Best US Cheesemakers Compete in Wisconsin
(7 Mar 2017) The number of cheeses, yogurts and butters competing at this year's U.S. Championship Cheese Contest is at an all-time high.
The contest's organizer, Wisconsin Cheese Makers Association, says that's because cheese makers are seeing what a contest win does for sales.
Case in point: Wisconsin cheesemaker Emmi Roth USA won last year's world championships with their Grand Cru Surchoix.
Since then they've increased production at their Monroe plant by 280 percent. It takes nine to 11 hours to make and then sits on wood planks in their cellar for nine months.
There were over 2,300 entries for the contest this year, which starts Tuesday in Green Bay.
In 2015, the last time the national contest was held, there were nearly 1,900 entries.
The winners will be announced Thursday.
Wisconsin has the most entries from any states, but more than half are coming from 32 other states.
There will also be 25 first-time competitors, including Daniel Posselt from Wisconsin-based Kickaas Cheese.
He says he entered to get feedback from the judges on his brie cheese, his first entry ever to a contest.

choosing their local beers over more mass-produced brands in Wisconsin.
VetsOnCall - Where this pizza cheese comes from
At Merry Water Farms in Wisconsin, the milk from their 1,300 cows is delivered to Grande Cheese, combined with milk from other local farms and made into mozzarella cheese for pizza stores all over the country. Vets On Call follows Dr. Tom Strause on his weekly appointment at the farm, checking the health of animals in the herd and ultrasounding cows to check for pregnancies.
My role is to ensure the animals are comfortable and happy, he says. His client is the York family. Keith York's great-great-great grandfather started farming in 1851, making Keith a sixth-generation family farmer. We average 1,500 calves born per year, Keith says as he assists a mom giving birth. No matter how many you see, it's always a miracle.
I'm proud of our industry, says Dr. Strause, We work hard to put a quality product on the plate. We have the safest food supply in the US than anywhere in the world. We take great pride in what we do.
At the end of the day Dr. Strause returns to his own family farm, 106 acres that he manages with his wife and four kids. It's a responsibility I want my kids to learn, he explains. Me and my wife were raised on farms, we learned valuable life lessons. We want to teach our kids the same.
Veterinarians On Call is presented by Zoetis. The series features vets on the job and their clients across the U.S. who volunteered to be filmed.

It was Sr. M.E. who told me the story gives the song its soul. The Ellsworth Cheese Curd Jingle is recorded by Colleen Raye, Reed Grimm and Norton Lawellin (The original version was recorded in 2007 by Colleen Raye and Norton Lawellin).
It was the Pierce County Fair 2005. My brother Andy was working in the round barn at the fair and he gave me a pamphlet with a cow on the cover. I could tell it was all about milk. When I got home I put the pamphlet on the misc. pile. It was February 2006 when going through this pile of stuff, that I picked up the pamphlet and immediately started singing the jingle. Enjoy.

Plymouth company aims to take cheese curd to next level
If you order deep-fried cheese curds at St. Paul Saints or Minnesota Wild games, you might not realize it's a Plymouth company behind the stringy goodness.
Curdtown is winning over fans in Minnesota while also introducing cheese curds to audiences across the country. And the goal is simple at the Plymouth headquarters.
We're trying to elevate the curd to another level here, said Pete Moroz, a Curdtown curdsman, also known as national accounts manager.
Sure, the Midwest knows all about the deep-fried goodness of cheese curds, but this small company is out to spread the word about the curd throughout the country.
We've really found a great niche in some of the areas that snowbirds go because people want their curds even in the winter, said Monica Rask, director of operations at Curdtown.
Curdtown was started just five years ago by a Minnesota restaurant owner who grew up in Wisconsin and believed people shouldn't have to wait for the Minnesota State Fair each year to get a good cheese curd.
It's two-thirds cheese, all natural white cheddar, and then it's covered in a really crispy, light panko breading, said Rask about the Curdtown curds.
Cheese from the Ellsworth Cooperative Creamery in Wisconsin is a key ingredient. Curdtown offers plain curds or a Cajun seasoned version.
If you look at some of our competitors, they will season the curd after the breading process whereas we will actually season the naked curd first, said Moroz.
Curdtown has momentum on their side. This year, their curds were sold at Los Angeles Dodgers games as well as at hometown venues such as Minnesota Wild and St. Paul Saints games. And local restaurants, such as Broadway Pizza and the Sample Room are finding creative ways to serve the irresistible Midwest staple.
As Curdtown strives to become a national name, this Plymouth business is traveling the country with an offer few can refuse.
Sampling out a cheese curd is a pretty easy thing to do, said Rask.
Curdtown is on track to sell 250,000 pounds of cheese curds this year with a goal of hitting one million pounds by 2018.
