Samia Ahad, Owner and Chef, studied and trained in a number of leading New York establishments before focusing on Asian food and launching Coriander Leaf, the New Asian Food Hub, in 2001. Her food hub idea was born from a desire to give customers more of a choice with regards to the culinary experiences they could enjoy. Which explains what Coriander Leaf is today; a center for food-related activities showcasing a fine dining bistro, corporate bonding (team building) programmes, cooking lessons, a catering service and the sale of kitchenware, hampers and stylish gifts. All this in a prime riverside setting.

Singapore Seafood Laksa (Laksa Seafood) – Episode 137
Ingredients (10 serves):
250 gr white tofu, squared or triangled and deep fried (puff tofu)
500 gr shrimp (udang), peeled and save the heads
1.5 liter water + 1 liter water to make shrimp broth
4 lemongrass (sereh), bruised (geprek)
200 ml coconut cream (santan kental)
5 TBSP oil
3-4 stalks spring onions (daun bawang), chopped
½ cup coriander leaves (daun ketumbar), chopped (optional)
For laksa paste:
10 shallots (bwg merah)
5 cloves garlic (bwg putih)
6-8 red chilies (cabai merah besar)
5 cm galangal (lengkuas)
2 cm turmeric (kunyit)
8 candlenuts (kemiri), or macadamia nuts as the substitute
1.5 - 2 TBSP dried shrimp (ebi), soak in warm water for 15 minutes and then drained
1 TBSP coriander powder (ketumbar bubuk)
1.5 tsp curry powder (bubuk kari)
2 tsp shrimp paste (terasi/belacan)
1.5 – 2 TBSP salt (garam)
3 - 4 tsp sugar (gula)
Accompaniments (optional):
500 gr hokkien noodles and any noodles you like
200 gr bean sprouts (tauge), boiled and drained
75 gr crabstick, boiled and sliced
200 gr fish balls (bakso ikan), quartered and boiled
4-5 hard-boiled eggs (telur rebus), halved
Limes, quartered

Separated into 3 teams - representing the 3 distinct regions of Switzerland - the members of swissnex Singapore have prepared a delicious 3 courses menu, while being observed by the Coriander Leaf's special team which delivered later on results and comments about the behaviour of each team and each team member.
Finally, we enjoyed our self-made dishes, a gastronomic pleasure.

Singapore Curry Chicken :
Curry Powder:
2 tablespoon coriander seeds
1 Tabledpoon fennel seeds
1 Tablespoon Pepper kernels

one handfull curry leaves
1 Cinamon stick
10 cardamoms
1 Tablespoon Turmeric Powder
Curry Paste:
10 Shallots
Half Bulb garlic
2 Red chillies
5-6 Dried Red chillies soaked in water
2 stalk Lemongrass
4 candlenuts /5-6 cashews
3 tablespoon Curry Powder
Grind To Paste with water
To the Curry
Add 3 Potatoes, 2 pandan Leaves, 1 lemongrass,curry leaves,1 whole coonut milk/300 ml coconut milk.
9 Herbs You Can Grow In Water Over And Over Again For Endless Supply
If you have a glass jar and access to fresh water, you can grow a supply of herbs in water right on your windowsill! While any medium -sized container will do, Mason Jars are particularly cute! Growing procedure for all the herbs is the same. Simply take some healthy, fresh cuttings - Leaving just two sets of leaves at the top of each cutting, and remove the remaining leaves. Then, submerge the cuttings in a few inches of clean-water.
Here is a list of such herbs.
1. Peppermint
Grow peppermint in a jar and snip off a bit to make herbal tea, oil or soup. You can also just enjoy the sweet scent of this fragrant herb Peppermint does well in partially sunny or shady windows.
2. Oregano
You can use fresh oregano straight in pasta sauces, soups and other savory dishes. Just use a pair of kitchen scissors to gently remove a few leaves from the stem. Oregano can grow quite large, so keep an eye on your plant.
3. Sage
Sage has a flavorful scent which makes it a popular choice for holistic purposes. You can also use sage with eggs, chicken, lamb or pineapple. Snip as much as you need and add it to your favorite dish. Sage doesn't need a ton of water and should be kept in moderate sunlight
4. Basil
This popular Italian herb grows well in water and can be used in many different recipes including sauces and soups. Make sure your basil jar gets about 6-8 hours of sunlight per day.
5. Stevia
This hardy herb prefers a bit of sun but can grow just as well in shadier areas. You can use the leaves off of this herb to sweeten your tea of coffee naturally! You can also create a powder from the leaves to use as a sweetener too.
6.Thyme
Thyme is a versatile herb. It will flower or you can harvest them before they flower, hang the stems to dry the leaves and then remove the leaves to use in cooking. Thyme needs plenty of sunlight, so set those jars in a bright window.
7.Rosemary
This flavorful herb does well in sunlight or partially shaded areas. It will grow better in full sunlight though. Use your growing’s to spice up your favorite chicken dish!
8.Lemon Balm
You can use the lemon balm herb to create an herbal tea that helps reduce anxiety, relieve symptoms of indigestion and helps make sleep a little easier to come by. Give this plant plenty of sunlight.
9.Chives
This onion family member is super easy to grow and you can use it in a ton of dishes. Make sure this herb has plenty of water and sunlight for best growth results.
For Continues harvest of your herbs, try adding hydroponic nutrients to the water to give your herb a nutrient boost.

