Four Pillars Distillery - Melbourne's Yarra Valley
Four Pillars was established with a focus on gin. But great gin doesn’t just make itself. Four Pillars recognised that their real focus would need to be on the craft of distilling. If they could elevate this area of expertise in Australia, and bring a modern Australian sensibility to the process, then maybe they could make a gin worth shouting about.
In October 2015 they moved into their new home, a gorgeous old timber yard on the main drag of Healesville, about an hour's drive from the CBD of Melbourne. The Four Pillars Distillery houses their original copper still Wilma and her two new siblings, Jude and Eileen. All three of their stills are manufactured by Carl in Germany and deliver unbelievable purity of spirit, drawing extraordinary botanical flavour from the combination of rare, native and traditional botanicals we use.
Four Pillars currently have six gins in our range (and counting) and two marmalades that are made using the fresh organic oranges that are steamed during the distallation process. Everything they do is designed to elevate the craft of distilling in Australia, and we hope you agree we're on the right path. The judges at prestigious international competitions must think so, as since the launch in 2013 their three main variants have won gold medals at major competitions around the world.
But don't just take our word for it! Come and see and taste it all for yourself. Our distillery also houses a fully functioning tasting room and a bar serving G&T paddles, build-your own Negronis, Scotty's Ginger Mules, beer, wine, tea, coffee and really good nuts and olives. There are also tours, masterclasses, and all manner of fun.

I'm chatting with gin expert Elton from Four Pillars in Healsville, Australia. Elton is a true gin lover and sharer of gin wisdom. It was great to have the opportunity to learn a little more about gin from him at one of Australia’s most exciting distilleries. In collaboration with Four Pillars Gin Distillery, Yarra Valley Berkshires, Oakwood Smallgoods and Gary’s Meats this Christmas we have brought you something truly different in best kind of way, the GINPIG Christmas Ham.
Beginning at Four Pillars Gin in Healesville the spent gin botanicals are added to the Berkshire pigs feed which infuses the pork with a combined flavour of juniper, coriander, cardamom, star anise, lavender, lemon myrtle and occasionally some turmeric and ginger.
At Yarra Valley Berkshires the pigs are bred and raised entirely free range and it is in their humble opinion, that the best pork you have to have the best breed of pig, give them a beautiful stress-free life with an abundance of healthy food and exercise.
Gary’s Meats has a passing knowledge of four generations and his children will make it the fifth. Here the Berkshire pork is prepared and sold exclusively from the store. What butchering is to us if finding a way to tempt everyone into experiencing what is unknown to us.
The final step is Oakwood where the craft of smallgoods making is returning. Traditional time-honoured techniques and carefully sourced ingredients come together to create high quality artisan smallgoods. Here the hams are cooked and smoked

Breweries, Wineries, And Distilleries | A Weekend In Healesville, Victoria, AUSTRALIA | June 2019
Hey guys, we are going to be doing some travel/food vlogs, especially during the offseason and on our travels, and here is the first one of those as we spent the Queen's Birthday Long Weekend in Healesville/Marysville, North East of Melbourne, Australia.
We visited the Four Pillars Gin Distillery, Watt's River Brewing, Innocent Bystander Winery, and Giant Steps Winery during our time there.
This is a first go at doing a travel vlog and will be providing more during our upcoming trip to the USA. Big thanks to Sali for filming and especially for editing this video.
