Critics say it is just a stinky product that overwhelms more delicate flavours.
Admirers say it enhances taste, gives dishes an extra punch and is also good for the health.
But now the former have started a ferocious campaign for garlic-free dining, and the debate has moved out of culinary circles.
The anti-garlic brigade have a high-profile spokesman in former Premier Silvio Berlusconi, whose aversion to garlic and obsession with minty breath are legendary.
During his five-year stint, Palazzo Chigi, the premier's palace, was a rigorously garlic-free environment.
The bulbous herb has long been a mainstay of Italian cuisine, from steaks in Tuscany to cuisine of the poor south, where cooking is traditionally less rich in butter and cream and garlic's pungent flavour often accompanies simple vegetable dishes.
Antonello Colonna, one of Italy's most famous chefs, is a deep believer in the importance of garlic in Italian cuisine and he does not tolerate people who get pernickety about a little garlic in their food.
He says that Italian cuisine without garlic is like an orchestra without the violins.
Rossella has found a friend in Sicilian Chef Filippo La Mantia.

The Zimmermann Café
This project is dedicated to the famous Café of Leipzig where, in the 1730s, Johann Sebastian Bach, along with his sons and pupils, performed concerts for two or more harpsichords and strings in collaboration with the Collegium Musicum, a small orchestra founded in the first years of the century by Telemann.
These concerts are transcriptions of pieces from Bach for violins and strings, composed in the years preceding his arrival in Leipzig.
A cosa serviranno i fondi ?
We would like to produce a Master for a CD to celebrate this marvellous repertoire for two or more harpsichords which highlights its stylistic peculiarity and expression inspired directly from the style of the Italian Concerto.
The program of the CD includes the performances of the three concerts for two harpsichords and strings:
BWV 1060, BWV 1061 and BWV 1062 and the concert for three harpsichords and strings BWV 1063.
Three internationally renowned harpsichord players will participate in the realization of this project:
Giorgio Tabacco, Chiara Massini and Mario Stefano Tonda. They will be accompanied by the Turin Baroque Group L’Astrée, which has been engaged in the baroque repertoire with original instruments for more than twenty years, and for the occasion it will be composed of two violins, alto, cello and double bass.
The realization of the Master and then of the CD represents a remarkable effort both from an economical and an organizational point of view, as it involves three soloists, a group of strings formed of five musicians plus two experts working on the recording side, with a total of ten people.
The total cost of the recording of the master is of 15.000 euros. To reach this objective, we will need your support and we are already grateful for all those who believe in our project and who are supporting it.

Chiara Massini:
Chiara Massini was born in Rome, where she studied piano with prof. Enzo Stanzani at the Ottorino Respighi Conservatory and musicology at La Sapienza University. Upon graduating, she attended various master classes in Salzburg and commenced an intensive study of early music. This path led Ms. Massini to Vienna, where she studied harpsichord and figured bass at the University of Music and the Performing Arts under Profs. Gordon Murray and Augusta Campagne, respectively, graduating with distinction.
In addition to numerous recordings for Austrian, Italian, Canadian and Spanish radio, she is active as soloist and chamber musician (Le Carillon) and has appeared at various festivals and concert series in Europe, Canada, Brazil and Lebanon, including the Al Bustan Festival in Beirut, I concerti del Gonfalone and I concerti del Quirinale in Rome, Soli Deo Gloria in Reggio Emilia, the Musikfestspiele in Dresden and the Musikverein in Vienna.
As one critic remarked on her solo debut CD, Toccata, Passacaglia, Partita, released in 2003 and broadcast in Italy and Canada: Her playing captivates through its combination of technical authority and expressive power.
Elsewhere, the press has written of her: Already with the first phrase, she profiled herself as an exceptional artistic personality who brings these selected works by Italian composers to life with ingenious liberties [...] her rubato, executed with stylistic certainty and sheer delight, injected itself organically into the course of the movement [...] Massini's suspenseful playing successfully captured the affects' polymorphism and illuminated the music's harmonic boldness [...] the melodic charm and the perfect proportions of the music of Domenico Zipoli unfolded under Massini's sensual grasp in all their radiance.
In august 2005 she played Bach's Goldberg Variation throughout Europe, subsequently recording them in summer 2006 for Symphonia. The reaction of both public and press was highly appreciative: C.M. shows she can really dig in and captivate her listeners. (Alte Musik Aktuell)
In december 2008 she has been invited by the Charitable Society of Friends to make her U.S. concert debut touring Florida.
