Big Tree Farms is sustainable and extraordinary chocolate factory, built entirely out of bamboo. Actually it is the world’s largest commercial bamboo structure, nicknamed the “bamboo cathedral”. Big Tree Farms offers on-demand coconut water, a more sustainable option than bottled, cold-processed cacao products and coconut sugar, which authorities have called the best alternative to cane sugar.
We have visited the factory within the regular tour, witnessing the production of 100% local organic cacao and coconut sugar. The tour lasts approximately 1 hour and includes introduction to some technical processes and a sampling of cold-processed cacao.

In our first week in Ubud, we explored the neighborhood rice paddies in Penestanan Village, visited the Tegallalang Rice Terraces, and took a cooking class at Mai Organic Farm in Pejeng. The main theme throughout our explorations was Bali’s impressive Subak system, their irrigation system that was first developed in the 9th century. It was named a UNESCO world heritage site in 2012.

This property is located a short distance from the village of Lovina and has a great view over the Singaraja Hills and North Bali Sea. The rice paddy is terraced down to a river bordered by bamboo and mature clove trees. A surplus of water Allows for three rice crops per year with an average of 4000 kilos of white rice per crop. A large stone barn and stone outbuildings, all with thatched roofs, provide shelter for cows, pigs, ducks and chickens. An organic vegetable garden with rich fertile soil and numerous fruit trees generate an abundance of food year-round. This villa is spacious and has four bedrooms and three full bathrooms, with 20 sq. meters of stones terraces surrounding it. There is a 14 meter infinity swimmingpool and an outdoor kitchen with a smoker / barbecue and wood-fired brick oven. Natural stone and terrace tiles are featured thoughout, in a style that could be discribed as traditional Balinese with a Colonial influence.
The property consists of 168 acres (1.68 hectares) of spectacular views across the rice paddies to the sea and up the mountain. The entrance driveway leads to a garage and parking area, from the which a 100-meter stone pathway leads to the house. Privacy is guaranteed, the area is very popular with foreigners and is 20 minutes from the city of Singaraja and the restaurants, shops and services of Lovina.
The land is part of the ancient Subak irrigation system of rice paddys. Members of the local community do the planting and harvesting of the rice.
