????DEEP FRIED PIGEON: In a hot wok, deep fry pigeon until the bird turns golden brown. Serve when ready.
????BLACK PEPPER PORK HOCK: Torch the pork hock to burn the remaining fur and slightly cook the meat. Second, steam the hock with five spices and soy sauce for 2 hours. Prepare a hot wok and stir-fry chopped onions. Prepare a plate with cabbage and place the steamed hock on it. Add the stir-fried onion. Finally, pour the black pepper sauce on top and serve.
????DEEP FRIED DUCK TONGUE WITH PEPPER & SALT: In a wok, stir-fry the duck tongues until they turn golden brown. Second, add garlic, red pepper, and spring onion in the wok and stir-fry. Add the duck tongues in the wok along with salt, sugar and chili oil. Continue stir-frying, then add fried garlic and cashews. Take everything out when it's done and serve.

????FRIED WHITE RICE FISH WITH BUTTER & CHEESE: Place the fish in a bowl with chicken broth and cornstarch. Fry the fish in a wok and then remove when ready. Add butter and cheese in the wok and then add the fish. Stir-fry mixture and then serve with soy sauce.
????DEEP FRIED CHICKEN CARTILAGE/KNEES: Place the chicken knees in a bowl with cornstarch and then deep fry. Remove from fire. Add chilli and chicken knees in the wok and stir-fry for 10 more seconds. Serve with soy sauce.
????STEAMED RAZOR CLAMS WITH MUNG BEAN NOODLES: Cut the clams open and take out the flesh. Add mung bean noodles and garlic oil on the clams and steam them for 5 minutes. Serve when ready.

MUST-VISIT HONG KONG FREE TOURIST SPOTS
Today, we’re gonna take you to Nan Lian Garden and Chi Lin Nunnery which are just 5-minute away from Diamond Hill Station Exit C2. These are easily accessible attractions off the MTR and admission is free.
Nan Lian Garden is a 3.5-hectare garden within the city which is a totally stunning, serene and tranquil garden set with skyscrapers as a backdrop. This is truly unique and worth a visit.
Here’s a walking tour of the amazing green space with impressive display of bonsais, beautiful polished rocks, ponds, waterfall, winding paths, traditional structures, and a large Buddhist temple.
There is a cafe in the gardens, which is semi-hidden behind a small waterfall connected to a mill. It’s one of those instagrammable sites for you to check out.
It's lovely to walk around and sit in to soak up the peaceful atmosphere, while admiring the amazing view of the gardens and the surrounding skyscrapers.
You can just cross the bridge from within the gardens into the adjacent temple known as Chi Lin Nunnery, making it a convenient single visit. So when you’re here in Hong Kong, you better check this out especially if you are fond of gardens and traditional Chinese architecture.

My name is Dennis. In 2009, I opened this channel to record or document this city. I know something is being changed in next decade(s), or I felt the change have began since 2003, no later in 2046. I want to, at least, save some kind of city life in video form instead of taken photo or written in words. I strongly believe that motion picture and sound recording are much better way to preserve and present in the future when young generation want to get know of Hong Kong.
In May of 2018, I wrote the following statement in below:

Hi everyone, thank you for supporting me in fulfilling my childhood dream of making videos.
My parents had always taken a tolerant attitude toward my “capricious”: whether my work is feasible and sustainable... and they never complained about it.
As my father just passed away in May, I am left with no choice but to give up my video making venture.
In Hong Kong where the cost of living is sky high, youtube video making is simply not sustainable by google adsense alone. The revenue produced is way too insufficient for affording a domestic helper, and I must look after my mom all by myself - this is why I must stay very close to her at all times.
Unless my revenue is closed to market rate, or my income can cover a domestic helper, otherwise I can hardly justify any video-related works.
Therefore, from now on everything video will be postponed in terms of year(s).

Because I am the only son of my mother in Hong Kong, and I have to take care of her at home. I almost give up this channel because of high consumption of time and living cost. But I found some extra time.
I live in Fanling, north part of New Territories, so it will include my showtime of traveling back and forth. Because of home care to my old mother, there will be no time other than 9:00 to 16:00 because my mother is staying at the senior daycare center, so before and after that, I will NOT able to do filming.
I understand most of you are looking for high quality of video, e.g. 4K or 8K. But hardware is so important at this post-production, that is, the higher quality video, the higher powerful computer to render video. In recently, I solved matter by paid for PowerDirector apps to make 4K on my Pocophone F1, 1 hour of 4K video = 2 hour to make, besides, the convert 4K file time is around 24 hours......
I will continue to run this channel as long as the time is fit-on-me or I don't see any kind of video job could fit me.
I hope this is clear to everyone.
