Well it's a wonderful chocolate, it's crispy to taste - it's superb.

I tasted the chocolate and it was very very good. It's nice to see that there are still people making quality products of this kind. I am very happy to have been to taste some chocolate and I when I pass by again later on I will buy some chocolate to bring back as presents for some people.

Well the history of Bayonne chocolate is simply that it is the Portuguese Jews that were chased out of Spain during the Inquisition that brought the first cocoa beans to the port in Bayonne. They settled in the Saint Esprit quarter because Bayonne was already a large merchant port that traded in cinnamon, spices, liquorice, coffee, and since they had been chased out of Spain they found themselves making chocolate in Bayonne and this is where the history of Bayonne chocolate was born because this was the first time France discovered cocoa.

You break it (cocoa pod) and it opens in two, and so you have chocolate beans which are there, aligned side by side like this all along like quarters in an orange.

This grinder made of very heavy stones was much more efficient than doing it by hand obviously. One could manage up to two or three hundred kilograms per day whereas when a worker did six or seven kilos a day by hand it was already very good, so we had increased profitability in a huge way.

Moving to Basque Country - Exploring Biarritz & Bayonne
This short video documents my move to the beautiful region of France in the part known as the Pays Basque. In the video you'll see a little bit of Biarritz and Bayonne and my experiences during my first two days after my arrival to Pays Basque (Basque Country).

I was staying in Biarritz in March 2017. The Hotel owner where I was staying recommended that I visit Bayonne, and I am glad that I did.
Bayonne is a city in the Basque Country region of southwest France, where the Nive and Adour rivers meet. Narrow medieval streets characterize the old Grand Bayonne district. Here lie the Gothic-style Bayonne Cathedral, with its 13th-century cloister, and Château Vieux castle. Across the Nive river in the Petit Bayonne district is the Musée Basque, a museum devoted to the region’s arts, crafts and traditions.
Area: 21.68 km²
Weather: 13°C, Wind SW at 11 mph (18 km/h), 92% Humidity

Each Friday and Saturday of the Ascension's week, Bayonne enjoys one of its local delicacies: the chocolate. The French Basque city is the first one where chocolate was introduced in France. 7 artisans still preserve the ancient art of handmade chocolate. There's a lot of activities, like the groups of musicians going around the streets in the afternoon.

Bayonne is a city located in the Basque Country in southern France. Settled by the Basque people during the time of the Roman Empire, Bayonne was a Roman stronghold on the main highway. During the middle ages it developed as a trading port and flourished. Basque people are known for their rich heritage and unique culture. Since the 12th century the city has been known for the production of Bayonne ham and in the 15th century, it became the first city in France to make chocolate. In this episode, we explore Bayonne and meet its residents who love their traditions and their distinctive culture.

We visited the French cities of Bayonne and Biarritz. The first is located at the confluence of the Nive and Adour rivers near the Bay of Biscay in the department of Pyrénées-Atlantiques. Its cathedral was declared a World Heritage Site by UNESCO in 1998 as a memorial of the Way of Santiago.
Biarritz coastal town of southwestern France located in the department of Pyrénées-Atlantiques, in the Aquitaine region. Originally it was a fishing village. In the nineteenth century doctors recommended sea bathing in Biarritz for its properties terapeúticas.Alcanzó fame in 1854, when the Empress Eugenie wife of Napoleon III built a palace on the beach known as Hôtel du Palais.
Today it is a major ciudes of spa tourism in France.
