When British travellers look overseas for a culinary experience, the first port of call would usually be across the channel to France. However, more and more food fans are finding that the journey across the Irish Sea leaves their stomach just as satisfied.
Ireland has a growing reputation when it comes to cooking and this is reflected in the dishes found in restaurants and pubs from north to south. Not only are traditional favourites enjoying something of a revival, Irish cooking also has a strong modern aspect, as chefs from around the world bring their own methods to the Emerald Isle.
There are also other great ways of mixing food in with a travel experience. Those who like the city life can taste the gastronomic heart of Cork and Galway thanks to two new food trails. Following the success of the first tasting trail in Dublin, the team at Fabulous Food Trails (fabulousfoodtrails.ie) have devised the two new city walks to take visitors off the beaten tourist track and into the local food halls, fruit and flower stalls, cheesemongers, fishmongers, butchers and bakers.
Wannabe chefs can book in for class at the new cookery school, The Kitchen in the Castle (thekitcheninthecastle.com), located in the old Georgian kitchen at Howth Castle, just outside of Dublin. Classes range in length from a half a day to a full week and whilst the majority of courses are for adults, they also cater for children. Participants cook and then eat together around the kitchen table and the courses enable everyone from the complete beginner to the accomplished home cook, to gain inspiration and learn new skills.

Food on the Edge - A taste of Ireland’s unique food culture
Some of the top chefs from across the world came to Galway last year to speak at Food on the Edge 2015 - a two day symposium for chefs and food enthusiasts. Among them were Michelin Star Chef Tom Aikens, ‘Tom Aikens’ London , Phil Wood, ‘Rockpool on George’, Sydney, Brandon Baltzley ‘Ribelle’ Boston, Alessandro Porcelli ‘Cook it Raw’ Italy and John & Connie De Sausa ‘Charcut’ Calgary - many of whom have never been to Ireland before.
The speakers were chosen for their passion, drive and ability to inspire chefs around the world. While they were here they shared their journey with us along part of Ireland’s Wild Atlantic Way where they had the opportunity to meet with local producers and see for themselves how Ireland’s landscape and local food producers are working hand in glove with local chefs and restaurants to produce a unique and compelling food experience for visitors.

Neven's Irish Food Trails 2018 Episode 4 Part 1
This week’s Food Trail begins in the spectacular Comeragh Mountains, Co. Waterford where Neven meets Willie Drohan of Comeragh Mountain Lamb. Neven heads out into the mountains to see the herd of Scotch Blackface sheep roaming, and learns how living outdoors in the mountains gives the lamb a unique sweet flavour. But just how many cuts of meat can you get from one lamb? Neven heads to Forest Avenue Restaurant in Dublin where Head Chef John Wyer guides him through the butchering process, and shows how even the less popular cuts can be used to create delicious recipes.
Back down in Co. Waterford, Neven calls in at Barron’s Bakery where the traditional Waterford Blaa has been made since 1887. He meets baker Esther Barron, a fourth-generation baker from the Barron family and sees how Blaas are hand made and baked in original 19th century Scotch fired ovens. Neven is also keen to hear how the Waterford Blaa was awarded prestigious Protected Geographical Indicator status, one of only five food products in Ireland to achieve this.
Next, it’s time to cook the Comeragh Mountain Lamb butchered earlier by John Wyer. John shows Neven two simple yet mouth-watering recipes for Rack and Shoulder of lamb.
Back home in Co. Cavan Neven creates a recipe using another Irish PGI product: Clare Island Salmon. His dish is Clare Island Salmon with Prawns and Saffron Fregola.
