the home of the world famous muslim Chinese street food. Here, the local Hui chinese cook up some of the best Halal Chinese food in the world, and have a UNIQUE specialty that is worth flying for, the Lanzhou lamian, AKA Lanzhou ramen AKA lanzhou beef noodle soup! WOW! This is one of the BEST noodle dishes you'll ever taste! And watching the extremely tasty Lanzhou noodles being hand pulled is one of the most satisfying things to watch too! The beef noodle soup is made with beef fat and bone and also lots of local radish which gives it an incredibly complex and satisfying aroma to slurp on!! And you can order up as many slices of beef to put on top of your lanzhou noodles as well!
After traveling to Lanzhou, we're flying in to Chengdu to eat Sichuan food and of course, the one and only Sichuan Dan Dan noodles!!! Dan dan noodles or Dandan mian as they are called here in China are one of the most incredibly aromatic and Xiang bowls of noodles you'll ever experience. The spicy chili oil and the intense pork aroma with a slight earthy kick from pickled mustard greens is truly unlike anything in the whole world. You have to fly here to eat these! They are absolutely incredible! AND, we're topping off the noodles with a nice plump bowl of Hongyouchaoshou AKA Chinese hot chili oil wontons! They burst in your mouth with flavour and chili oil! WOWWW!!! In Chengdu, Sichuan cuisine is at the top of it's game, super flavourful and intense with Sichuan chili and peppercorn, and I definitely recommend flying in to eat it!
After Chengdu dan dan noodles, we're taking a direct flight to Shanghai to eat my personal favourite bowl of noodles in the city, and a bowl that is worth flying in direct to China to eat for, the majiang mian AKA sesame butter noodles. The noodles are full of chili oil and sesame butter mixed together, so you have this EXTREMELY satisfying nutty and spicy combo over top of springy al dente noodles, and, you can top it off with some nice spicy pork chunks! It doesn't get any better than that!! Another BIG WOW!!!
After shanghai, we're finishing this food travel video by flying in direct to Hong Kong, another world famous food destination, to eat some cantonese cuisine and some southern Chinese noodles, the ganchaoniuhe, AKA stir fried chinese rice noodles with tender slices of beef! We're visiting a local daipaidong AKA Chinese street food alley stall that is packed with hungry locals who all love eating tons of delicious Cantonese cuisine and seafood! At this daipaidong, aiwensheng, you can eat a lot of different Chinese seafoods and stir fried cantonese cuisine dishes, but we came in solely to eat the stir fried rice noodles, but we couldn't help ourselves and ordered a mud crab and some fried seafood as well because it looked so good! Another HUGE WOW!! China has some of the best food in the world, and definitely the BEST noodles in the world!!

In this Chinese Street Food tour video, I take you around many places in Chengdu. First, I visited this local market near the outskirts of Chengdu, Sichuan, China, and found Chinese street food and the atmosphere to be mind blowing and exciting! It was truly an experience visiting this Chinese street market! So much food and Sichuan ingredients, so many flavours to try! Afterwards, I rode my bike around to many different locations.
Please like: facebook.com/foodrangin
I visited this morning market on a Sunday morning in Chengdu at 8am with an empty stomach and money to blow with the goal of tasting foods and chatting with as many locals as possible. This is a true China experience. It was so busy, with so many people, so many things to buy and look at, tons of vegetables, meat, live chickens, live hens, live roosters, everything you could want really. Fresh handmade noodles, fresh Sichuan cold liangbancai, and a huge meat market deli area with hanging pork and beef to choose from. All of the locals were friendly and talkative, although a bit surprised to see a foreigner walking through the area!
If you're visiting China as a tourist, you'll definitely want to take a walk through a busy morning market like this. There are countless street foods to try and people to chat to (If you speak a little mandarin). This market was mind blowing!
Rather than trying hot pot in Chengdu or hot pot in Chongqing, you could try some way cooler food in Chengdu at local market like this. This should be a top priority in my opinion!
Chinese cuisine is so diverse, and I consider myself lucky to be able to live in Sichuan, eating Sichuan food everyday, tasting all the top Chinese foods to try whenever I want. I've decided to stay living in China for at least another 2 or 3 years to get the feel of it and eat as much as I can!

We tasted a few amazing dishes, bright and early!
First up, for breakfast, we found a lady selling this incredible milk cheese, kind of like curdled milk, right on the street. You can eat it plain or you can order it fried for breakfast with a lot of sugar. We ended up trying both.
Then, we walked down the street and had a nice and hearty and healthy lunch soup, and rice as well. Super tasty and delicious!
Then we went for a walk and found some street huajuan rolls stuffed with fermented tofu, very strong and pungent!
All of this was found during the weekly farmers market on the street in Shaxi every friday! If you come to Yunnan in Southern China, come to Shaxi on a friday to visit one of the most amazing street markets! You have to come check it out!
After that, we went for a lunch and tasted classic bai cuisine, including local Matsutake mushrooms and amazing salted pork, which kind of tasted like pastrami! So delicious!!

