Going to culinary school in China is something I never thought I would do. But now I'm here, in Chengdu, Sichuan, at the Sichuan Higher Institue of Cuisine on a 2 year+ 1 year internship to being a Sichuan chef.

I just dropped out of my masters in international trade to come here. This is what I really want to do, and I’ll be sharing journey of becoming a Sichuan cook with you. After living in Asia 3 years and being completely spoiled by the abundance of delicious and cheap street food in China, Malaysia, Thailand, Turkey, and India I’ve had no incentive to cook. It’s so easy and fun to hit the street and eat new food all the time, so I honestly think in 3 years, I’ve cooked less than 10 meals for myself. As I explored the Shanghai food scene last month, It dawned on me as I was about to enter my 3rd semester at the economics school here in Sichuan that I was studying there for no reason, what I really wanted to do is continue to create content and resources for YOU, through videos and text. I was merely studying there because I thought it was a good backup plan if foodrangin’ failed. But now I feel confident it won’t. I realized that I’m really good at eating, decent at producing videos and planning them out, alright at describing flavours, but, I can’t back it up with culinary skills. Over the last 2 years I’ve been bothered by this, until I recently watched the classic Julie and Julia and learned that even Julia Child herself couldn’t cook an egg when she entered the cordon bleu in France. So here we go, I’m going full in. I’m 100% committed to this.
I’m going to learn to cook Sichuan cuisine, and it’s all starting here. This is the beginning of my new journey. And I want you to follow along with me.
I had an insane first few days at school, and as you can see, my skills are not there, but I’m going to keep a positive mind through all the times I stumble and mess up and really do my best to learn and create some delicious food. Street Food - Chinese Street Food - Best Street Food China. Chinese Street Food and Travel for Cheap in China! Traveling the world for cheap is not easy, but meeting up with Kevin Cook from Monkey Abroad to shoot his traveling the world for $20 per day series was a lot of fun! I took him around to some of the best Chinese street food in Chengdu, China, and we explored some local areas and had a great trip. Kevin is about to begin a trip traveling the world with no money alone (well, he's budgeted $20 per day, very cheap). In this Chinese street Food tour video with Kevin Cook, I took him around many places in Chengdu. First, we visited this local market near the outskirts of Chengdu, Sichuan, China, and found Chinese street food and the atmosphere to be mind blowing and exciting. It was truly an experience visiting this Chinese street market! So much food and Sichuan ingredients, so many flavours to try! We visited this morning market on a Friday morning in Chengdu at 9am with an empty stomach and not much money to blow with the goal of tasting some local dishes.
Rather than trying hot pot in Chengdu or hot pot in Chongqing, you could try some way cooler food in Chengdu at local market or a noodle joint like this. This should be a top priority in my opinion!

Chinese Food Cooking - How to Make Mapo Tofu - Chinese Food Tour in Sichuan Museum
There’s a huge Chinese food museum about an hour outside of Chengdu in Pixian, the birthplace of Sichuan fermented bean paste (AKA doubanjiang). I came for a Chinese food tour and Chengdu museum tour to learn about some of the roots of Sichuan cuisine.

