Commercial Description - Cheddar Broccoli is Broccoli double dry hopped with the hops from Cheddar. It's a big tasty blend of Mosaic, Simcoe, Hallertau Blanc, Cascade, Citra, Kohatu, Wai-iti, and Ekuanot. We just couldn't pass this one up and it's the final version in this series.

Toshiki interviews Rona Tison, the Executive Vice President of Corporate Relations and PR of Ito En (North America) over a sake tasting at Brooklyn Kura in Industry City in Sunset Park, Brooklyn. Known for their signature Oi Ocha green bottle, Ito En is a multinational corporation specializing in tea founded in 1966 in Japan, and they expanded to the United States in 2001, where they now have corporate offices in DUMBO, Brooklyn. During their sake tasting, Rona talks about the history of Ito En and how the company popularized unsweetened green tea in the US. She attributes the success of Ito En to American love for Japan (see Hugh Jackman’s Instagram post with an Ito En vending machine) and the company’s innovation in committing to sustainability practices, addressing Western consumer tastes to eat “clean” and try authentic ethnic cuisine, and providing convenient on-the-go products. As a half-Japanese American and having lived in Tokyo, Okinawa, and the Bay Area, Rona was surrounded by the ritual of tea, and Toshiki asks her how her upbringing influenced her career path.
Founded by Brandon Doughan and Brian Polen, Brooklyn Kura is the first sake brewery in the state of New York. Rona and Toshiki try their signature Blue Door, a junmai-style sake, made from 4 ingredients: water, koji, yeast, and rice. Brian also serves them a special-release shiboritate (or freshly pressed) sake called Lake Suwa. Neighbors in Brooklyn, Ito En and Brooklyn Kura share a mission in educating the American public about Japanese cuisine, a commitment for which Rona has been recognized by the World Tea Expo.
Toshiki brings back a bottle of Blue Door to the recording studio (Toshiki’s Upper East Side Manhattan apartment) to enjoy with Susan, and they talk about their motivation to create The Big Root and celebrate its first episode.

According to the International Labor Organization (ILO), approximately 12.3 million adults and children are victims of forced labor, bonded labor, and forced prostitution around the world. The UN reports there is an estimated US$ 31.6 billion in global annual profits made from the exploitation of forced labor. It should be noted that due to the secrecy of the crime, it is hard to obtain precise data on the issue.
In the U.S., the industries where forced labor and trafficking are most prevalent include agriculture, domestic service, factory work, hotel work, restaurant work, the sex industry, and sweat shops. However, what little protections are available to sex trafficking victims, are virtually non-existent to victims trafficked for labor purposes. It is important to recognize that the exploitation, physical danger, poverty, racism, sexism, and trafficking endemic to the sex industry similarly occur to victims in all industries. There are no practical distinctions between labor and sex trafficking, and laws should be revised recognizing this. All individuals who exploit others through trafficking must be equally punished. All victims should have access to immunity and the resources for rehabilitation it provides.

He recently converted four acres at his Upstate New York gardening center... to grow hops..
Istvan says he gets call from local brewers every day looking for hops.

In the late 1800’s Brooklyn was one of the largest brewing centers in the country, home to more than 45 breweries. Lager beer in the “Vienna” style was one of the local favorites. Brooklyn Lager is amber-gold in color and displays a firm malt center supported by a refreshing bitterness and floral hop aroma. Caramel malts show in the finish. The aromatic qualities of the beer are enhanced by “dry-hopping”, the centuries-old practice of steeping the beer with fresh hops as it undergoes a long, cold maturation. The result is a wonderfully flavorful beer, smooth, refreshing and very versatile with food. Dry-hopping is largely a British technique, which we’ve used in a Viennese-style beer to create an American original.

The Untold Truth Of Nathan's Famous Hot Dogs
The story of Nathan's Famous hot dogs is one of American entrepreneurial spirit, with some pretty weird marketing gimmicks thrown in for good measure. From hot dog-loving gangsters to dead whales and secret recipes, here's everything you didn't know about these famous franks.
Hot dogs might not exactly be expensive food, but when they're being sold for next to nothing, people tend to raise eyebrows. At least that was the case when Nathan Handwerker launched his hot dog business way back in 1916.
Handwerker was working in Coney Island at the upscale eatery Feltman's, and they sold their hot dogs for 10 cents. After being persuaded to strike out on his own and sell a frank made with his own recipe, Handwerker launched his hot dog stand with the weiners being sold for 10 cents as well, though they were quickly slashed to just five cents. Perhaps unsurprisingly, crowds were suspicious as to why these hot dogs were so much cheaper than Feltman's.
To get people on board with the five-cent franks, Handwerker hired men in white jackets to hang around his stand and eat hot dogs. People believed the men were doctors from the nearby Coney Island Hospital, and soon began buying the nickel franks. The gimmick made people think that if these cheap hot dogs were good enough for doctors, than they must be all right to eat.
When Nathan's celebrated its 100th anniversary, they had five-cent hot dogs once again, though no fake doctors were needed to sell them this time.
Nathan Handwerker never claimed to be the inventor of the hot dog. That uniquely American food is generally attributed to Handwerker's former employer Charles Feltman. Nathan Handwerker's hot dog stand may be what New Yorkers instantly think of when somebody mentions a Coney dog, but it's something entirely different to people in Michigan, and the rest of the Midwest.
In Michigan, Coney Island has little to do with New York, but instead is a reference to the hundreds of diners across the state that serve Greek food and hot dogs smothered with chili, onions, and mustard. To them, that's the Coney Island dog or Coney dog.
So how did the name Coney Island hot dog come to prominence in Michigan of all places? Well, at the turn of the 19th-century when Greek immigrants came to the United States, many of them passed through New York and visited Coney Island before moving westward.
These immigrants took the hot dog, added chili and dubbed it the Coney Island dog. It wasn't long before diners popped up in Detroit with names like the iconic Lafayette Coney Island and American Coney Island grills.

Over the past 40 years craft-brewed beer has exploded in growth. Today, there are more than 2,700 craft breweries in the United States and another 1,500 are in the works. Their influence is spreading to Europe’s great brewing nations, and to countries all over the globe. In The Craft Beer Revolution, Steve Hindy, co-founder of Brooklyn Brewery, tells the inside story of how a band of homebrewers and microbrewers came together to become one of America’s great entrepreneurial triumphs. Beginning with Fritz Maytag, scion of the washing machine company, and Jack McAuliffe, a US Navy submariner who developed a passion for real beer while serving in Scotland, Hindy tells the story of hundreds of creative businesses like Deschutes Brewery, New Belgium, Dogfish Head, and Harpoon.
