Explore the coffee production process with the Cafe Ruiz coffee tour in Boquete, Panama. I found the 3+ hour tour pretty fascinating during my December 2014 visit to Boquete. At the Cafe Ruiz coffee tour, you walk around one of their coffee plantations to experience the picking of the coffee fruit. Then you are shown every step of the coffee production process including removing the beans from the fruit and the drying, fermenting, and roasting processes that take place. It's a 6-month process!

Cupping Coffee at Cafe Kotawa in Boquete, Panama
Cafe Kotawa had a mixture of traditional farming and the use of a little more modern technology. The mill which is almost 100 years old, is owned by Europeans who not only produce coffee but also manufacture furniture for a hotel owned by a friend and our tour guide Hans. Most of the employed who work on this plantation are from the Ngobe or Bugle tribe. In recognition of business practices to keep these workers on this plantation, a site that includes housing, education for the children, and basic medical services was created for the workers. The tour was brought to a closure by sampling various coffees, along with an education about types of beans and levels of roasts and how they influence one's taste buds and preferred choices the consumer makes. Terri and Hans were informative hosts with a twist of spunk.