China has so many amazing street foods to try, and I've been filming and documenting them for you for the past 4 years. In my opinion, the best noodle dish in China is dan dan noodles, right here in Chengdu, Sichuan. China has some of the best street food around the world, and these dan dan noodles were INSANELY GOOD, some of the best noodles in China for sure!
If you're traveling to China to eat and try different street foods, and perhaps want to learn a little bit about Chinese food and chinese cooking in the process, you need to try a few different variations of Dan Dan noodles. When they prepare the traditional Chinese dan dan noodle recipe right on the street, you can watch as they scoop the main ingredients like chili oil, soy sauce, sichuan peppercorn, and garlic right into the noodle bowl and then place the steaming hot noodles right over top. It's truly satisfying! After they put the noodles over top, they place their signature fried ground pork on top, known in Chinese as shaozi.
When your dan dan noodles arrive to your table, it is very important to mix up all the chili oil and all of the ingredients throughout. This ensures that the flavour and the hot oil gets coated onto each noodle before you take a bite. It's also quite satisfying mixing the noodles and watching the dark red oil slowly turn each noodle from white into red and silky smooth.
When you take your first bite, you'll understand why this is one of the BEST Chinese street foods you need to try. The spicy noodles are coated with an incredibly aromatic chili oil and really send you straight up to heaven! It's one of the best forms of Chinese cooking!
If you are traveling to china and want to find these famous Dan dan noodles, here are the addresses:
1) Dawanmian, AKA big noodle bowl:
Restaurant name: 大碗面店
Address: 成都市过街楼街26-6号
2) Deep alleyway dan dan noodles:

Chinese street food near my new apartment outside Chengdu, China.
I'm just discovering the Chinese street food scene here near my new apartment. There is definitely a lot of delicious Chinese food to be found, and I've spent the last couple weeks moving in to my new place and waiting for my new visa to study at the Sichuan culinary institute here and become a Sichuan chef! It's a two year program that I am so excited for!
If you missed the last video, I extended an invitation to all of my subscribers to come Couch surf at my place and stay in the spare room. I would love to have you over if you're visiting Chengdu! I really want to meet more of my subscribers! You can stay for 1-4 nights and we can hang out! I would love to show you around my new area when I'm free. Please make your couchsurfing requests anywhere from 2 nights to 6 weeks in advance, and I can host up to 2 guests. If I'm hosting already, I'm really sorry, but I cannot double book the apartment nor make alternate arrangements to meet up, as it's too hard logistically. So please make your request just if you would like to spend a night or a few. Right now, I'm accepting guests up until December 15th 2016, and will resume in January after some holidays,so if you make a request for after then, it will be hard to say whether I can host you or not.

Visit my new blog for details about where to eat in Chengdu:

A Travel Vog : HotPot Of Chengdu, Sichuan, China.
Chengdu's Best Hotpot With Incredibly Spicy Deadly Beef
This is my choice for the best hotpot in Chengdu. That being said, there are around 10,000 hotpot restaurants in Chengdu, so I clearly can't try them all. I went to this place because it is highly rated on China's version of Yelp (Dianping), and I was told it had the best broth in the city. The atmosphere and the service are also great, but the taste is what I'm really looking for. After trying it, I was sold. It's incredibly fragrant, spicy, numbing, and rich.
If you're unfamiliar with Sichuan hot pot, it's a hot bubbling cauldron of oil and broth, enriched with mala flavor. Mala is numbing Sichuan peppercorns (ma), and spicy peppers (la). This place packs an incredible amount of mala in their pot. They deliver the pot loaded with dry ingredients, pour in some water, and then turn on the heat. Everything melts into a lava like liquid. When it's bubbling like mad, it's time to cook your items.
We ordered celtuce (asparagus lettuce) slices, fatty beef, cow stomach, winter melon, meatballs, sweet potato noodles, bamboo shoots, and some slices of beef that's listed on the menu as deadly beef. It was covered in a TON of chili. The mouth burn that it created was intense, but I loved the taste. Hotpot is all about spiciness. Yes, it's possible to get a non-spicy version, but what's the point of that?
With so many hotpot places in Chengdu, it's hard to recommend one, but if you're looking for an authentic, hidden away, mind-blowingly delicious hotpot - this is your place.
The purpose of this outing was research for my soon to come guide to food in Chengdu. I SWEAR I'm almost done this thing. It's taken me a long time to make it, but when it's done I'll be able to confidently say it's the best guide out there for food in Chengdu. With 70 dishes - including what they are, a photo, and where to get them, plus restaurant recommendations, and so much more.
Watch for the guide on my site:
I'll also post a link here where it's done.

