In 1977 Leon Downey, his wife Joan and their two small daughters moved to a derelict farm in Pembrokeshire. He bought a book, a cow and a bucket and made his first cheese in the farmhouse kitchen. From those humble beginnings the family enterprise has grown to a farm shop selling award winning unpasteurized hard cheese. In the video Leon talks about the development of Llangloffan cheesemaking from 1977 to 2000 and guides you in detail through the cheese making process in his own style. The music while the curd is being stirred is Beethoven's Minute in G, composed in 1795. Milford Haven Waterway (Welsh: Dyfrffordd Aberdaugleddau) is a natural harbour in Pembrokeshire, West Wales. The Haven is a ria or drowned valley flooded at the end of the last Ice Age[1][2] formed by the Pembroke River and the Daugleddau estuary, and winds west to the sea. As one of the deepest natural harbours in the world, it is a busy shipping channel, trafficked by ferries from Pembroke Dock to Ireland, oil tankers and pleasure craft. Admiral Horatio Nelson, visiting the harbour with the Hamiltons, described it as the next best natural harbour to Trincomalee in Sri Lanka (then Ceylon) and the finest port in Christendom.[3]

We kept saying, well, nothing will be more dangerous, until an explosion happened at my husband's office and that made us make the decision to not risk our kids' lives and we left there.

I noticed that the milk here in the UK is really great. Maybe the local people cannot feel that because they grown up with it. But coming from the Middle East, I noticed how wonderful is the milk.

The result was really great. I didn't (have) success from day one. It took me about six, seven months to have a nice cheese.

I was brave and I went to the markets. I start to participate in food festivals. Wherever there is any networking events I go there, I talk to people and I give people to taste. People who taste the cheese they love it and they encouraged me.

I loved my country, my home country. I loved Damascus. And I look at this war, it's a new chance to make something new in life. Maybe if I were now in Damascus I wouldn't think of making a cheese factory.

I am in very good relation with the other cheese makers in the UK. They don't look at me as a competitor, they look at me as someone who is completing the cheese family in the UK.

Yorkshire has a long history of cheese-making - but while Wensleydale and Teesdale cheeses might give the region renown, squeaky semi-hard cheeses consumed in the Middle East are rare.
But now one local firm is becoming known for producing just that - despite its founder being a cheesemaking novice when she fled war-torn Syria.

If you fortunate enough to be lactose tolerant, you've had the pleasure of indulging in cheese. Let's dig deeper into into origins.
The history of cheese dates back to ancient times.
The most common story is that an Arabian merchant discovered cheese accidentally while venturing across the desert about 7,000 years ago. The traveler had stored milk in a pouch which was made from an animal's stomach.
The pouch lining along with the heat caused the milk to separate into a hardened, curd like substance. He sampled the concoction and the concept of cheese was born. Thank goodness he wasn't lactose intolerant.
Locals learned to strain and salt the cheese curds to allow for better preservation.
The Romans became well known for their cheese practices and soon passed on that experience.
While the actual dates of cheese making is blurry to this day, some milestones have been pin pointed.
Milk-curdling vessels dating back to roughly 5,000 B.C., some of which have been found on the shores of a lake in Switzerland. The tombs of Egyptian pharaohs are said to contain traces of what many people believe to be cheese.
Homemade varieties of cheese appeared in the 13th century. French villages would combine their milk and experiment with cheese.
The farm based practices of cheese making continued up until 1815 when the first cheese factory was opened in Switzerland. Then in 1851, the first factory for cheese was born in the United States.
The demand for processed cheese boomed, especially after the World War II era and now we are inundated with hundreds of varieties of cheese at supermarkets with most of their names incredibly hard to pronounce.
So what say you - cheese is yuck or yum?
