Bretagne Trip⎜TRAVEL VLOG
Follow us on our trip through Bretagne, visiting Rennes, Saint Malo, and the sculpted rocks of Rothéneuf.
Val and I finally took a holiday! Woo-hoo! After a 5 hour road-trip from Paris to the region of Brittany, we explored the amazing Bretagne architecture and sights along the cobble-stoned streets of Rennes.
Then, we headed off to see the seaside city of Saint Malo, famous for it's privateering and pirate history. With numerous fortifications along the French coast and on islands in the English Channel it is a magnificent sight to behold!
Finally, we ended up at the Sculpted Rocks of Rotheneuf aka Les Rochers Sculptés. Over 500m2 over carved natural cliff-face, created by a hermit priest who suffered a stroke at 30yo and spent the next 25 years carving the coastal cliffs with one working hand!

David Mutter is the regional winner for the Vive le Cheese competition in Scotland. His French Camembert and West Coast Smoked Salmon en croute impressed the judges. The simple but elegant dish is very simple to re-create, and is a great alternative for a starter, or a lunch. David is head chef at the Darroch Learg hotel and restaurant in Ballater in Aberdeenshire.

FINGER FOOD - JESSYS FRIED PRAWN CRACKLINGS - PARTY FOOD
This FINGER FOOD - Jessys Fried Prawn Crackling - Party Food is again one of my personal recipe and it is best eaten warm when it is crispy and crackling. The salsa sauce is just something additional to the Fried Prawn Crackling if you need something to dip with it but it taste wonderful as it is.
The Fried Prawn Crackling is simple and easy to make for a light bite as party finger food.
Here is the English recipe:
For my Salsa sauce:
You need 90gm fresh tomatoes , 75gm cucumber skin removed, 30gm green paprika, 30gm onions all cut into small cubes, 5 slices of jalapeño from bottle and 2 tsp white part of spring onions finely chopped, add all ingredients into blender and blend it into a rough blended texture.
To taste add a little white pepper, 1 tbsp balsamic vinegar and a little salt sugar to taste and a little olive oil and set aside.
For preparing the Fried Prawn Cracklings:
You need
6 pieces of fresh gambas(prawns) it would be better to use 2/3 tbsp dried shrimps soaked to soften then pounded into fine texture.
and add to that 1/4tsp pepper and 1 tsp salt, 2 tbsp cornstarch,
1 tsp rice wine or sherry . Place all the ingredients including the prawns or pounded dried shrimps and blend together to a fine paste. Then add further 1 tsp finely chopped white part of the scallion, 1 to 2 tsp finely chopped red chillie(depending how spicy you like) salt and sugar to taste and a few drops of sesame oil.
Combine all the ingredients , stir and mix well.
You need about 15 pieces of small square Spring Roll Skin, can be bought in all Asian Shops.
Separate the Spring Roll Skin into pieces. Take one piece, place it flat, spread about 2 tsp or less of the prawn paste and spread it on one half side of the Spring Roll Skin and fold the unspread half the square to cover the spread half and press to form a thinly filled rectangular shape. Do not fill too much of the filling or the Crackling will not be crispy. Spread as little as possible.
Fry the ready Crackling in hot oil till really crispy and golden brown.
Becareful not to burn the pastry. Remove and place it over a kitchen tissue to drip excess oil.
Best served immediately when it is fresh and crispy and crackling.
