Ah the life of a professional chef, working and learning, getting paid to eat and learning to reproduce food that causes yours and other people's mouths to drool. I´ve been a cook for the past 10 years working my way around some of the top places in New Zealand and recently a Michelin star restaurant in Chicago. Buenos Aires and Latin America really sparked my interest as a cook, the flavours and the strong local pride of which these flavors come from, are matched to the likes of some of the top eating and cooking destinations around the world. Learning to cook Argentine style! Buenos Aires Travel vlog
Signing up for a cooking class in Buenos Aires was a great experience and wonderful way to learn about the food and other great things to see in the city. Thanks to Airbnb, we learned how to make a 3 course Argentine meal, including the various meanings of the empanada folds.
This was our last activity in Buenos Aires before heading further south in Patagonia where lots of wildlife adventures awaited us. I am slow on uploading because as you guys know I still have a real-life job while travelling, but the next videos will be up in a couple of weeks - so have patience as always - which I know you do, because you guys are awesome.

Argentina's cuisine glows with wood-fire cooking

Argentina's cuisine is known worldwide for its barbecued beef.
But local chefs are now taking the country's passion for grilling over a wood fire to a new level and earning international recognition by experimenting with new dishes in open-fire ovens.
STORY-LINE:
Flames glow, smoke billows and the aroma of slowly burning logs blends with the flavours of lightly charred calamari with broccoli and aioli cooked inside a handmade wood-fired oven.
Like other dishes at Proper restaurant, the main ingredients for this house favourite are timber and fire.
The restaurant, located in a refurbished auto-repair shop in Argentina's capital, was recently named in the Latin American edition of the prestigious San Pellegrino World's 50 Best Restaurants list.
Argentine cuisine has long been known worldwide for its barbecued beef.
But local chefs are now taking the country's passion for grilling with wood to a new level and earning international recognition by experimenting with new dishes in open-fire ovens.
Leonardo Lanussol launched Proper last year with fellow chef Agusto Mayer.
We basically cook all the food with firewood and it enriches when it goes through the oven. To eat meat cooked on firewood oven is great. Nevertheless, to eat an asparagus cooked in this oven. You won't find it in other place than Proper. So this is our concept. Many vegetables very well seasoned and cooked on our firewood oven, he says.
Diners flock to the restaurant in the trendy Palermo neighbourhood of Buenos Aires attracted by the scent of the vegetable-centric dishes.
Another local restaurant embracing the technique is Bestia, which recently opened its doors in the outskirts of Buenos Aires.
Its co-owner, chef Nacho Trotta, travelled for weeks through Alabama, New Orleans and Texas to incorporate smoking and barbecue methods of southern US cuisine into tender ribs and others dishes that he slowly cooks for more than 10 hours.
He says the secret to the success of open flame cooking is that it is tasty.
Traditionally, the Argentine eat barbecue. There are many restaurants with firewood ovens these days. This concept is quite simple. It's because it's tasty, let's not beat about the bush. To cook with firewood can be done with a clay oven or with a firewood barbecue, they deliver a taste that you can't find on a gas grill or a pan. Besides that, the fire is very attractive to the customers as well.
Even fast food has been influenced by the logs.
At Kon Kon, a huge mural of a bearded lumberjack greets people who come for Shawarmas (mixed meat cooked on a spit) cooked with embers instead of the traditional rotisserie.
Food journalist Roly Villani says that although man has been cooking with fire since the dawn of time, marinades and spices make today's flame grilled food more delicious.
Let's think that food made with fire is the first humanity's discovery. One and a half million years ago, the first idea of the Homo erectus was to put animals, meat or vegetables close to the fire. Nowadays, that allows an infinite number of combinations, to marinate products and put them beneath the fire but also to add products. Two different products together over the grill it is not the same as separating them. This new combinations are carrying out here a new style, something tasty and complex.
Augusto Mayer, a chef and co-founder at Proper restaurant, says that traditional Argentine barbecues known as asados, which gather a family around a fire, creates a unique experience and has shaped the national character.
His colleague and co-founder Lanussol agrees, saying that the tradition of barbecuing is being rediscovered.

