TRUE CHINESE FOOD! Eating Hot Pot in Sichuan is a MUST do thing if you visit. I also got to enjoy it with a local Chinese girl, one who also loves to eat, a wonderful experience!

The first thing we had to eat, although not technically Sichuan food, was a Chinese pastry, called huoshao, filled with a juicy, meaty, wonderful filling that was served fresh from the oven. We were super lucky to get the first ones right out of the oven after lining up for around 20 minutes. This place was found just behind Chunxi lu (Chunxi road) in Chengdu's downtown Core.
After feasting on that beautiful snack, we had to go for the real meal, the true authentic Sichuan food, Hot Pot. This is the first time I have showcased Sichuan Hot Pot in my videos. I was waiting for the right time to showcase it, and after searching for a good location and also a good partner to eat it with me (hot pot is not a one person meal), I was set to film!
Sichuan Hot Pot is basically a huge wok filled with hot chili oil and copious amounts of Sichuan chili peppers and Sichuan numbing peppers. You place raw ingredients like raw sliced beef and raw lotus root into this boiling chili oil, and then when it's ready to eat, they take on the flavour of the substance they are boiled in. It gets spicier over time. After 40 minutes of eating hot pot, you notice that it is much much spicier than it was when you first started eating.
As my friend points out in the video, eating hotpot at night with friends is the true lifestyle of Chengdu people. Eating hot pot is what you do when you want to go out with friends and relax after work and enjoy some beautiful food (美食). They literally do call it beautiful food here, that's the lifestyle!

The largest building in the world: New Century Global Center in Chengdu, China

New Century Global Center.
The New Century Global Center in Chengdu, in Sichuan in western China, is so big that it's got its own artificial sun. Indeed, at 500 meters (1,640 feet) long, 400 meters (1,310 feet) wide and 100 meters (325 feet) high, it's massive enough to hold 20 Sydney Opera Houses or three Pentagons, according to local authorities.
Of course, you won't find any Sydney Opera Houses or Pentagons inside this 1.76 million-square-meter (18.94 million-square-foot) space. The colossal structure, which opened June 28 under the management of Exhibition and Travel Group, is like an enclosed town, with businesses, offices, shopping malls, theaters, two five-star hotels, a skating rink and even a water park called Paradise Island with an indoor beach. The New Century Global Center also boasts a faux Mediterranean village, following the bizarre trend in China for copycat European towns.
The exterior of the new mega-structure is shaped like a wave, while the interior has a marine theme, despite the fact that the nearest ocean is some 1,000 kilometers (620 miles) away. The Japanese-designed artificial sun, meanwhile, will shine 24 hours a day and offer a welcome respite from the thick smog that typically blankets Chengdu's streets.

Tianfu Square is the main square downtown Chengdu, is easily reachable by metro (Tianfu Square Station) , and is near many of downtown Chengdu's main attractions including the Chengdu Museum, the Sichuan Art Gallery, the Sichuan Science and Technology Museum, several popular shopping centres and malls, and a large statue of Mao Zedong. There are a lot of great things to see in Chengdu. Tianfu Square is a good place to start.

A huge fire broke out at a construction site in Chengdu, southwest China’s Sichuan Province on Tuesday. The fire is under control and there have been no immediate reports of casualties.

Long Chao Shou (wontons!) // Chengdu: City of Gastronomy 32
You can get this type of wonton - pork filled in a clear broth - in almost any Chinese restaurant, but Chengdu’s Long Chao Shou is special. It uses top quality ingredients and a more fragrant broth. These might be the best wontons I’ve ever eaten.
Tell the average person to make a list of Chinese food and wontons will be on that list. Having freshly made, perfectly cooked bowls of wontons as a cheap option for lunch makes living in China worth it alone. I just wish Long Chao Shou had a location closer to my house. Oh well, I’ll just have to travel to one of their locations scattered around Chengdu. The flagship store is in a basement close to Chunxi Rd, Chengdu’s pedestrian shopping street, but I headed to the Wenshu Monastery area to get myself a delcious bowl. This area, which is called Wenshu Fang, has been rebuilt in the classical traditional Sichuan style of architecture. The buildings are beautiful, as is the food. You can get street food or sit down in a restaurant. There is also a ton of shops that sell Chinese and Tibetan souvenirs. The higher-end ones (you’ll know by how nice they are) will cost you more than most other places in the city, but there are also street vendors and a more downscale market that’s set up close by (look for the Lobster sign), just be sure to barter at these places.