I met up with a local museum tour guide, Jen, who took me for a walk through all the interesting parts of the museum. In particular, the displays of the bean paste fermenting was really interesting!
Afterwards, she brought me to the museums own cooking school and gave me a Chinese cooking class to learn how to make the recipes for 3 classic Chinese foods:
1) How to Make Mapo Tofu
Ingredients:
1/2 block or 1 block Soft Tofu
1/2 lb stir fried ground beef or pork
2 Garlic Bolts, cut into 2 inch strips
2 tablespoons Sichuan fermented broadbean paste, chopped fine
1 Tablespoon finely minced fresh ginger and garlic
1/2 Teaspoon to 1 teaspoon ground dried chilies
5 or 6 Fermented Soy Beans, chopped
Starch Mixed with water ( I usually add a couple spoons into a little bowl and add enough to the wok get the consistency right, you can follow as we do in this cooking video
Cooking oil
Soy Sauce
1) Boil the cubed tofu in water for 20 seconds with about 2 teaspoons of salt and remove with water and set aside
2) Heat 1 tablespoon of oil in the wok, then turn down heat to medium. Add in 2 tablespoons (Sometimes I add less, it's quite salty) of Pixian Broadbean paste and fry until fragrant and rich red. Then add the fermented soy beans, ginger, garlic, ground chilies, and stir fry quickly.
3) Pour in 3 small ladles of water as shown in video and 1 teaspoon soy sauce, stirring well. Put the drained tofu back into wok, and be gentle with the tofu.
4) Add in 1 tablespoon of the starch water mixture. Let it boil quickly and mix through then add a second time.
5) Add in the stir fried beef and garlic bolts, and as it boils again, add in the last bit of starchy water, making sure to remove all the starch that may have stuck to the bottom of the bowl.
6) When it's nice anad thick, turn off the stove, plate, and add a little ground Sichuan peppercorn and serve!
How To Make Kung Pao Chicken shown in this video:
For the wok:
2 boneless high quality chicken breasts
20 grams of garlic and ginger (about 5 cloves and an equivalent amount of ginger)
3 Chinese onions, chop about 30 grams worth
20 kernels of Sichuan peppercorn
Around 20 grams of chopped dried chilies, preferably Sichuan variety (at least 10 individual chilies, seeds removed)
Roasted peanuts, the more the better, according to what you like
For the marinade, he made it without giving exact amounts, but approximately use this:
2 pinches of salt
1 pinch of white pepper powder
1 pinch of chicken bouillon powder
~1 tablespoon dark soy sauce
~1 tablespoon rice cooking wine, you can use Shoaxing rice wine or regular cooking wine. In chinese it's 料酒, liaojiu
1 egg white
1 large pinch of cornstarch
For the sauce:
5 grams salt, 1 teaspoon
10 grams MSG, 2 teaspoons (OPTIONAL, not recommended)
10 grams chicken bouillon powder, 2 teaspoons
4 or 5 teaspoons of sugar
10 or 20 ml black vinegar, depending on how sweet you like it
1 teaspoon dark soy sauce
Wet corn starch, 2 tablespoons, you can use cornstarch and water.
and then add a little more water to the sauce

I'm just discovering the Chinese street food scene here near my new apartment. There is definitely a lot of delicious Chinese food to be found, and I've spent the last couple weeks moving in to my new place and waiting for my new visa to study at the Sichuan culinary institute here and become a Sichuan chef! It's a two year program that I am so excited for!
If you missed the last video, I extended an invitation to all of my subscribers to come Couch surf at my place and stay in the spare room. I would love to have you over if you're visiting Chengdu! I came to try the best Chineset street food and enjoy a bunch of Chinese Street Food and sample new types of Chinese cuisine. I'm a Chinese food lover, so I also went to a couple nice restaurants to enjoy the full spectrum of Chinese cuisine.

It was nice to have a Chinese tea tour of the fields surrounding Hangzhou, and also to learn a little bit about the recipes from the Chinese chef.
The whole city of Hangzhou felt very quiet in preparation for the G20 summit. I still managed to find some of the best street food and had a great time eating!

EXPLORING Chengdu, Sichuan With Austin Guidry! | RURAL SICHUAN
In this video, I met up with the one and only, Austin Guidry (one of the best China vloggers)! Austin is one of the reasons why I came to China. I used to binge watch his videos back in Canada and his videos really inspired and helped me to finally take the plunge and come on over to China!
He agreed to meet up in Chengdu and I was excited to meet him. I got to meet him and his wife, Crystal, and they took me to an old school restaurant called 明婷饭店“ or Ming Ting Fan Dian. We ate some awesome food there, went to Commune Bar and then hopped on some Ofo bikes to head up north.
Northern Chengdu is generally less developed than it's southern counterpart. We got to see lots of food vendors, bikes and NOISE! We passed through a rural part of the city and it was quite the adventure. I don't think I have ever had more fun riding my bike in China.
Exploring Chengdu, Sichuan with Austin Guidry was a blast and definitely one of the most memorable experiences I had in Chengdu. I loved being in rural Sichuan (kind of rural hahah). I would love to come back
In the evening, we decided to get some Indian food! One of my favs. After that, we called it a night and I headed by to my hotel.
