Ecuadorian Families Enjoy a Day at Parque La Carolina, Quito Ecuador
Parque la Carolina is a huge park right in the center of Quito. We always go there ever time we visit Quito. We enjoyed a day at Parque La Carolina in Quito Ecuador. There were thousands of Ecuadorian families playing, picnicking and enjoying a Sunday off. The day had a feel of a carnival, with cotton candy, paddle boats and fried foods. We are sharing this video, to give other Gringos a glimpse into family life in Ecuador.

Ecuador is one of the most diverse countries in the world though it's comparably tiny. Beside the Galapagos Islands (which is the #1 tourist destination in Ecuador) the country has a lot more to offer, therefore I focussed on La Sierra in this video which is a paradise for landscape lovers and outdoor adventurers.
Another reason to visit the Andean region is that you have the chance to dive into the local culture and get a real feeling of Ecuador. The places to see in Ecuador I focussed on in this short video are the result of my own travels along the center from north to south and are easily doable in 2 weeks time.

The People's Struggle: The Story of a Neighbourhood in Quito, Ecuador
Lucha de los Pobres ('Struggle of the Poor') is a housing cooperative and neighbourhood in Southwestern Quito in Ecuador. In this documentary I interview Rodriguez Gualotuña, a community leader in Lucha de los Pobres, to explore the story of how this indigenous community was able to self organize and how this unique settlement and housing cooperative was transformed into a thriving neighbourhood of Quito.
In this case, the process of homegrown incremental housing development was a means to the self-determination of marginalized communities.

What should you eat in Ecuador? How about Popcorn as a Side Dish? Grubs in the Amazon? Yes there are some interesting foods in Ecuador and here are our five favorite Ecuadorian dishes you should eat when you visit Ecuador.
The Food in Ecuador:
1. The Soups: Secos (Stews), Sopa (Soup) are all quite tasty. The best is Locro de Papas a creamy potato soup found throughout Ecuador. Caldo de Gallina (Chicken soup) is also a winner.
2. The Pigs: Hornado, Fritada or just simple guinea pig (guy) are all foods you will enjoy while traveling Ecuador.
3. Seafood: Ceviche, Corvina, Trout, there are a lot of great seafood and fish dishes in Ecuador to enjoy.
4. The Treats: The snacks you will find throughout Ecuador come in three typical varieties, corn based, banana based, or

BU Abroad: Ecuador Immersion
Bailey spent last spring in the Quito Language and Liberal Arts Program taking courses and living with a host family in Ecuadors capital. Her experience went far beyond the typical semester abroad, deepening into an all-encompassing immersion. She took liberal arts classes, taught in Spanish at Universidad San Francisco de Quito, hung with Ecuadorian friends on the weekends, tutored English to native Kichwa speakers, and forged a special bond with her host family.

Moving to Quito Ecuador in Suitcases
Moving as an expat to Ecuador can be challenging in suitcases. Shipping and taxes are very high to Ecuador so our family has chosen to move in pieces by suitcases by airplane. I hope some of these tips help you with an international move abroad. We are a family of 4 so at this time we get 2 bags free most times of the year. (This excludes peak holiday and summer seasons where passengers are limited to 1 free checked bag) Baggage regulations change often so I can't guarantee fees or number of bags.
