Everyone has a reason why they get into winemaking. Beaver Creek Vineyards' Winemaker Martin Pohl says, It just came to me. When he came to the United States he wanted to start his own business, to create something. As a server in San Francisco, he learned about winemaking. He became interested in reading books on the farming aspects and winemaking aspects of the business. Then while opening a wine bar in San Francisco he had the chance to buy good wines and travel to Napa and Sonoma to visit the vineyards. This led to making wine - a labor of love.
Beaver Creek Winery takes a biodynamic approach to their vineyard management. Martin notes it starts with the lifestyle. He always wanted to drink clean wines, and lives the lifestyle - drink healthy, eat organically, exercise, meditation. It comes from the idea of treating the earth with respect, without poisoning the land.
In the vineyard, it is a stewardship of land. The management of the energy of the land is definitely the start. You bring back the balance and harmony of all the creatures. You see all the life thriving and happy.
Once he harvests the grapes, he uses a more authentic and original way to create wine. The native yeast from skin of the grapes evolve and do their wonder basically. That is why we have vintages. Every year the patterns of the weather are different and get showcased in those yeasts.
Martin explains that the crystals around the winery are healing creatures, healing beings. He puts them in the barrels and it enhances the wine - the healthiness, geometry, the longevity of the wine. He believes in consciousness and creating conscious wines.

Postcards: The Art of Minnesota Winemaking
Taste history in the making; 34 years of Minnesota wineries using cold hardy grapes. The people and the grapes are resilient against the freezing temperatures here!
