不知道有多少人看過自家族譜呢?如果你是土生土長的廣府人,回去找族譜來看看,說不定很多人都會發現一個相同點,那就是南雄的珠璣巷~南雄除了有美麗的銀杏,其實也是一個非常有歷史底蘊的地方~今天就由導遊小李,來帶大家走走這條,古代的“高速公路”!感受一下我們祖輩當年南遷走過的路吧~
珠三角的廣府人回去看族譜可能不少都會發現寫到有南雄的珠璣巷。確實廣東地區很多人曾經是從那裡移遷到南粵大地的。因為那裡是古代唯一的連接嶺南和中原的通道。而現今天我們就要去再走走這條古道,看看當年古人的南遷史。

Pork with salted vegetables 梅菜扣肉
This recipe utilizes Chinese sweet pickled mustard cabbage called mui choy. Mui choy is preserved, or pickled Chinese cabbage that has undergone a fermentation process. It is commonly used in braised dishes (such as this pork belly dish) and other Chinese dishes.
There are two types of Mui Choy, one is salted while the other one is sweetened...
In this recipe we use the sweetened Chinese pickled mustard cabbage. You can try find it in your local Asian Supermarket, ask the employee if you're not sure:)
Ingredients:
4 1/2 cups pork belly
1 tbsp light soy sauce
2 tbsp chopped garlic
8 oz sweet mui choy, diced, soaked
Seasonings:
2 tbsp light soy sauce
1/2 tsp dark soy sauce
1 tbsp sugar
Water
Method:
1. Prepare mui choi by unfolding them and washing them.
2. Dish and drain.
3. Next, cut into thick slices.
4. Now for the bacon. You'll cut these into thick slices as well. About 1/2 slices.
5. Take 2 cloves of garlic and mince them up.
6. Put in the chopped bacon, and garlic into the pot.
7. Turn on that fire!
8. When things start sizzling, keep stirring, making sure the bacon doesn't stick.
9. Now for the seasoning. Add light soy sauce. Salt. Sesame oil. Sugar. And dark soy sauce.
11. THEN STIR IT SOME MORE!
12. Now you'll add the muy choi. Cover the bacon up. Make sure your meat isn't showing. That's what she said. Then mix it up a bit.
13. Finally, add water. Be sure to fill it up to the top, or just enough to cover the muy choi.
10. Let it simmer for 45 minutes.
11. And simmer some more. Here's a perfect opportunity to file your taxes. Be sure to account for all your dependents.
12. Remove it and serve hot.

The Song dynasty (Chinese: 宋朝; 960–1279 CE) provided some of the most significant technological advances in Chinese history, many of which came from talented statesmen drafted by the government through imperial examinations.
The ingenuity of advanced mechanical engineering had a long tradition in China. The Song engineer Su Song admitted that he and his contemporaries were building upon the achievements of the ancients such as Zhang Heng (78–139), an astronomer, inventor, and early master of mechanical gears. The application of movable type printing advanced the already widespread use of woodblock printing to educate and amuse Confucian students and the masses. The application of new weapons employing the use of gunpowder enabled the Song to ward off its militant enemies—the Liao, Western Xia, and Jin with weapons such as cannons—until its collapse to the Mongol forces of Kublai Khan in the late 13th century.
Notable advances in civil engineering, nautics, and metallurgy were made in Song China, as well as the introduction of the windmill to China during the thirteenth century. These advances, along with the introduction of paper-printed money, helped revolutionize and sustain the economy of the Song dynasty.