I visited this busy Chinese restaurant on a Saturday early afternoon at around 11:30 am with already two bowls of noodles in my stomach and looking for more. My goal was to taste as much food and chat with as many locals as possible, that's the true China experience. It was so busy, with so many people, there were so many different foods to eat and look at, tons of vegetable dishes, meat dishes, everything you could want really.
However, if you go to the place I did, DO NOT order the intestine dish. It was disgusting.
Instead of trying hot pot in Chengdu or hot pot in Chongqing, you could try some way cooler food in Chengdu at local fly restaurant like this. This should be a top priority for traveling in China in my opinion!
Chinese cuisine is so diverse, and I consider myself lucky to be able to live in Sichuan, eating Sichuan food everyday, tasting all the top Chinese foods to try whenever I want.

3 The sliced beef in the Chinese muslim area (Chinese Halal Food).

Spicy Beef (& Sichuan Chili Peppers) // Chengdu: City of Gastronomy 30
This week I’m eating Shui Zhu Niu Rou, a spicy Sichuan beef dish that is a must eat in Chengdu. This dish is hot, and so I decided it was time to breakdown one of Sichuan’s most important culinary ingredients - the chili pepper! And what better place to do that than the chilli pepper market in Chengdu.
In this video, I show you the different types of hot pepper that you’ll find in Sichuan food. I’ll discuss how hot they actually are, how hot peppers are used in Sichuan food, and the origins of the chili pepper in Sichuan cooking.
All this before I even try shui zhu niu rou, which is one of my favourite dishes. The spiciness that hits you upon the initial bite, sends your senses into a frenzy. Your palate opens up and the other flavours, the more complex and more subtle ones, suddenly announce themselves and the dish becomes more than just a spicy meal. Shui zhu, which translates to water cooked, is a special Sichuan cooking technique that involves boiling the beef in a broth, arranging the ingredients in layers, and then pouring hot oil over hot pepper and Sichuan peppercorn that is sprinkled on top. The oil scorches the ingredients and their flavours come out.
WHERE TO GET SHUI ZHU NIU ROU (Boiled Beef) IN CHENGDU
Shui zhu niu rou, and other shui zhu dishes, are quite easy to find in Chengdu. I was very pleased with the place I went:
回锅肉饭店 (Twice Cooked Pork Restaurant), map here -
If you prefer something more upscale you can try this popular chain restaurant:
红杏酒家 (Apricot Restaurant), map -
If you’d like to visit the chili pepper market… to be honest with you, I don’t know if it’s still a chilli pepper market. At one time it was called hot pepper city (hai la cheng in Sichuan dialect), but the sign seemed to have been taken down when I was there. The map program has it marked as 辣椒城 (la jiao cheng or hot pepper city in Mandarin). Nevertheless, there were still plenty of hot pepper vendors selling large quantities of chilis. You can find the market here:
In Chinese, this dish is: 水煮牛肉 (shuǐzhǔ niúròu). The total cost for my large bowl was 39 RMB (about $6.20).
Subscribe below to follow along. Better yet, after subscribing hit the bell icon to get notified whenever I post a new video.
The weekly video will be posted every Thursday at 3PM EST until all 54 cards have been tried.
Also tune in Tuesday at 3PM EST for more of my videos.

Chinese noodles are said to be the best in the north of China, but I've found some amazing noodles here in Sichuan, in Southern China. In Sichuan province, there is a large variety of different noodles to try. One of my favourite, even more so than the internationally famous Dan Dan noodles (dan dan mian 担担面) is the mixed sauce noodles with cowpeas, the jiangdoumian 豇豆面, they are top notch. Some of them are like Chinese street food, while others are in restaurants. Most of them are good.
►The BEST VPNs For China:
I found this place in Chengdu after biking around one night in search of the best noodles with a hungry stomach. I love watching the local Chinese cooking and getting to taste the noodles afterwards brings so much joy. Chinese cuisine is so diverse, and noodles are one of the staples. Each recipe is different, and in Chengdu, Sichuan, I've come to love noodles more than rice or even many of the stir fried dishes. There is beef noodle soup, dan dan noodles, dry chili paste mixed sauce noodles, spare rib noodles, sweet potato noodles with intestine, and a lot of them are really spicy. There are also many hand pulled noodle joints and blade-sheared noodles as well.
The name and address for this local noodle joint is:
Name: 廖老幺杂酱面(Liào lǎo yāo zá jiàng miàn)
Address: 金鹏街12号 (Jīnpéng jiē 12 hào)

Over the next few years, I'm going to travel around the world and document as much food as I can for you! I love delicious food! This channel will show you real Chinese food and real local food, not that stuff they serve in the Buzzfeed challenge.
Thanks for watching, and please feel free to leave a comment, suggestion, or critique in the comments below!
Please make sure to subscribe, it's the best way to keep my videos in your feed, and give me a thumbs up too if you liked this food video, thanks, I appreciate it! You could also share the video too if you liked it, that would be awesome.
