Owner/Chef Giacomo Zarcone has over 20 years fine dining experience.
My love for food started with my moms cooking. I come from a small sea-port village, my grand father was a fisherman and the catch of the day was the only fish that reached our tables. My dad owed a bakery in town and my love for specialty breads took off once in my high teens.
My career in the restaurant business in the U.S. started in the Little Italy area of San Diego, where I soon became the main chef for a popular local restaurant. My knowledge of fish and breads of course played a huge role.
At one point I decided to go back to college, so I ventured to the dining room. My food knowledge, enthusiasm, and now education in the hospitality industry helped me move quickly through the ranks. I soon became the General Manager of Tutto Mare (everything from the sea) in San Diego with a 400 seat capacity, a fine Italian sea food restaurant. Then Prego Ristorante, 350 seating capacity in Irvine CA. Now I had managerial experience, Italian cooking and fresh bread background. La Focaccia's concept is a culmination of my journey from the Mediterranean Sea to the most eclectic restaurants on the West Coast.
Focaccia is a soft and spongy flat bread, we named our dream La Focaccia because we wanted to offer our guests great fresh baked bread for their paninis and with their meals. Our recipes derive from specialty dishes from throughout the Italian peninsula where we combine the freshest ingredients at moderate prices. We believed that Las Vegas needed a restaurant where you can have great food without putting a hole in your wallet.

INGREDIENTS:
500g of Mince/ Hamburger meat
1 short crust bread or 2 rolls
half cup of white wine (120ml)
60g of grated Parmigiano cheese, or Pecorino cheese
1 spoon of olive oil
1 spoon of butter
1 spoon of bread crumbs
1 onion
1egg
chopped parsley
salt and pepper
Focaccia is one of the most popular types of bread in Italy, with a long history that reaches distant times of early Ancient Greek culture and Etruscans who lived in North Central Italy before the formation of Roman Empire. This flat bread topped with spices, olive oil and other products was in use for thousands of years, before it was gradually morphed into one of the most famous Italian meals – pizza. However, during its entire trip through our modern history, focaccia managed to remain unchanged, with basic recipe that survived unchanged from the time of Etruscans or Ancient Greeks.
This great Italian bread originated from the northern shores of Mediterranean, and slowly spread into the cultures of Greece and Rome where it was very widely used. In the beginning focaccia was cooked on heated tile, earthenware disk or on the hearth of a hot fire, with bakers often puncturing the bread with the knife to prevent appearance of large bubbling on the surface. Alternatively, they used needles and dotted the bread in regular patterns, sometimes poking the bread with handle of utensil. One of the most important ingredients of focaccia was always olive oil, which was added to the top of the dough as a mean to preserve its moisture after coking.
