Tasting the delights of Copenhagen's high end menus
If the way to a man's heart is through his stomach then a trip to Copenhagen is the perfect romantic getaway for Valentine's.
Scampi (langoustine tails) served with juniper bushes, Danish style steak tartar and floderbollers, a Danish type marshmallow dipped in chocolate, are all on the menu in the Danish capital.
Pickled herring, open sandwiches and pastries is probably what comes to mind for most people when thinking about Danish cooking. It anything comes to mind at all.
Not long ago Denmark, and its capital Copenhagen, was a blank spot on the worldwide food map.
Restaurants were producing poorly imitated dishes from the gastronomically powerhouses of the day, France and Italy, and most Danes seemed content with a simple smorrebrod, the traditional open sandwich, or a polse, the traditional Danish sausage.
This has all changed.
The Danish capital now boosts 15 Michelin stars, far more than any other city in Scandinavia and on par with much larger European cities like Berlin and Madrid.
Maria Beisheim is a food historian and also runs the Copenhagen food tours.
She has seen a huge increase in interest in Danish cooking over the last few years.
Since starting the Copenhagen food tour in March 2012 some four thousand people have taken part in the tours around the food hot spots of the Danish capital and she says the interest is growing.
The Nordic food scene really is getting very famous. It has really put, especially Denmark, on the map as some of the great food locations in the world, she says.
The turning point for Danish cuisine came in 2004 when chefs Claus Meyer and Rene Redzepi took an initiative to write the manifesto of the New Nordic Kitchen.
In the manifesto of the New Nordic Kitchen chefs are urged to use local produce, work with the seasons and produce food that suits the particular Nordic climate and landscape.
The manifesto also states that chefs should express the purity, freshness, simplicity and ethics that we wish to associate with our region.
The manifesto caught on and 2010, Noma, a Copenhagen restaurant, was voted the best restaurant in the world.
And in 2011 a Copenhagen-based chef, Rasmus Kofoed, won the Bocuse d'Ore, also know as the world championship for chefs.
At Aamans in central Copenhagen the Nordic Food Manifesto is followed, at least to a certain degree.
Some ingredients, such as lemons, are actually imported, but all meat and vegetables are local.
When head-chef Magnus Pettersson prepares their take on the classical duck with red cabbage he uses local duck, local kale and local brussels sprouts.
He finishes the dish off by sprinkling a bit of ash made out of hay over the dish to give it some barbeque flavour.
For him it is not a matter of dogmatic idealism to use local produce, he just thinks it is easier and tastes better.
Why should I order something that travelled I don't know how long on an airplane when I can get it from the guy that I can call up and talk to. You know, and who knows what I want and what I don't want, he says.
Over in the deli section of Aamans traditional Danish smoorrebrod is served to the lunch guests.
Smoorrebrod has been a staple of the Danish diet since the industrial revolution but at Aamans they give the open sandwiches a second coming.
Each sandwich is composed in a different way, using meats, pickled fish, vegetables and fruits - all locally sourced.
According to Adam Aaman, the owner of Aaman's and somewhat of a celebrity chef in Denmark, the northern climate means that the locally grown produce actually has a more intense flavour.
Over at the Host restaurant head-chef Jonas Christensen is giving traditional Danish recipes his own twist.
The stunning looking dessert is topped off with a small birch branch.
