Yellow Stone Fruit, Bone-Dry, Crisp Acidity
Pale straw yellow. Pure nose, still youthful; some mineral notes, some ripe lemon, fresh pear and some yellow fruit. Classically bone dry palate, nicely austere, with a good grip, good extract. Mouthwatering acidity, really youthful and vibrant acidity, but still it shows quite nice fruitiness as well there, with some yellow stone fruit. Very good persistence, it keeps lingering. It’s medium-weight but it has a rather long finish, finishing off bone-dry with a crisp acidity and once again that salivating freshness.

White Stone Fruit, Juicy Acidity, Mineral
White wine, with a rather youthful pale light straw colour. Fresh nose, very clean, mineral; some wet stone, fresh almond, young stone fruit, and citrus. Excellent bite on the palate, within that medium-bodied frame it has good flavour intensity, good extract, ripe and pure freshness, elegant white stone fruit. Very coherent, with a very long juicy acidity. Very fine persistence, all the way fresh and mineral, even if the fruit is present, very delicious. Good extract, nice and salivating finish. Pure and fine in a very gastronomic style. A wine that certainly will develop much more complexity with age, but I find it really delicious right now.

Domaine de Genèves Chablis
Domaine des Genèves is gelegen in Fleys (een klein stadje tussen Chablis en Tonnerre), is een familiebedrijf dat een oppervlakte van 14 hectare bezit, al drie generaties lang. Domaine des Genèves biedt een bijzonder scala aan wijnen, variërend van Premier Cru tot witte Bourgognes (Vaucoupin, Ovens en Mont de Milieu). De wijn wordt geproduceerd op een oppervlakte van 10 hectare. De fermentatie vindt plaats in temperatuurgecontroleerde vaten waar het zijn alcoholische en malolactische gisting krijgt.
In deze Chablis komt een subtiele hint van mineraliteit naar voren door het terroir. Het is een krachtige, warme, rijke Chablis, rond en vlezig van structuur. Deze wijn wordt gekenmerkt door zijn frisse citrus, aroma’s van honing en gekonfijt fruit. Heerlijk bij vis, schaaldieren, zeevruchten, wit vlees en gevogelte. Deze wijn kan het beste gedronken worden binnen 3-4 jaar.
