Chef Masashi Yamada Serves Wild Game Hunted in the Mountains of Japan — Omakase Japan
Chefs at Yanagiya have followed the tradition of irori ever since the restaurant’s opening shortly after World War II. “Irori was the meal gathering place, the cooking place,” says Yamada of the traditional heated sunken earth. “It used to be normal in Japanese homes, but now with modern civilization and convenient times, they’re gone.”
The invitation-only restaurant serves fresh meat and fish supplied by local hunters and fishermen on the same day. “Sometimes we even go fish ourselves,” Yamada adds. Private chefs cook the omakase over charcoal right in front of guests, adhering to irori’s rules. “This is what Japanese style originally looked like,” Yamada says. “Look, feel, smell the aroma.” Chef Yamada specializes in meats like duck, venison and even bear.

- About the Cooks -
Amanda is a Canadian from Montreal living in Japan for the past 3 years. Currently based in Tokyo, she’s traveled all over the country in search of good eats. Amanda is particularly fond of all things sweet--from traditional Japanese daifuku and fluffy pancakes to pumpkin ice cream and yuzu lemonade.
Nathan is a Japanese-American raised in both rural Japan and the US. He came to Tokyo 6 years ago and has since devoured every bowl of ramen in the city. He can usually be found in any small drinking alley searching for the best brews and cocktails in the city.
Yuma is a sake sommelier and bar/restaurant owner from Gifu, Japan. After working in finance in the US for 5 years, he quit his corporate job to return to Japan and start his own food tour business. He now runs tours in Tokyo, Kyoto, and Osaka, and is always searching for the best new thing to try. He often spends his time experimenting with new sake and shochu cocktail recipes.
- Gyoza Recipes -
Gyoza Recipe 1 - Avocado & Octopus Gyoza
Filling:
100 g minced pork
50 g diced avocado
50 g chopped octopus
dash of salt
Sauce:
20 g Japanese mayonnaise
30 ml soy sauce
10 g wasabi
Mix pork, avocado, octopus, and salt in a bowl. Distribute into gyoza wrappers, fold edges and fry in olive oil. Mix dipping sauce and serve.
Gyoza Recipe 2 - Shephard’s Pie Gyoza
Mashed potato filling:
1-2 boiled potatoes
50 ml milk
15 g butter
2 cloves chopped garlic
dash of salt
dash of pepper
dash of parsley
Meat filling:
100 g ground beef
50 g chopped onion
50 g chopped carrots, corn, peas
Mash potatoes and mix in additives. Mix meat filling separately and place a heaping teaspoon of each filling into the gyoza wrapper without mixing the two. Fold edges and fry in vegetable oil, then serve hot.
Gyoza Recipe 3 - Apple Pie Gyoza
Filling:
200 g diced apples
1 tbsp brown sugar
20 g butter
1 teaspoon cinnamon
Sauce:
50 g cream cheese
Lightly sauté apples with butter, sugar, and cinnamon. Let cool and distribute into gyoza wrappers, fold edges, and fry in sesame oil. Heat and stir cream cheese for dipping sauce, then serve.

The Water City | Gujo Hachiman 名水の町・郡上八幡
Gujo Hachiman, also known as the Water City! It's just about in the middle of Gifu Prefecture, and I highly, highly recommend visiting!! It's a mountain city with rivers running through the middle. There are koi fish everywhere, you can jump into the water, and the are tons of old-fashioned stores with awesome things to look at. I absolutely loved it!

Not snowing in Shirakawago during Christmas / Boxing Day!! Looks dry! 26 DECEMBER 2019
Made a trip down to Shirakawa-go Village via Kanazawa from Kyoto; an arduous journey but worth every minute spent there albeit there's no snow that we could enjoy but the village itself is pretty phenomenal & impeccable - which is known to it's UNESCO status. First time to experience the Minshuku with over 100 years old history, no complains but more compliments with the services offered - from dinner service to the futons prepared, very warm & considerate. Took a light stroll down the street and explore different types of food from the legendary HIda Beef to Miso Rice Cake. Tasty but expensive! Was surprise to find out koi reared in the local drain. Drains in Japan are literally clean and you'll be surprise with lots of fish in it.

Takayama with Rie, Ono Castle, Most Delicious Japanese Food, Drone - Trip day 7
Took a trip to Gifu, Takayama - one of our favourite places. It was pretty quiet since golden week was just a few weeks ago. But that made it easier to explore. Took a dip in an onsen, had my favourite Japanese food, and put the drone up over the damn for a nice aerial view.
