The DUNBRODY HOUSE in Arthurstown
Just down a country lane from the charming little ferry that plies its way to Waterford across the Barrow estuary, Dunbrody House was the onetime home of the Marquis of Donegal.
Catherine and Kevin Dundon have transformed it from a private house to stylish top-class hotel complete with spa and cookery school.
Kevin and his team produce food that is as exquisite to look at as it is gorgeous to eat.
Enjoy an evening long dinner in the dining room or more casual fare in the champagne and seafood bar.
The house is a delightful blend of contemporary and country house—lots of scrumptious public rooms and some particularly spacious bedrooms, such as 300 with it's French windows opening up to the garden.
Top of the line bathrooms are the order of the day and the house is wheelchair friendly.
An invigorating walk along the headlands in a must. Be sure to visit the hens and stroll around the large organic fruit and vegetable gardens.
Explore the wild and beautiful Hook Peninsula, visiting Europe's oldest lighthouse, and take the ferry to Waterford and its famous crystal factory.

The Seaview House Hotel in Ballylickey
This tall, bright-white Victorian house set amidst lush gardens rimming the shores of Bantry Bay is a most hospitable welcoming hotel.
Run by Kathleen O'Sullivan and her gracious long time staff the atmosphere is friendly and informal, which accounts, I am sure, for the large number of guests who return here year after year.
Enjoy a pre-dinner drink in the sitting room bar and select your dinner from the tempting menu which usually includes fresh seafood—we particularly enjoyed out selections of locally raised duck and fresh lemon sole.
For those in search of peace and quiet there is an old-fashioned parlor/TV room.
The dining room is cleverly divided into several areas which creates a most enjoyable experience.
Be sure to request a room at the front of the house for a great many these rooms have tempting glimpses of the bay across the gardens and through the trees.
Two garden view rooms have been especially equipped for the handicapped.
The scenery hereabouts is absolutetely spectacular. If you have time, wander off the main roads to explore the Beara Peninsula with its views of barren, rocky mountains tumbling into the sea.
A must visit is nearby Garinish Island, a spectacular garden with trees, shrubs, and plants from every part of the world.
Just down the road is Bantry House, a grand mansion that is well worth a visit.

Amongst the scattered modern holiday cottages surrounding the village of Miltown Malbay, a popular Irish holiday destination; you find a traditional Irish farmhouse that is now a welcoming guesthouse, restaurant, and cookery school operated by Rita Meade.

The heart of the house is the country kitchen with its large central island designed for cooking classes.
There are comfortable chairs in the sitting room with its old country dresser.
The adjacent dining room has been extended with a sunny conservatory.
Dinner has four to five choices in each of the three courses.
