Ethiopia /Addis Ababa (Tomoka coffee‐roasting company) Part 72
Ethiopian Coffee:
Coffee production in Ethiopia is a longstanding tradition. Ethiopia is where Coffea arabica, the coffee plant, originates. The plant is now grown in various parts of the world; Ethiopia itself accounts for around 3% of the global coffee market. Coffee is important to the economy of Ethiopia; around 60% of foreign income comes from coffee, with an estimated 15 million of the population relying on some aspect of coffee production for their livelihood. In 2006, coffee exports brought in $350 million, equivalent to 34% of that year's total exports.
The coffee plant, Coffea arabica, originates in Ethiopia. According to legend, the 9th-century goatherder Kaldi discovered the coffee plant after noticing the energizing effect the plant had on his flock, but the story did not appear in writing until 1671 and is probably apocryphal.
Ethiopia is the world's seventh largest producer of coffee, and Africa's top producer, with 260,000 metric tonnes in 2006. Half of the coffee is consumed by Ethiopians, and the country leads the continent in domestic consumption. The major markets for Ethiopian coffee are the EU (about half of exports), East Asia (about a quarter) and North America. The total area used for coffee cultivation is estimated to be about 4,000 km2 (1,500 sq mi), the size is unknown due to the fragmented nature of the coffee farms. The way of production has not changed much since the 10th century, with nearly all work, cultivating and drying, still done by hand.
The revenues from coffee exports account for 10% of the annual government revenue, because of the large share the industry is given very high priority, but there are conscious efforts by the government to reduce the coffee industry's share of the GDP by increasing the manufacturing sector.
The Coffee and Tea Authority, part of the federal government, handles anything related to coffee and tea, such as fixing the price at which the washing stations buy coffee from the farmers. This is a legacy from a nationalization scheme set in action by the previous regime that turned over all the washing stations to farmers cooperatives. The domestic market is heavily regulated through licenses, with the goal of avoiding market concentration.

This is Part 2 of our Ethiopian village cultural food tour. If you haven’t already seen Part 1, you can watch it here:
From the incredible Konso Village, we drove back to Arba Minch in Ethiopia, and then continued driving into the mountains, to a Dorze ethnic people village, high into the misty peaks. This is the village where Dessie is originally from, and also our driver, so they know everyone there. It was amazing to arrive to the village.
One of the amazing parts of Dorze Ethiopian culture are their elephant shaped traditional huts, which are unique and one of a kind, shaped like elephants. One of the main most important foods of the Dorze is false banana, also known as ensete. It’s called a false banana because they plant does not produce banana fruit, but just giant leaves, and you eat the stump.
Aunty made a number of extremely unique dishes, including a false banana porridge, and a false banana pancake, along with coffee leaves tea - something I had never seen or ever heard of before.
Visiting the Dorze of Ethiopia was an incredible culture and food learning experience, and it was an honor to have a chance to visit on this Ethiopian food tour trip.
Thanks to Dessie from Go Addis Tours ( for arranging everything on this trip.

Ethiopian coffee is not just a deliciously tasty beverage, it's an essential ingredient of Ethiopian culture and society.
Coffee in Ethiopia is a part of everyday life and it often includes an entire Ethiopian coffee ceremony.
The procedure begins with green coffee beans that are roasted in the open room so they start to burn and turn extremely fragrant. The smoke fills the room in an intoxicating coffee fragrance.
During the ceremony, it is traditional to serve a bowl of fresh popcorn as well as a to burn frankincense for another added aroma.
When the coffee beans are done roasting, they are ground by hand using a mortar and pestle and then placed in a special Ethiopian clay coffee pot for brewing.
The brewing is a complicated process of boiling and reheating until the beverage is perfect.
The host makes sure the coffee is supreme before serving it to the anticipating guests.
Drinking Ethiopian coffee is a great experience!
