French Gordon Ramsay: 2 Michelin stars tasting menu from Jean Yves Schillinger [2019]
Jean Yves Schillinger (French Gordon Ramsay) is the owner of 2 Michelin starred restaurant based in Colmar, France. It has 2 Michelin stars for more than 10 years. And it’s one of the cheapest two Michelin starred restaurants in Europe. How chef Schillinger can afford not to raise the prices? Because he is good at counting and finance.
Chef Jean Yves Schillinger sais: «We are one of the least expensive in France. I calculate well. Either you are expensive and you have fewer customers. Either you are cheap and you have many more customers. I can make a restaurant that is always full. Or a restaurant that is always empty. I have a lot of guests, so I allow myself to have reasonable prices. If I do not have many guests, I have to raise prices.
It's like a pyramid. The more you go up, the fewer customers you have, the more you go down, the more customers you have. I do not want to be cheap. You have to be at the level, where customers are coming because I have good value for money. If you go up, there will be not many customers who can afford this style of restaurant, because it is very expensive».

I think France was a bit like the last bastion of resistance and maybe up until now it wasn't easy in the spirit of the Michelin Guides to promote a woman, at any rate there were female candidates, but maybe not yet ready for the 3 stars.

In September 1992 I entered in the kitchen and that marked me. I stayed for a year and then I left the industry and I returned to the kitchen when we lost the third star, and it was like a first time. I came back to fight and my motivation was ten times higher.

French Chef Anne-Sophie Pic has won entry into a very exclusive, usually all-male club
She is France's first female chef to win three Michelin stars for more than 50 years.
STORYLINE
Anne Sophie's restaurant, La Maison Pic, is located in Valence in the south of France. Anne Sophie is the fourth woman to be given the award since the Michelin guide began using the system in 1926.
Other women to have received the prize in the past are Marguerite Bise in 1951, and Eugenie Brazier and Marie Bourgeois, in 1933.
Anne Sophie says France was the last bastion of resistance for awarding women the honour.
The family restaurant is no stranger to accolades. Her grandfather Andre won three stars in 1934 and her father Jacques in 1973.
Anne Sophie grew up in the restaurant. She was taught by her father and his colleagues. Sophie explains that she first started in the kitchen in 1992.
The restaurant had lost a star grading, and she was determined to win it back. Her father died in September of the same year.
Anne Sophie explains that she worked well with the existing team when she took over the kitchen, but there were a few moments of rebellion when ideas clashed.

Anne-Sophie Pic, un chef trois étoiles à bord d'Air France
Paris Match a accompagné Anne-Sophie Pic, cheffe triplement étoilée, à bord d’un vol Air France reliant Paris à New-York pas comme les autres. Pendant le voyage, elle a fait découvrir aux clients ses nouvelles recettes gourmandes, spécialement conçues pour la cabine Business de la compagnie.
Un vrai challenge pour cette femme-cheffe qui doit composer un menu avec toute une série de contraintes et s’adapter à l’environnement particulier du transport aérien.
Même à plus de 30 000 pieds, l’exigence dans la qualité des produits et les saveurs sont les mêmes qu’à « terre » pour cette Valenciennoise d’origine, connue en cuisine pour son perfectionnisme.
Pour l’aider dans la préparation et dans ce dressage de « haut vol », le chef Servair Michel Nugues accompagne Anne-Sophie Pic et met son expertise et son savoir-faire au service des personnels de bord afin de contribuer à la mise en valeur des plats proposés.
Après avoir signé des plats servis en cabine La Première en décembre et janvier dernier, Anne-Sophie Pic poursuit sa collaboration avec Air France en cabine Business en élaborant cinq nouvelles recettes inédites.
Des plats d’exception sont à découvrir et à déguster jusqu’au mois de juin prochain.
