Ashford Castle
Beside the peaceful Lough Corrib, the staggeringly impressive Ashford Castle near Cong is the image of fairy-tale fantasies. Spanning hundreds of acres of stunning leafy estate, this is one of Ireland's greatest castle hotels brimming with history, tall tales and a guest list crammed with famous names (King George V, Oscar Wilde, Omar Sharif, Brad Pitt...). On the borders of County Galway and Mayo, the first recorded brick on this site was laid in 1228 and from the mid-1800s until 1921 it was the prolific Guinness family's country retreat. Since becoming a hotel in 1939, Ashford developed into the pre-eminent countryside playground it is today. Days are filled with falconry, golf, horse riding, clay pigeon shooting, pampering at the health and beauty centre, leisurely cruises on Lough Corrib and fishing with an Orvis endorsed guide. Ashford Castle is also a mecca for food lovers. Chef Stefan Matz's exceptional cuisine showcases Ireland's seasonal, organic produce in a variety of ways: the fine dining five-course table d'hôte evening menu in the George V Dining Room (the heartbeat of the castle adorned with 11 Waterford crystal chandeliers); casual bistro-style à la carte meals at Cullen's at the Cottage (a short walk away); and daily snacks in the Drawing Room. There's also nightly entertainment you can't afford to miss.
