20 things you (probably) didn't know about British cheese
What? Stilton isn't from Stilton? Cheddar and charcoal, a taste sensation? Red leicester before bedtime brings on dreams of old friends?!.
Though a cream cheese was made in the Cambridgeshire village of Stilton during the 18th century, modern stilton can only be produced in Leicestershire, Derbyshire and Nottinghamshire. Its EU protected designation of origin (PDO) status is rigorously enforced, so the village is effectively banned from making a namesake cheese.
France is renowned for its rich variety of fromage. There is said to be a different cheese for each day of the year, and Charles de Gaulle, the famous French wartime leader and president, once famously exclaimed, how can you govern a country which has two hundred and forty-six varieties of cheese?' The number is actually closer to 400 these days. But Britain can claim even more -- up to 700 distinct local cheeses are produced here in the UK.
You'd be forgiven for thinking that this tasty cheese has been made for centuries in the English county that shares its name. But shropshire blue was first created in 1972 at the Castle Stuart dairy in Inverness. The traditional-sounding moniker was chosen purely for marketing purposes to help boost the product's popularity.
Believe it or not, using ash in the cheese-making process can enhance the final product, improving the ripening process and boosting flavour. It's no wonder then that grape vine ash has been used in certain French goat's cheeses for centuries. The Michael Lee Fine Cheeses company in Yorkshire takes the process to the extreme with its award-winning black char-coal cheese.
This unusual artisan cheese is produced by the people behind stinking bishop. It gets its name from the crust of hops it's rolled in pre-ripening to improve flavour. But it may just as well be called gloucestershire hop: the farm that makes the cheese is located several miles away from the Hertfordshire border, in the next county.
The UK's most costly cheese was invented by the Long Clawson Dairy in Leicestershire for the run-up to Christmas 2011. The premium, limited edition white stilton, shot through with real gold leaf and flavoured with gold-flecked liqueur, was priced at a hefty £608.70 a kilo, making it the most expensive cheese ever created.
Created by chef Martin Blunos for Somerset's Frome Cheese Show in 2010, the planet's priciest cheese sandwich retailed for a whopping £111. Made from high-end sourdough bread, the sandwich was packed with white truffled West Country cheddar, quail eggs and organic figs, and sprinkled with real gold dust.
No, 'yarg' isn't some sort of ancient Celtic name inspired by Cornwall's illustrious past. This delicious cheese, coated in nettle or wild garlic leaves for extra flavour, originates from the 20th century. The recipe was found in a dusty book in Allan Gray's attic. The name of the cheese is the simply the farmer's surname spelled backwards.
Yes, scientists have actually worked this out in a lab. In a 2003 study, Dr Len Fisher and his team at Bristol University calculated the optimum sandwich-appropriate thickness for a variety of British cheeses using an aroma-measuring device to quantify flavour. The results: 7mm for wensleydale; 5mm, cheshire; 4.5mm for caerphilly; 3mm, stilton; 2.8mm for cheddar; and 2.5mm for double gloucester.
If you want to get the most flavour out of your cheese, you need to taste it correctly, depending on the variety. So say the cheese experts. Hard, sharp cheeses like cheddar or malvern (especially the more mature types) should be savoured with the tip of the tongue to eek out maximum taste and achieve the ultimate mouthfeel.
