A Healthy Gut − The Facts on Fibre
On Saturday 25 February, Diabetes SA held its annual Food and Health Seminar at the Adelaide Convention Centre in their stunning Panorama Rooms.
This year's seminar topic 'A Healthy Gut – The Facts on Fibre' showcased the latest information about how important fibre is in a healthy diet.
The first seminar guest speaker was Glenn Cardwell, an Advanced Accredited Practising Dietitian from Perth. Glenn discussed the importance of including five serves of vegetables in the diet every day and mentioned that 1 in 4 people every day don't eat any vegetables at all. Glenn also discussed the many different diets that are currently being marketed and what actually were the best healthy diets; especially with regards to dietary fibre. Glenn also discussed mushrooms and the many amazing benefits they have on a person's health when consumed regularly.
After Glenn's talk, it was time for morning tea. Morning tea consisted of some healthy options from the Adelaide Convention Centre as well as some dry roasted nuts from Charlesworth Nuts and a very tasty marinated mushroom and tomato salad, courtesy of the Food Studio and the Australian Mushroom Growers.
After morning tea, Dr Trevor Lockett, a Research Scientist from the CSIRO in Sydney, translated some of the latest research on dietary fibre into practice. Trevor discussed the benefits to our gut microbiota when we consume resistant starch found in cooked and then cooled carbohydrates like potato and oats. There are many benefits of consuming fibre each day and Trevor discussed why this is the case, how it can impact on the good bacteria in the gut and why this is important.
Then to tie everything together, Claire (Accredited Practising Dietitian) and Danielle (Health Promotion Officer) from the Diabetes SA Health Services Team, conducted a raw cooking demonstration on stage. Claire and Danielle made two very quick, easy and tasty portable meal ideas that were full of fibre, healthy fats and low glycemic index carbohydrates.
