50 Seconds with Dan Hunter at Brae
Dan Hunter's Brae in Birregurra, Australia, made its debut onto The World's 50 Best Restaurants list at No.44 in 2017. The chef, who started his career at Mugaritz in Spain, has an almost Basque passion for wild things and unusual plants, which are showcased in the likes of his iced oyster (a beautifully textured oyster ice-cream dressed with powdered sea lettuce) and wild mushrooms with milk curd, made all the more lavish with the addition of chicken livers and a warm chicken broth.
We caught up with Dan at Brae to hear his answers to a few of life's crucial questions.

Liu Yi in Girona, Spain
Https://epc-artcourses.com
Liu Yi, the Chinese Watercolor whisperer, has travelled 10.000 km, all the way from his native Shanghai, to discover ancient cultures and modern cities in Spain. He adores the sun and the colors of the Mediterranean coast, just the same that has inspired so many painters, from Dali to Miró, Martínez Lozano and so many others. This is a land of painters, so Liu Yi had to be here.
He gave a workshop in June 2014 and in 2015 he will be back again in June for two courses, a GENERAL course and an advanced PORTRAIT COURSE.
In this opportunity he is painting in Girona, in Independence square, the heart of Girona that reunites the medieval world of the city with the modern facilities. This is the square that Alvaro Castagnet has fallen in love with and painted every single angle of it.
Today he's painting the arches and the Bar Boira at the far end.
He's using a pure watercolor technique with full control of the amount of pigment and water. This time he hasn't wet the paper on both sides, but it's still atmospheric.
Liu Yi's paintings transmit a sensitivity and respect for the subjects he paints. A kind of veneration that shows in his paintings.
Don't miss him, this is a unique opportunity to learn from one of the best watercolor masters in the world.

3 Michelin stars style ice-cream: Rocambolesc Jordi Roca [2019]
3 Michelin stars pastry chef Jordi Roca opened The Rocambolesc because he was always dreaming to have an ice-cream shop. Now, El Celler de can Roca pastry chef made it. Try Jordi Rocca ice-cream and you will understand why Rocca opened Rocambolesc. El Celler de Can Roca Girona (3 Michelin stars restaurant), where Jordi works as a party-chef, doesn’t offer so much ice-cream.
Rocambolesc Jordi Roca is a place to be. Hot ice-cream is a must-try. We bet it’s a best 3 Michelin stars dessert you have ever tried! True 3 Michelin stars although The Rocambolesc Barcelona (where the video was filmed) has no stars yet. But Jordi Rocca has!
Have you ever imagined that you can have home-made ice-cream from 3 Michelin star chef just for 4 euros?! Yes, you can! Rocambolesc ice cream sandwich is a truly magical thing. It’s a real three-star ice-cream. Real three-star molecular gastronomy ice-cream. Tasting this ice-cream is a real Elite Life.
3 Michelin stars and the willingness of Jordi Roca to recover the traditional dessert cart of El Celler de Can Roca which had disappeared from the restaurant's room just when he took care of the sweet part of the menu gave birth to Rocambolesc ice-cream shop that offers now best ice-cream in Spain.
Look till the end and you will see exclusive Jordi’s Roca hot ice-cream.
And yes, you can see Roca’s ice-cream at our avatar!
Jordi Roca quotes about ice-cream and Rocambolesc:
«I am addict to the ice-creams since I was young».
«I remember that close by my parent’s restaurant there was one warehouse of ice-creams and at the end of the summer they gave me the excedent of ice-creams».
«An ice-cream for me was and is happiness».
«Since always I wanted to have an ice-cream shop, but it was after learning the technique that is behind a good artisanal ice-cream that i saw myself able to do it. Sometime later and thanks to my brothers’ complicity and generosity, who believed in that dream that passionate me, it was when we opened Rocambolesc. A window to the sweet world of the celler where we transform the deserts in ice-creams. In this project, i walk with Ale, my wife, who actually leads this dream that passionate us. This is a special ice-cream shop, we are not only ice-cream mans or pastry chefs, we also incorporate in the creative process various professionals, as graphic designers, scientists, a transversal team that has as an objective to evolve, learn from mistakes, grow with the experience of attention to the customer and do of this world a sweeter place».
In this video you will see Jordi’s Roca passion. Rocambolesc is a must-visti icre-cream shop.