Argentina Buenos Aires is one of the biggest cities in South America.
The city is located on the western shore of the estuary of the Río de la Plata, on the South American continent's southeastern coast.
The San Telmo Market in Argentina Bueno Aires started in 1970 as a small, Sunday antiques market.
Today, it is an enormous bazaar covering blocks and blocks of cobblestone streets seemingly in every direction off of Calle Defensa.
San Telmo is the barrio that lies six blocks from Plaza de Mayo, bounded to the north and south by the micro-centro and La Boca, and to the east and west by Puerto Madero and Avenida 9 de Julio.
In order to properly enjoy San Telmo, you really need to go there on a Sunday. That’s when the huge antiques market turns Calle Defensa into the funnest place in town.
They say San Telmo is the barrio that birthed the tango.
Perhaps its greatest qualities, besides the architecturally beautiful neighborhood which it calls home, are its exclusive goods and reliable nature.
Never a Sunday will there be without tourists pouring into the cobblestone streets of San Telmo for one of a kind antiques, trinkets, art, tango and delicious food.

San Telmo is the oldest barrio (neighbourhood) in Buenos Aires, Argentina. Cafes, tango parlors and antique shops line up the cobblestone streets, which are filled with artists and dancers. Sundays is the day of the main San Telmo market, and this video is a collection of four short clips filmed during the Sunday market.
ARGENTINE FOOD FESTIVAL IN ARGENTINA: Feria Masticar in Mar del Plata!
In today's video, we attend our first food festival in Argentina! Feria Masticar is a food festival that celebrates Argentine food and drink, and draws hungry foodies from far and wide - ourselves included. The event hosts numerous classes and seminars for cooking enthusiasts, and it also brings together some of the most highly acclaimed chefs and restaurants. The festival is usually held in Buenos Aires, but this year they expanded to the coastal city of Mar del Plata and what better reason to visit!
In this video, we'll show you some of the Argentine dishes we tried including:
1) Calamari chorizo with pickled vegetables
2) Pork sandwich with Japanese BBQ sauce and coleslaw
3) Obama pizza with pepperoni and cheese
4) Super sorrentos stuffed with ground lamb confit, sundried tomatoes and mushroom sauce

ARGENTINE FOOD FESTIVAL IN ARGENTINA: Feria Masticar in Mar del Plata!:
Hey guys! We are Samuel and Audrey, a travel vlogging couple from Canada. In this travel channel we share our travel and food vlogs while touring the world.
We had the privilege of traveling around Argentina for nearly 3 months from January- April 2019 on a trip covering a large section of the country.
We kicked things off with several days in Buenos Aires where we were joined by Audrey's parents eating and sightseeing around some of our favourite neighbourhoods in the city. We then flew from Buenos Aires to Cordoba where we spent a couple of weeks in the Sierras of Cordoba visiting both La Cumbrecita and Villa General Belgrano with highlights including hiking and delicious German and Swiss cuisine.
From Cordoba, we then travelled a considerable distance on an overnight bus to Mar Del Plata just in time for a special food festival called Feria Masticar featuring the best of Argentine food and wine. We spent several days enjoying beaches and seafood before heading south to Patagonia to visit the province of Chubut.
While on the Atlantic side of Chubut we visited Puerto Madryn, Peninsula Valdes, Trelew, Gaiman and Dolavon. To summarize our time in this area, we had incredibly close encounters with wildlife including penguins, sea lions and guanacos while also experiencing Welsh culture in Argentina.
Our time in Patagonia continued as we headed from east to west trading more barren landscapes for thick forests, impressive mountains and magnificent lakes. We spent significant time in both Esquel and El Bolson with day trips to visit Trevelin, Parque Nacional Los Alerces, Cholila and Lago Puelo. Highlights included sailing, hiking, riding vintage trains and partaking in the national asado festival.
We finished visiting Patagonia with time spent in Villa La Angostura, San Martin De Los Andes and Bariloche where we enjoyed more stunning scenery and hiking. On our way back to Buenos Aires, we took the Tren Patagonia to Las Grutas before meeting up with Audrey's dad again.
To finish off our trip in Argentina, we spent more time in the capital and later Mendoza where we got to experience wine tourism to its fullest extent. Overall, we had an amazing time travelling around Argentina having only scratched the surface of this vast and diverse country.
Overall our Argentina travel series explores cities, small towns that are off-the-beaten-path, and scenic attractions with a strong emphasis on Argentina cuisine and local culture.
