Wild Berry, Spice Box, Complex and Layered
Red wine with a quite developed colour here. It still has a quite dense ruby-red centre, but towards the rim it is rather tawny. Starting to fading a little bit, so it indicates a certain age. Really fine nose here it is certainly indicating maturity here, and I would first of all say complex. It is actually blending a lot of different things together here. I pick up some damp tobacco, cedar wood, almost like cigar box, with some leather, some earthy notes, smoke, truffle. There is also quite vigorous fruit. Still have a lot of wild berry notes in there. We still have a good density on the palate. Finely distributed tannin. So plenty of extract, but a good maturity here. A lot of those wild berry notes, with those fine spices; spice box, with tobacco and wood. So quite sophisticated I would say at this stage. It should probably reach twelve, fifteen years somewhere in that direction. So complex and layered, with a very long finish. I think the strength here is really that it starts out here quite powerful with copious amount of fruit, but it truly has a very long finish with nuance and spiciness. So a mature and sophisticated wine to enjoy today.

Dark Blackberries, Plum, Toasted Notes
Red wine here with a very dense colour, almost blue-black at the core, with a purple rim. Fine nose here, quite high ripeness – very high ripeness actually, with dark inky fruit such as blackberry, plum, cassis. We have some fine wood there too, slight smokiness, layers of spices. Very high concentration, but very stylish here; we talk about something very modern and opulent in terms of texture, with layers of that dark fruit, like those dark blackberries, plum but with a well-preserved freshness. There’s plenty of extract, still really youthful but they’re very grainy, like powdery tannins I would say. Well-present acidity as well. Oak is not really noticeable on the palate, I just got some toasted notes rather on the nose, and a hint of that smokiness. So a very meaty and juicy texture with all that fruit. Very long finish, very persistent; keeps lingering, really stays on the palate for a good while. I think this is well-made in a modern style, with a high ripeness, but all along it’s balanced by a natural freshness, fine powdery tannin, and excellent purity of fruit. A wine I think I would happily drink today with something big and meaty like a huge côte de boeuf, but seriously it’s a wine that will age easily for 10, 15, 20, whatever you want years. Excellent.

Le célèbre 1er cru classé de Saint-Emilion vient d’être racheté par une importante société de réassurance. D’importants travaux notamment sur le chai à barriques et le cuvier débutent.

Dense and inky impenetrable colour, slightly lighter on the rim. The nose is still quite closed with an approaching maturity and complexity. Very high level of ripeness with notes of plum confit, dark berries, cassis, some roasted oak, spice and tobacco. The palate is immensely concentrated and dense with layers of roasted dark fruit, still with some oak present, ripe but high level of tannin and extract. Very long and intense finish with a very big and bold example with a viscous texture and intense fruit. Still deserving time in the cellar to soften. Nonetheless with potential.

Cassis, Blackberry, Fine Spice Box
Red wine with a quite dense core, still almost impenetrable, with a ruby nuance towards the rim, and a rather high viscosity; high level of ripeness it seems. Quite complex nose here, with a certain evolution; we have some fine hints of roasted wood, coffee, intermingling with a lot of dark ripe fruit, some tobacco, leather, a fine spiciness. Very dense palate here, high level of concentration, high level of extraction. I would say this feels like a wine that just came around, because I think those tannins now are polished, well-integrated into giving a very bold and lush texture, with those layers of dark fruit like cassis, blackberry; with a certain complexity coming from a few years of aging, obviously, with fine spice box and tobacco notes. So very good grip, dense, opulent, layers of fruit, very long finish; it really keeps lingering for a good while on the palate. I think that those slight hints of oak picked up on the nose, those toasted roasted notes, they’re not really noticeable on the palate, rather much more an expression of that very nice lush fruitiness now. Still with a presence of tannin but as I said they just came around, well-polished and integrated, contributing to this very long finish. Very good.

Inky dark ruby purple colour. Intense nose, pure with dark fruit, blackberry, cassis, tobacco, some stoniness and a hint of black truffle. The palate has a very high concentration, with perfectly ripe tannin and fine extraction, bright acidity giving a lift to the dense dark fruit, layered and very long finish, excellent potential.

Bei der Räumung eines ca. 80 Jahren alten Gewölbekellers in meinem Elternhaus kam in einer versteckten Ecke dieser kleine Weinschatz zu tage.
Château Grand Mayne, GCC Saint-Emilion (Fr)
Séquence 3D du vignoble de Château Grand Mayne, Grand Cru Classé de Saint-Emilion.
Cette propriété de 17 ha est située à l'Ouest du plateau calcaire, en bordure du secteur des 3 Moulins (Beau-Séjour-Bécot) sur une pente regardant vers l'Ouest (dénivelé : de 38 à 73 mètres). Son encépagement est à dominante Merlot. Cependant, l'équipe technique et les propriétaires ont bien compris l'intérêt (et l'enjeu) de planter dans les années à venir davantage de Cabernet Franc. Dans un contexte de réchauffement climatique, ce dernier apporte de la fraîcheur et de la tension.
Au niveau du terroir, on peut isoler 4 grandes familles de sols. Cela va des sols argilo-calcaires (sur les côteaux) à des sables sur argile (pour le bas).

Inky dark purple colour. Pure nose showing violet, blackberry, cassis and a discreet hint of wood. The palate is full bodied with crunchy dark fruit, mild spices and some toastiness from the oak, young but ripe tannin, a fresh acidity and layers of dark fruit on the finish. Long and dense aftertaste, should develop really well.

Chateau Troplong Mondot and Chateau Climens Dinner at Bourbon Steak in Turnberry Isle
Saturday night this week there isvery special event that just popped on to our Calendar of events a few weeks ago. I jumped at the opportunity to have dinner with the owner of this famous property in Saint Emilion, Troplong Mondot and the general manager of the bell of the ball of Barsac Chateau Climens.
Saint Emilion offers some of the greatest wines from Bordeaux and with the prices of the great growths of the left bank going into the stratosphere these gems from Saint Emilion in the $150-$200 range are looking like a value. Troplong-Mondot has benefitted greatly from the work of its modern-day proprietor Christine Valette, who runs the estate along with her husband Xavier Pariente and consultant Michele Rolland.
Margaux Pariente, the next generation from Troplong Mondot will be dining with us this evening along with her friend from Chateau Climens General Manager, Virginie Achou-Lepage. Both Chateau have brought special older vintage wines from their cellars like the 1998 and 2000 vintage of Troplong Mondot and we will be experiencing Chateau Climens back to the 1975 vintage.
And if you have never experienced Bourbon Steak, this is one of the best steak houses in the country. Michael Mena, the mind behind this establishment is one of the top gun chefs in the world right now with restaurants in several different states and countries, his mix of comfort food and cutting edge fusion cuisine is always cutting edge.
But what I love most is his patented method of cooking steaks by poaching them in butter at 100 degrees and then cooking them over mesquite wood is my favorite way to cook steak. Put a trio of fries to accompanies this entre and you have one of the world's BEST simple yet complex pairing. I love the smoke in the fries with the sweet spicy ketchup and the classic salty fries with the truffle mayonnaise as well as the herb and cheese version with the sweet ketchup.
And this dinner is an incredible value- it costs less than one bottle of the 2009 Troplong Mondot!!
