The truffle market is increasingly dynamic, given that we have an increasing number of clients. Also, we have begun to trade with emerging countries - we sell huge amounts to the USA, India, China, Argentina and Brazil.

Although truffle production isn't really escalating in itself, on the contrary, it's in the demand (for truffles) that we're seeing the explosion.

It's particularly difficult to estimate France's truffle production. Depending on the years, it can be very unpredictable - during a really bad year, we can have only 20 tons of truffles in the whole of France. In a year like this year, I think, I can generate about a hundred ton.

Cultivating truffles here, in Provence, is about planting for future generations. When you do this, you have 10% of trees which will yield truffles. I couldn't sanction planting 9-thousand trees on land of this size, 30 hectares of land which you can cultivate - there'd only be 900 trees which yield.

You need to learn how to trim a tree very early in its life, so you get used to its size - not just the size of the tree, but also the size of its roots. It's necessary to trim the roots during the March Moon so that it reproduces, it mycorrhizes (symbiotic fusing between a fungus and the roots of a plant), because that's how the truffles gets what it needs.
