A Special Kind Of Childcare Teacher
Ayuni has mild intellectual disability. When the childcare group under Presbyterian Community Services (PCS) decided to train her and other Grace Orchard School students with mild intellectual disability to work in childcare centres as teacher aides, questions arose.
Would their presence give the teachers more work? Would the children be able to tell the difference? And would their parents be willing to give them a chance?
Here's the story of one of the trainees, Ayuni's transformation - from a quiet and reserved girl to a confident young woman who dreams of becoming a childcare teacher.

How to Make Soft Coffee Buns (aka Paparoti/Rotiboy), bread with coffee
In Taiwan, we have something called Mexican Bun. It's basically this really soft bread with melty butter on the inside and a incredibly delicious coffee topping. You'll regret if you don't make it ;) Currently working on Chinese subtitles :)
Ingredients (makes 6 buns (80g each):
--- Bread Dough ---
- 110g (1/2 cup) milk + 20g (2 tbsps) water (microwave for 25-28 secs, or until lukewarm)
- 3g (1 tsp) active dry yeast
- 240g (2 cups) bread flour
- 30g (3 tbsps) all purpose flour
- 30g (2 tbsps) white granulated sugar
- 1/4 tsp salt
- 1 egg (50g), room temp
- 30g (1 1/2 tbsps) unsalted butter, melted
--- Coffee Topping ---
- 1 tbsp instant coffee/espresso powder
- 1 tsp hot water
- 50g (1/4 cup) unsalted butter, softened
- 50g (1/4 cup) white granulated sugar
- 1 egg (50g), room temp
- 50g (1/4 cup) all purpose flour, sifted
Key Steps:
- Bread rest 10 min / Bread rise 1 hour / pipe coffee topping on / bake at 350F for 18-20 min