In this Chinese Street Food BBQ Tour, we're exploring the DEEP back restaurants of Chengdu, China and taking you to experience the AMAZING Szechuan Barbecue restaurants and the sauce and spice that is slathered onto everything you eat here.
If you love spicy Barbeque, you're going to love this video, cause first up, we're going to enjoy a whole bbq lamb, Sichuan style. This bbq lamb is approximately 60-90 days old and is quite enough for 2 - 4 people to eat entirely. It was covered in a thick chili sauce aka SZECHUAN Sauce and tons of chili, salt, cumin, and sichuan peppercorn. The flavour was out of this world! One of the best BBQ lamb you can eat anywhere around the world! The bbq ribs were a little small I must admit, but the rest of the meat was delicious. Watching the rotating meat was so much fun. Much different from your regular grilling meat restaurant.
We watched the whole process of cooking the baby lamb. First, it was put to bbq over the coals. After about 30 minutes, they rubbed a spicy chili oil all over it to change the colour darker red. After that, they took it off briefly and covered it in a Sichuan sesame oil. This was the first coat. After roasting on the BBQ coals for another hour or so, it was taken off and covered in a THICK Sichuan chili oil. This is where a lot of the fragrance and spice comes from. The true SZECHUAN SAUCE! It was covered in a spicy cumin chili combo and then served!
We finished the whole lamb, and then the next day, I continued alone on the Chinese street food BBQ tour. I found a famous joint in Chengdu serving a chengdu traditional food, Sichuan spicy rabbit. Here, 60 day old rabbits are slathered in a spicy chili oil and a similar spice mix, except they are pulled apart with pliers and also covered in a lot of ground peanuts and MSG. Whether you can accept MSG is up to you, but here on the streets, it's used almost everywhere, and I am fine with that.
After that amazing Sichuan BBQ rabbit, I tried another specialty of Chengdu from the same Chinese street food restaurant, Sichuan rabbit head. Actually it was a very similar flavour, just slightly less cumin scented and spicy. Not bad.
To finish up the BBQ tour, I went to a local Muslim Chinese halal food restaurant serving Halal Chinese BBQ Kebabs. Here, the kebabs were covered in a ton of cumin and chili and Sichuan peppercorn and also served with the kaobing, bbq flatbread also covered in a similar spice mix. It was an amazing combo!

Crafting Amazing Noodles in an Underground Chengdu Noodle Shop
I'm going behind the scenes in a Chengdu, Sichuan noodle shop that's literally underground. It's a bit dingy, but they're making incredibly delicious bowls of noodles. Noodle assembly in China is a thing of beauty. First the fresh flour-covered noodles are boiled. Sauce hits the bowl before anything else does, and then the cooked noodles are dumped in on top of it. After that, the dish gets its identity. The toppings, which are prepared ahead of time, are spooned on. At this place they had typical toppings like stewed beef, sauerkraut and pork shreds, chicken, etc. But they also surprised me with a few that I've never seen before, such as twice cooked pork noodles. The real reason I wanted to try their noodles though, was because I saw in photos that they include a pickled cabbage with pretty much every bowl. I love a little pickled zing in my dishes, and I was very excited to see large jars right in the restaurant pickling all sorts of tasty things. The cabbage didn't end up actually adding much flavor, but the noodles were amazing. They had that fresh flouriness that you can't fake. They were soft but not mushy. The flavors were good - spicy and savory - and the pickled cabbage added a nice crunchy texture.
The best part of the whole experience though was watching them put the dishes together. Food prep in China is a thing of beauty. Many of these dishes have been made tens of thousands of times buy these people. They're quick, they're assertive, and they're making incredible food in Chengdu. You can easily check this place out if you're traveling to Chengdu. Head to the address below. The kitchen area is out in the open, so be sure to grab a seat close to it, or stop by for a look.
