Elements of Natural Building Course in Lake Atitlan, Guatemala
Houses and buildings are the nuclei of any site, through which the majority of energy and resources flow to be either wasted or maximized for best use. And yet, most permaculture courses barely touch on physical structures! We here at Atitlan Organics think that your house and other structures deserve more attention as integral and essential parts of your overall permaculture design. That is why we offer this one-week course grounded in the permaculture principles offering a deep dive into the art and practice of Natural Building. From stone to cob to natural plasters, you'll learn a wide range of natural building styles and technique which can be put to use in any climate or region of the world. Learn how to reduce your footprint and maximize your efficiency all while creating beautiful, durable structures! We like to think of it as Permaculture for Zone 0.
Each day is split into two parts: a hands-on practical in which you get the chance try out different techniques in natural building, and a classroom session which delves deep into topics such as stone foundations, building with cob, and troubleshooting design flaws.
UPCOMING COURSE DATES: January 18-25, 2020 and March 21-28, 2020.

Greetings. I'm Shad and I'm coming at you from Atitlan Organics here in Tzununa, Lake Atitlan, Guatemala.
Today we're going to be talking about alternative ways to keep happy healthy chickens no matter where you live in the world.
Before we get into that I want to start by looking at ecosystems.
I'm gonna paint you a picture. Imagine there's a raccoon walking along in a forest and all of a sudden, BOOM, it drops over and dies.
What happens?
Within a matter of minutes, things start to come and use the resources that are from that raccoon body.
So maybe some birds come and get some of the fur. Some scavengers eat some of meat and within a couple of days all of the raccoon body has been worked back into the forest.
This is an example of a healthy ecosystem and of an Active Decay Cycle!
But let's look at an alternative. What happens if that same raccoon is walking in a walmart parking lot and falls over and dies? Then what happens?
The next day maybe some flies come and lay some eggs. Maybe a couple of seagulls or pigeons or some weird birds come.
It starts to smell really bad. It could potentially get people sick. Eventually someone has to come and expend human enegy and effort to clean it up because that resource has become a waste.
And that's the big difference. An Active Decay Cycles has no waste. All potential waste gets worked back into the system.
But what does this have to do with chickens?
Well lets consider out typical backyard chicken setup.
Everyone recommends that first you build a chicken coup and then you give them a range, maybe sectioned off by fence. Or maybe they don't have any fence and they're just allowed to go wherever they want.
But what happens over time?
On the first day the chickens go out and they eat all their favourite plants and all of their favourite bugs. They go back in. The next day they go and eat their next favourite plants and bugs.
As soon as their favourite plants start to grow again the chickens immediately come and eat them back down.
And over time the chickens change the composition of plant species that are growing on their range. Now the range is no longer providing the nutritional benefits for the chickens.
Furthermore, their manure and constant scratching
burns the organic matter and creates bare patches and hard ground in the range. It starts to look less like a forest and more like a walmart parking lot.
Which leads to unhealthy or sick land, which eventually leads to sick chickens.
So if free range is not an acceptable solution, then what are our alternatives?
As long as you have enough space to build a small chicken coup, you can keep happy healthy hens.
How do we do this?
We will build the active decay cycle directly underneath the chickens.
So lets go check this system out!

VLOG#001 - Limes, Chicks, y mas!
The pilot episode of our new Atitlan Organics VLOG! Check out a bumper crop of limes, the preparation for our new baby chick endeavor, and as always, a bit of lite gardening. And don't forget to Pee Outside! Check out everything else we're up to at atitlanorganics.com!
We start out as always with a nice harvest session. Limes are literally dripping off the trees. All managed completely organically, these limes are absolute health food to the extreme. We put the juice of one whole line into a glass of water every morning to keep the body alkalized and feeling great.
We checked out the book review of the old school classic, Success with Baby Chicks by Robert Plamondon. Great book with tons of info. Absolutely essential for raising day old chicks. We are raising Cornish cross broilers for meat birds but we will also use the same set up with a few minor adjustments for the laying hens that arrive in a few weeks.
Then we checked in on the project of the week, which is a wattle and daub chick house to raise our new baby chicks. The techniques used to build the chicken coop are amazing and considered natural building or bio construction. For more information on natural building, check out
We swing by the Bambu Guest House to see what's for lunch. Always some delicious farm to table food. More info at

How to kill a chicken. Detailed Instructions of the butcher porcess.
Get Your Composting Chickens Comic Book
How to kill a chicken, the full process. How to kill, pluck, eviscerate, and butcher a chicken in a home or backyard setting. Thorough explanations of every step and done in under 12 minutes. Learn proper killing technique, setup, and scalding details. We process the chicken, from live bird to meat with organs, head, and feet.
It starts with the kill, using a sharp knife. Using cones, we drain the blood from the chiken, ad then bring it over to te hot water bath. the water in the pot is heated to 160 degrees F, assuming that it will cool off a bit, by ten degrees or so, which is perfect for scalding.
We dunk the chicken for ten to fifteen seconds, moving the body all around. then lift the body up ad wait, and dunk again.
Then we get to the evisceration. Taking out the organs. First, you take off the feet. Then position the bird on its back with the neck towards you. slip your finger in, along the neck, under the skin and through the membranes. separate all the organs from the inner body cavity.
then position bird on its breast with its but towards you. Cut a square around the butt hole, without cutting the pooptube. Cut through the fat, and the membranes, and then pull pooptube and all organs, using the gizzard as the holding point to pull everything out.
Save liver, pancreas, lungs, heart, and gizzard.
Its all in the video.
