Yorkshire Cooks' Masterclass: Chocolate ganache tart at Betty's Cookery School, Harrogate
Founded by Swiss chocolatier Frederick Belmont, Betty’s has been creating a tempting array of continental and Yorkshire confections for almost 90 years. There are six Betty’s Café Tea Rooms – in Harrogate, Harlow Carr, Northallerton, Ilkley and two in York, all serving cakes, breads and chocolates hand made at the craft bakery in Harrogate.
Serves 4-6
Ingredients
300g sweet pastry
Passion fruit filling
One gelatine leaf
60g passion fruit purée
60g caster sugar
75g butter
One egg, beaten
Chocolate Ganache
100g milk chocolate, cut into pieces
75g dark chocolate, cut into pieces
130g whipping cream
Method
To blind bake the pastry
Roll out the sweet pastry (see following recipe) to approximately 5mm thickness and line a 15cm baking ring. Leave to rest in a fridge for at least half an hour. Preheat the oven to 160°C.
2. Once rested, remove from the fridge, line with greaseproof paper and fill with baking beans. Bake in a pre-heated oven for 10-15 minutes.
3. Remove the baking beans and place back in the oven for a further five to seven minutes to complete the blind baking process.
4. Leave to cool.
To make the passion fruit filling
Soak the gelatine leaf in a small bowl of cold water for approximately five minutes to soften it.
2. Place the passion fruit purée, sugar and butter together in a heavy based pan over a moderate heat. Heat gently to melt the butter and sugar (do not boil). Add the egg and mix in well. Bring to boil and cook, stirring continuously for 30 seconds.
3. Add the soaked gelatine to the mix and stir in well. Once the gelatine has dissolved, strain into a measuring jug.
4. Cool a little, and then pour into the prepared baking ring, filling it halfway. Leave to set.
To make the chocolate ganache
Place the chocolate pieces in mixing bowl.
2. Place the whipping cream in a saucepan over a moderate heat. Bring to the boil.
3. Pour the cream over the chocolate and stir until the mixture is smooth.
4. Allow the ganache to cool to room temperature and pour on top of the passion fruit filling. Place in the fridge to set.
Note:
If you are unable to find passion fruit purée in your local supermarket then substitute the purée with 50ml of passion fruit juice and the juice of two fresh passion fruits.
Sweet Pastry
To line 1 x 15cm baking ring (300g pastry approx)
Ingredients
175g plain flour
50g chilled butter, diced
50g caster sugar
1 medium egg, beaten
Method
1. Place the flour in a bowl and rub in the butter using your fingertips until the mixture resembles crumbs.
2. Stir in the sugar.
3. Beat the egg and gradually add to the mixture using a table knife. Work the mix until it comes together.
4. Wrap in cling film and rest in the fridge for a 20-30mins.
5. Line a baking sheet with baking parchment.
6. Roll out the rested, chilled pastry onto a lightly floured surface into a circle, about 5mm in thickness.
7. Place the baking ring onto the baking tray, lift the pastry into the ring and ease gently into shape.
8. Trim off the excess pastry around the top of the ring. Chill the lined pastry ring in the fridge for at least 30 minutes before blind baking.
9. Preheat the oven to 160°c ready to blind bake.
Notes
Make sure your hands are cool before beginning and the butter is at room temperature.
Do not overwork the pastry as this will toughen it and cause shrinkage when baking.

The Story of Bettys, Chapter 4: The Birth of Bettys
17 July, 1919 - opening day at Bettys. For founder Frederick Belmont, it was a moment of sink or swim. Luckily after just one week, it was clear his gamble had paid off.
The day Nancy came to Bettys
12 years ago Great British Bake Off winner Nancy Birtwhistle attended Bettys Cookery School as a student. in early December she returned - as a tutor. The occasion was a special one-off baking demonstration in front of an audience of regular Cookery School customers and some ‘next generation’ bakers who we’ve supported through our Cooking for Schools programme. Since it was early December, Nancy demo-ed two festive dishes - a leftovers quiche and a yule-themed swiss roll - and as she baked she told stories of her time on GBBO and her life since. It has been, as she put it, “AMAZING!” This is the story of the day.

British Baker: Baking Industry Awards 2012
The 25th Baking Industry Awards was held this Wednesday (12 September) at the Park Lane Hilton in London, with special guest Jason Donovan taking to the stage to entertain the crowds.
The event attracted hundreds of bakers from up and down the country to celebrate the best of the industry. This year's BIAs was opened with speeches from Martyn Leek and Sonia Young, editor and publisher of British Baker.
Special guest and singing sensation Jason Donovan, known for his role in Australian soap opera Neighbours, as well as appearing on Strictly Come Dancing and I'm A Celebrity, Get Me Out Of Here, entertained the crowds with his bakery-related rendition of Too Many Broken Hearts In The World. He also presented the awards to finalists and winners on stage during the evening.
Taking the top accolade of Baker of the Year, which was sponsored by Vandemoortele, Robert Burns of Burns the Bread in Glastonbury, told British Baker: I think the judges appreciated how much passion I have for the business as well as the people that work for me.
Two employees from Harrogate-based bakery business Bettys took home two awards on the night. This included Justin Clapham, who was crowned with The Rising Star Award, sponsored by Whitworth Bros, and Gemma Pickup, who was presented with the Confectioner of the Year Award, sponsored by Dawn Foods.
Talking about the two award wins, Clapham said: It's absolutely amazing. I didn't expect to win and netiher did Gemma and we've both won. It shows what skills we have learnt at Betty's and it shows how passionate we are about what we do.
