BROOKVILLE, Pa. -- Moonshine enthusiasts in west-central Pennsylvania will have a new place to pick up a bottle or two or their hooch as a new distillery has opened in Jefferson County.
Blackbird Distillery in Brookville held their grand opening Wednesday. The location offers nine varieties of moonshine, all made on the second floor of the shop.
David and Jennifer Black opened the business after two years of planning and coordination. The distillery uses locally grown corn and honey from the Finger Lakes region in New York. Each batch is handcrafted daily.
We are a small batch, single run distillery, using just the hearts of the run to process our shine, David said. We craft our shine right from the grains to the bottles right here in Brookville, and use a corn whiskey recipe with the addition of honey to make our shine quite unique.
The distillery meets all legal requirements and has a liquor license, making it one of a few locations in the United States to hand-make everything.
We make it all by hand, every last drop, Jennifer said. Some distilleries have it shipped. That's a different license, [and] ours we make it right here from start to finish with the grains, even the labeling.
The Blacks said they plan to offer additional varieties of moonshine in the future.
We have to put down the alcohol content. It could be 102 proof, it could be 86 proof, depending on the batch because we make it every single day, Jennifer said.
The distillery, at 93 Blackout Alley, just north of Brookville, is opened Wednesdays through Sundays from 11 a.m. to 7 p.m.
