While attending the 2012 Niagara Wine Festival we visited Flat Rock Cellars in Jordan, Ontario. Enjoyed a couple of glasses of wine with Ed Madronich, Proprietor. The topic of Ontario wines and how they have evolved over the 30 past years was discussed. Do you think Ontario wines are expensive? Ed shared his views... what do you think?
About Flat Rock
We are here at Flat Rock for two reasons. First, we're here to make great wine. Second, we're here to offer you a truly personal wine experience. Everything we do comes from these two basic principles.

Founded in 1999 on a spectacular piece of the Niagara Escarpment known as the Jordan Bench -- Flat Rock is perched on a gently rolling slope studded with vines. The winery building is a quirky, glass encased, hexagonal masterpiece that's distinctive and fun. From here you can enjoy our crowning glory, the breathtaking views of the Peninsula and across Lake Ontario to Toronto.
Look closely at our logo and you'll see the image of a woman holding a basket of grapes. To us, she is the embodiment of winemaking. Our predominant colour is red because it is not only the colour of wine, but also of passion; and we are nothing if not passionate about winemaking! The rocks that are the geological foundation of the winery and are found throughout the property are the roots of our Flat Rock Cellars name.

With varietals such as Cab franc, Pinot noir, Cab, Merlot, Syrah, Chardonnay, Riesling and many others, there is enough to please everyone. I was impressed by the quality of the wines I found there, especially the Rieslings, one of which, the 2009 Cave Springs Dolomite Rielsing I strongly recommend with raclette.

How To Open a Bottle Of Wine

Opening a bottle of wine isn't hard—which is why not being able to accomplish it is particularly embarrassing. Don't worry—with a little practice you'll be liberating the fruit of the vine in a few fluid motions.
Step 1: Cut metallic foil
Cut the metallic foil or plastic wrapper covering the cork, using the bottle's lower lip as a guide. Press the blade against the foil wrapper, and score all the way around the bottle's circumference.
Tip
Be sure to remove the foil from the lip of the bottle—it can ruin the taste if the wine comes in contact with it when poured.
Step 2: Place bottle upright
Place the bottle upright on a flat surface, or hold it between your knees slightly angled toward you at a comfortable height.
Step 3: Screw into cork
Dig the tip of the corkscrew into the middle of the cork, keeping it as straight as possible. With an even, downward pressure, rotate the screw clockwise until it disappears almost entirely into the cork.
Step 4: Grip with lever
Pivot the metal lever of the corkscrew so that the forked indentation grips the edge of the bottle's mouth and the corkscrew's handle is pointed down.
Step 5: Pull up
Holding the bottle firmly in place, grasp the handle and pull it straight up. The cork should come completely out.
Tip
Specialty wine openers, like the wing- or lever-style kind, require less effort to remove the cork. Just insert or clamp and then push the wings or lever down.
Step 6: Wipe the rim
Wipe the rim of the bottle with a clean, slightly damp napkin to remove any cork dust or residue before pouring. Salut!

This is by far my favorite time of year in wine country. Vineyards and wineries are abuzz with activity (seemingly around the clock) as a new vintage comes to fruition. The other morning at sunrise, myself and Nova Perrill, our Assistant Winemaker, took a ride out to Lewis Vineyard about 3 miles north of Dry Creek Vineyard. Lewis Vineyard is a 75 year-old Old Vine vineyard nestled in the Eastern hillside of the Dry Creek Valley. As I filmed and walked the vineyard, I was struck -- not only by the natural beauty and surroundings -- but also by how hard the vineyard crew worked. Literally running through the vineyard picking grapes, these incredible harvest workers have my full respect and admiration. I think I'd be able to keep that pace for 10 minutes before falling flat on my face!
