Absinthe - The Drink That Was Banned 100 Years
Why Beer, Wine and Spirits? This is a different segment that highlights companies and entrepreneurs on a different way of story telling - travel documentary. These are stories of entrepreneurs in the beer, wine, and spirits industry, and we can learn a lot from the way other founders have started their breweries, wineries and distilleries and see the world with Jeff Bradford.
What an honor and experience it was to sit down and talk to Yves Kübler. The legalization of absinthe in Switzerland and the United States is largely due to Yves Kübler's lobbying efforts. The United States Alcohol and Tobacco Tax and Trade Bureau (TTB) approved the formula for Kübler Absinthe in 2004, and approved the product for sale in the United States in May 2007 after three years of discussions among Kübler, Food and Drug Administration, TTB, and U.S. Customs and Border Protection. These discussions proved to be instrumental in opening the door for many brands of absinthe to be legally sold or produced in the United States.
The history of Kübler
Kübler was launched in 1863 by J. Fritz Kübler in Môtiers, Switzerland. Môtiers is the capital of the Val-de-Travers, the birthplace of absinthe. This region sits near the eastern border of France. Fritz opened the Blackmint Distillery in 1875, and received numerous awards and medals in competitions around the European theater before the Swiss government banned absinthe in 1910.
In 2001, the Swiss ban was lifted and the brand was revived by Fritz's great grandson Yves (a fifth generation Kübler), who runs the distillery only a few miles from its original site in the Val-de-Travers.
“Kübler Absinthe (well known by connoisseurs as Fée Verte or Swiss La Bleue) falls back on the long tradition of the KUBLER dynasty who distilled this famous product from 1863 until its prohibition on October 7, 1910. After 93 years of slumber, Kübler Absinthe was reborn thanks to the decision of the Swiss Parliament in 2003.

How To Drink Absinthe
About two hundred years after the first birth of absinthe, Claude-Alain Bugnon, who had been born in the region but who had worked in the oil business, first became interested in the drinks enjoyed over generations by his ancestors. Like many families in the region, he started to make his clandestine absinthe at home, fighting for space in the laundry with his wife!
Starting in 2000, he soon gained a reputation that began to spread beyond Switzerland. Using a recipe that dated back to 1935, he developed a new absinthe that he dedicated to its creator, Charlotte. Americans discovered his Clandestine La Bleue (or CLB as some called it) through various .... channels of distribution.
And then in 2005, as absinthe developed throughout the world, Claude-Alain became the first distiller in the town where absinthe had been born to go legal.
Since 2005, Claude-Alain's absinthe has become popular with absinthe lovers in Europe, North America and Asia. As it comes to the USA through more normal channels of distribution, some have asked whether, now that it is legal, it is now really Clandestine. By keeping its traditional name, it honours those who kept the absinthe fairy alive in Switzerland during the twentieth century and welcomes a new generation of drinkers.
How is La Clandestine different from most other absinthes? In fact, it is the ONLY absinthe hand-crafted in the village where absinthe was first born.
Every stage of the process used to distill and bottle La Clandestine is hand-crafted. Choosing the best plants, distilling each small batch, bottling and labelling.
True to the traditions and now to the laws of Switzerland, La Clandestine absinthe is distilled (rather than just macerated as are some cheaper absinthes). None of the family of La Clandestine absinthes have any added artificial colour. All are 100% natural.
Hand-crafted in the birthplace of absinthe, La Clandestine need no longer be a secret pleasure!

Chasing the Green Fairy on the French-Swiss Absinthe Route
In this episode of Al-Kee-Hol, we followed our host Dominique Rousake on a trip along the “Route de l’Absinthe”, the beautiful French-Swiss absinthe route, and watched as he learns about the history and effects of absinthe—the potent, anise-flavored spirit that was a favorite of Vincent van Gogh, Ernest Hemingway, Edgar Allan Poe, Oscar Wilde, as well as many more artists and thinkers.
Dominique meets up with the owners of French and Swiss distilleries to find out more about the differences between their nations’ varieties of absinthe. They share a few of the stories about how and why absinthe was made illegal—and how people continued to make it anyway. The people who live along the absinthe route are crazy about the green fairy, and we witness their passion firsthand. The journey traverses snowy hills and vast forests, ending in France, where absinthe was first invented. Here, Dominique tries a meal comprised of mostly absinthe ingredients.

“It’ll f@#$ you up,” people said to me when I told them about the upcoming absinth tasting at Druide Bar in Berlin, Germany. It was an Airbnb Experience and a cool way to learn about the mysterious liquor.
Most absinth are bottled at 70 percent alcohol or higher. It contains a psychoactive ingredient called thujone which is from wormwood, along with anise and fennel.

Paillettenkleider, Absinth und Swingmusik -- der Geist der zwanziger Jahre weht wieder durch die Berliner Partylandschaft. „Bohème Sauvage heißt eine Partyreihe der Gesellschaft für mondäne Unterhaltung, die einmal im Monat das Lebensgefühl der Golden Twenties aufleben lässt. Mit jeder Party wechselt die Location. Mal trifft man sich im Wintergarten-Varieté oder im Grünen Salon der Volksbühne, auch der Bassy Club und das Reingold waren schon dabei. Für eine Nacht schlüpfen Nostalgie-Fans in eine andere Rolle und tun so, als lebten sie in den zwanziger Jahren. Auf der Tanzfläche wird zu Charleston und Swingmusik geschwoft und im verrauchten Hinterzimmer bei Black Jack, Roulette und Poker das Reichsmark-Spielgeld auf den Kopf gehauen. Sequined clothing, absinthe, and swing music -- the spirit of the twenties is once more taking hold of the Berlin party scene. Bohème Sauvage is the name of a series of parties held by the Gesellschaft für mondäne Unterhaltung (Sophisticated Entertainment Company), which recaptures the golden twenties lifestyle once each month. Each party is in a different location. They are held at the Wintergarten-Varieté or in the Grüne Salon of the Volksbühne, the Bassy Club and Reingold have also been used. For one night, nostalgia fans take on a new persona and act as if they were living in the twenties. On the dance floor, they dance to the Charleston and swing music, and in the smoky backroom, bet imitation Reichsmarks on blackjack, roulette and poker.
There is a strict dress code in force: If you cannot show that you are at least wearing suspenders and a hat, you will be turned away at the door. But most of the partygoers go all out getting dressed up in any case: Charleston dresses, feather boas, silk stockings, evening bags, and satin gloves are the order of the day for the ladies. Men can generally be found in a pinstripe suit or tuxedo with a bow tie and pocket handkerchief.
The main drink served for the evening is absinthe, which is available with or without the aniseed flavor. At the Bohème Sauvage, the authentic habit of infusing sugar cubes with the absinthe is used. The sugar is then caramelized, stirred into the absinthe, and the glass is topped up with water. A good place to get yourself in the mood with some absinthe before the party is the Absinth depot in Weinmeisterstraße in the Mitte district, where the green glowing beverage is readily available.
