How Wine Is Made
At Bolney Wine Estate in England, they specialize in red wine, but also produce white and sparkling wine. The sparkling wines go through a slightly different process again. They are fermented in the bottle, each bottle must be spun occasionally to consolidate the sediment that forms. This sediment can then be removed by a process called disgorging.

Bolney Estate Foxhole and Lychgate red video tasting with Helen Tate
Watch this video tasting with Helen Tate at Wine Direct of the Bolney Estate Foxhole vineyard Pinot Noir and the Bolney Estate Lychgate red. These are two of England's finest red's. The Bolney Estate Foxhole is 100% Pinot Noir, it's delicate and harmonised, reminiscent of a German Pinot Noir. The Lychgate is a blend of Dornfelder and Rondo, it is surprisingly robust for our cool climate region wine, both grape varieties render good colour extraction, so the wine is a vibrant ruby with purple tinges. The Pinot noir is harmonised and bursting with red fruits, and the Lychgate expresses delicious autumn fruits with chocolate and spice.

Whilst vineyards are found across the whole of England and even in Whales, the climate of the South and South East makes it a particularly popular region for growing vines, especially in Hampshire, Surrey, Sussex and Kent.
A total of 15.6 million bottles were produced last year (2018), beating the previous record (6.3 million bottles in 2014) by 9.3 million bottles.
Exports of GB wine have also doubled in the past year and English and Welsh wines are now exported to 40 different countries, up from 27 in 2016.
In 2018, 1.6 million vines were planted with a further 2 million expected in 2019.
While the figures have not yet been analysed for the 2018 vintage, in general sparkling wine remains the dominant style, accounting for 70% of the wine produced in the UK.
After sparklings, White wines dominate the production followed by rosé and a small quantity of still reds
The most popular grapes varieties grown in English vineyards are Chardonnay, Pinot Noir and Bacchus, Pinot Meunier and Seyval Blanc.
Bacchus is a German white grape variety that is perhaps most notable for the production in England of crisp white wines, showing grapey, elderflower and citrus characters.