Beef Rendang | The ULTIMATE guide [Nyonya Cooking]

Rendang is a meat curry dish from West Sumatra, Indonesia. It needs hours of slow cooking until the coconut milk is caramelized and turns into its signature luscious texture. Together with homemade coconut butter and a load of spices, the dish is a delicious affair.
Rendang is a very special curry dish. Made with a selection of 10 different types of spices such as chillies, turmeric, lemongrass and galangal, it easily stands out for its awesome flavour which develops over the long and slow cooking process. It's so tasty that it was voted as the most delicious food in the world based on 35,000 votes in a survey carried out by CNN. The complexity of the dish and the details that come along with it made rendang an exclusive dish. It's usually served for weddings, religious celebrations and coronation ceremonies. Now that we know rendang is the king of curries and tastes extremely delicious, it is important to understand the dish and the tips to achieve the best result.
Rendang originates from the Minangkabau ethnic from West Sumatra. With the migration of Minangkabau immigrants to its neighbouring countries such as Singapore and Malaysia, it was then introduced to other neighbouring countries such as Malaysia and Singapore. The name ‘rendang’ came from the Sumatran word ‘randang’ which means slowly. This clearly refers to the cooking process which takes a long time. Traditionally, it takes between 8 hours to 3 days to cook rendang! Some suggested that the correct name for the dish should be the latter instead of what it is known today.

Nasi Ulam Nyonya | Peranakan Rice Salad [Nyonya Cooking]
'Nasi Ulam' refers to a rice salad which uses local herbs and vegetables as the main ingredients. While there is a variety of nasi ulam across Indonesia, Malaysia and Southern Thailand, Nasi Ulam Nyonya offers the typical 'peranakan' flavours as its name suggests.
The term nasi ulam literally translates to rice and salad. Having a variety of local vegetables and herbs as its main ingredients and tossed with rice, nasi ulam is exactly what its name suggests. However, unlike western salads, ulam is sometimes cooked using the grilling, boiling or steaming method and is often served with [sambal belacan]( to enhance its taste. Turmeric, basil leaves and winged beans are some of the vegetables which are categorized as ulam.
There are many different types of nasi ulam in Indonesia, Malaysia and even southern Thailand with each showcasing its specialty. Nasi ulam Nyonya represents the combination of the Malay and Chinese cultures in one dish. Like the other varieties, this Nyonya rice salad is also served together with [sambal belacan]( The preparation can be quite tedious as each detail needs to be looked into to make it balanced and flavourful.
Basmati rice vs Jasmine rice
The best type of rice to use when preparing Nasi Ulam Nyonya is the long grain rice. Therefore, Jasmine rice is the more popular selection as it has a good amount of starch which allows the ingredients to bind with the grains. If you prefer rice with longer and thinner grains, Basmati rice would be the better choice although it is less moist and sticky.
Substitutes of fresh leafy herbs
The fresh leafy herbs used in this recipe are widely available in Southeast Asia. Each of them not only contributes a unique flavour but also makes the dish typically peranakan. Besides that, the locals believe in the great health benefits of these herbs. Most of these herbs, frozen or fresh, should be available at the local Asian grocers or markets. If you are unable to obtain some of them, feel free to substitute with other herbs such as coriander, sweet basil, penny wort or betel leaves. Ginger torch flower may be the toughest ingredient to find abroad. If unable to do so, try your luck at Japanese grocers and look for Myoga ginger.
Slice ingredients finely
While some ingredients may be tough and uncomfortable to chew, there are also others which deliver a very strong taste which many may find disturbing. For example, lemon grass is quite hard and tough, hence it needs to be chopped very finely to ensure it is easily ingested and to create a balanced taste in the dish.
Cook rice in advance
This peranakan rice salad is widely known for its distinctive flavours and deliciousness. Since it is served at room temperature, feel free to cook the rice and prep the ingredients a day before serving. It would be ideal for a party if you are rushed for time. In fact, Nasi Ulam Nyonya is a specialty to the Peranakan community during celebratory events such as birthday or weddings.

Tawa pulao is a popular Mumbai style street food made by tossing cooked rice with mixed veggies and a spicy tomato based masala - an ideal one pot meal.
TAWA PULAO
Ingredients
3 cups cooked Basmati rice
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
1 tablespoon ginger-garlic paste
1 medium onion, finely chopped
2 cups tomato puree
2 medium tomatoes, finely chopped
1 medium green capsicum, finely chopped
½ cup green peas, boiled and coarsely crushed
Salt to taste
1 tablespoon red chilli paste
1½ tablespoons pav bhaji masala
2 tablespoons chopped fresh coriander leaves + for garnishing
2 tablespoons lemon juice
Yogurt for serving
Method
1. Heat oil in a non-stick pan. Add cumin seeds and when they change colour, add ginger-garlic paste and sauté for 1 minute.
2. Add onion and sauté till translucent. Add tomato puree, mix and cook on high heat for 2 minutes or till the mixture thickens.
3. Add chopped tomatoes, mix and cook for 2-3 minutes. Add capsicum and green peas, mix and cook for 1 minute.
4. Add salt, red chilli paste and pav bhaji masala, mix and cook on medium heat for 2-3 minutes.
5. Add rice and mix lightly. Add 2 tablespoons coriander leaves, mix and cook for 5 minutes. Add lemon juice and mix well.
6. Garnish with some coriander leaves and serve hot with yogurt.
