This is a multi-part series of a trip I made to Sicily. I wanted to do and see as much as I could in 7 days, and with the help of my friend Salvo, I was able to see Catania, Aci Trezza, Aci Castello, Siracusa, Ortigia, Marzamemi, some lighthouses, Taormina, Isola Bella, Savoca (where the God Father was filmed), Agrigento, Valle Dei Templi, and so much more!! The Borderi Dairy was created in 1930 by Don Pasquale Borderi who was involved in the production and trade of Sicilian extra-virgin olive oil.. Due to its good performance, Don Pasquale decided to expand and diversify its offerings, including in its list also typical Sicilian cheeses..
When’ in 1970 that the son of Don Pasquale Borderi, Andrea Borderi, started? to develop his interest in the art of processing milk into cheese. In the following years, Andrea? studied intensively the Italian dairy sector specializing? in typical Sicilian products. .? His passion has always been the making of cheese., He started presenting his creations in Syracuse markets, in Floridia and the entire province. The success was immediate.
In 1998, when he has become a master cheese maker, Andrea Borderi formed with his children a Family Company: the Borderi Dairy, a sophisticated artisan cheese factory in Floridia, in the province of Syracuse. Since then the Borderi family operates in the markets of Ortigia, in Syracuse, and Floridia, They have gained the appreciation and respect of a large private and corporate public..
Behind the production of typical Sicilian cheeses of artisan dairy Bordieri there? an accurate analytical study. The dairy farm is not intended for mass production, but for quality. When’ is what allows us to win the loyalty of a large number of customers. All cheeses sold at all Borderi outlets are made by hand, in traditional ways. When’ you taste them, you realize the importance of such slow and time consuming processes, that enhance the experience of taste and of all other senses.
In 2006 the Borderi Dairy has taken another step forward, adding to the traditional products range (ricotta, mozzarella, smoked mozzarella, sweet and seasoned provole, provoloni pit, provoloni with the Nero d'Avola wine, cheeses with squid ink, Pecorino primo sale (fresh), semi-cured Pecorino , aged Pecorino cheese etc) a new line of fresh and typical Sicilian products.
This diversification was? born from a study leading to our realization that “our customers” want fresh, light food? our task is to fulfill such desires. From this realization was born our mozzarella filled with seasonal vegetables, which are a must for salads and light meals, according to the current market trends. .

Each sandwich has subtle differences, and the ingredients are simply amazing. Definitely worth a visit and wait for one of the best sandwiches you'll have and at just 5 euro per sandwich it's worth the wait!!!

BEST Italy Street Food - HUGE Sicilian Sandwich in Siracusa
This might be one of the most famous street food sandwiches in the world, not just in Italy! No, really, Caseificio Borderi is like the Broadway of sandwich shops - the crowds and lines are INSANE! But if you're a street food lover like me, you just gotta find out what all the fuss is about!
Watch as grizzled sandwich maker Andrea Borderi puts on an absolute SHOW in the process of making what should, in reality, be two simple sandwiches... But don't kid yourself, you're not going to an ordinary sub shop. This is the real deal of sandwich street foods!
This Sicilian panini maestro creates 2 beautiful works of art in a process that takes over 12 minutes for 2 sandwiches... BUT! if you're in the audience, you do get treated very well with free snacks and refreshments. He also cracks some jokes about a variety of different topics... all in all, this spectacle is about more than just a sandwich and, unlike Broadway, you don't have to save for a month to attend - it's FREE!
The show part that is... you still gotta pay for the sandwich.

Some stuff you cannot really identify: Dried Tomatoes, Salad, roasted sesame, honey, Lime-Juice, Lime-Skin and tons of Ricotta and various cheeses.
