KUCHING FLAVORS / SARAWAK COOKING ADVENTURE
Initially I had difficulty finding vegetarian foods In Kuching cuisine. So I took a cooking class to understand Sarawak food flavors and cooking. I thought Kuching was only Malaysian food; I didn't know there was a Sarawakian style of cooking. We visited Satok Market to learn about our ingredients before cooking.

The Borneo Adventures-Kuching
- Kuching is the capital city of Sarawak, Malaysian Borneo. I was there for a few days before heading 'into the heart of Borneo' by river boat. This video shows some of the highlights including orangutans at wildlife rehabilitation centres, a sunset cruise on the Sarawak river, a cooking class and a visit to the Sarawak cultural village.
Fascinating place - I want to go back!

Laksa Lemak ???? | Malaysian Curry Noodles with Coconut Milk | Nyonya Laksa [Nyonya Cooking]
???? RECIPE:
The best recipe for delicious Curry Laksa which is commonly known as Laksa Lemak, a Malaysian curry noodles. If Japan has Ramen, Malaysia has Curry Laksa which is fiery flavoursome.
Cooking Curry Laksa begins with the broth and then the Laksa paste. Those are the most important component to making a good bowl of Curry Laksa. Curry Laksa is perhaps the most requested recipe on Nyonya Cooking. I have created this special tempting curry noodle with a mixture of spices befitting the dish.
No doubt, the preparations may seem complicated but you would be encouraged with the result. Trust me, you would love to have this captivating dish over and over again. If you have not tried a Curry Laksa noodles before, you are missing out.
Do not feel demotivated when you see the long list of ingredients and the tedious steps in the preparation. You can always prepare a bigger portion of the laksa paste and the Curry Laksa paste can be frozen for later use. That will come in handy whenever you feel the urge to have some curry noodles. The broth which uses chicken bones and prawn shells as a base has a subtle sweetness and when infused with the spices makes this laksa really delicious!
Most of the ingredients can be widely found at the Asian grocer. However, it might be difficult to get the Vietnamese coriander (also known as Vietnamese cilantro, Vietnamese mint and Cambodian mint). If you are unable to find it, just skip it. I have read that it could be substituted with an equal amount of mint and cilantro but it would not work in this dish. All the herbs and spices need to be throughly infused together to get that tantalizing taste that Nyonya Laksa is known for.
Have fun trying this. Whether it is for breakfast, lunch or dinner, there is no stopping you from enjoying a bowl of Nyonya Laksa.

Malaysian Curry Chicken | Kari Ayam [Nyonya Cooking]
???? RECIPE:
Curry chicken varies around the world, from home to home. This easy curry poultry recipe has a splash of coconut milk to make it taste creamy and delicious. In Malaysia or Singapore, we serve it with rice but it is also delicious with bread.
This easy curry chicken is the standard curry chicken you will get in most restaurants in Malaysia and Singapore. Rich in coconut milk and spices, this curry chicken is a must try. As this chicken is marinated in curry paste before cooking enhances the taste of the meat itself.
### Can I use onions instead of shallots?
Yes, you may. Shallots are generally more intense in taste and they are also spicier compared to onions. The best substitute would be red onions. If you can't find any, you may also opt for yellow onions.
### What type of curry powder to use?
In Malaysia and Singapore, you may find curry powders sold specifically for meat or seafood. In this recipe, meat curry powder is used. You may also substitute with any curry powder mixture which contains more chilli powder. Sometimes, dried curry leaves are also added to the curry powder mixture.
### Can candlenut be omitted?
Candlenuts are added to thicken the curry. You may remove it from this recipe if you prefer. Otherwise, substitute candlenuts with macadamia nuts.
### Milk or yoghurt to substitute coconut milk
In the Southeast Asian region, milk and yoghurt aren't a common choice to be added into curries. Instead, coconut milk is often used since they grow abundantly locally. If you do not prefer coconut milk, you may opt to substitute it with 300 ml milk or 250 ml yoghurt. Do note that the taste will be different but it will not spoil the taste.
### Curry chicken in the slow cooker
Cooking this curry chicken recipe in a slow cooker is possible. Simply prepare the recipe in a slow cooker and cook the dish for 4 hours on high or 6 hours on low for tender curry chicken.

Ngoh Hiang - 五香
Ngoh Hiang is an uniquely Hokkien and Teochew dish. It’s deep fried delicious goodness is adopted into other households as well. The addition of 5-spice powder gives it an earthy and fragrant taste. The meaty taste of of the minced meat is heightened by the sweetness of the minced prawns. The diced water chestnuts gives it crunch. We used Knife Thai Fish Sauce to provide the dish a depth of umami flavour.
You can make a big batch to freeze. Just take it out to thaw and fry when you need it. You can use an air fryer too, just brush with a little oil and set it at 180C and airfry till golden brown!

Malaysian Food Guide in Kuala Lumpur, Malaysia Compilation Travel Video Transcript:
Good evening good evening! We are in Kuala Lumpur, Malaysia. And we're hungry it is at night so that means we're going out for street food. And where are we?
So today we're checking out Jalan Alor. Or the Alor Street Night Market.
lright guys, for today's lunch we're at the Central Market here in Kuala Lumpur and we're going to be trying something that is called Peranakan Cuisine or Nyonya Cuisine.
And basically this is a combination of Chinese and Malay ingredients and cooking styles and it is the type of food that you'd be able to find in Malacca, Penang, Singapore or parts of Indonesia. It is really tasty.
Yeah, and since we're not going to be able to go to Malacca this time around. Awe!
We found a place that specializes in Nyonya Cuisine right here. Yes.
So happy guys and my mouth is watering. The food came out so quickly and the portions are huge and everything smells delicious.
Look at how big the Laksa (叻沙 - 喇沙) is.
Look at the size of this bowl. Like look at my little hands. Put your hand over top of it.
And you know what? We should also mention before we finish up. Oh yeah. There isn't just one typical Malaysian breakfast. Because you have so many different cultures here. There is like different meals that you can get for breakfast. There is Malay, Chinese, Indian food. Yeah. In fact, we saw someone at the Central Market selling little triangle shaped Nasi Lemak. Which is wrapped in a banana leaf and yeah that looked tempting as well too.
Welcome to Chinatown! Yeah, so we're in Kuala Lumpur in Chinatown. This is where we're staying. Yes. We're hungry. We're craving some street food and this is just the place to check it out. Yeah, so today we're going to be eating along Jalan Petaling (茨厂街). Yeah, Petaling Night Market Street (茨廠街). Yeah, lots of food here and it is already busy. The sun has gone down so let's go get started.
Food time.
Okay, so we walked out of the hotel and we found. We found something right away. Oh yeah. It is claypot chicken rice and it looks so good from across the street. It is cooking right behind us. Literally right behind us. It looks so good. We can't wait for it to arrive. In the meantime you've got yourself a local iced tea. Ice tea. It is so hot out.
I tried a little bit of it already. It is quite sweet.
Alright, the claypot chicken rice (砂煲鸡饭) is here. Check it out. It is served in like this claypot itself so I'm being very careful not to touch it because I have a feeling this would burn.
Well good morning good morning. Today we are having a late breakfast. It is probably close to ten in the morning and we're at a place called Old Town White Coffee. So we're going to be having Nasi Lemak which is one of the national dishes of Malaysia. And it basically consists of rice cooked in coconut milk. Steamed with coconut milk. So that should be really tasty. We've ordered two different varities. Sam already has his white coffee here so he'll be having that.
