Simon McGoram is the brainchild behind Bar Tours -- Sydney's first 'small bar' tour business.
Finding his small beginnings pulling pints in a London pub for a few pounds an hour, Simon only started to take bar craft seriously after winning a world draft pulling competition in Belgium. More than a decade later and he's regarded as one of the few who can out geek any bartender whilst still holding all the charm of those humble beginnings. Simon's story to writer and contributor of drinks and columns to national magazines continues while holding down his bar job. He also hosts group tours to Sydney's hidden cocktail cultural ornaments.
Improved Japanese Cocktail
45ml Remy Martin VSOP
20ml Midori Melon Liqueur
1 barspoon 1883 Ginger syrup
2 dashes Bitter Truth Jerry Thomas Own Decanter bitters
Stir down and serve up with a grapefruit twist
Hebridean Sling
45ml Bowmore Legend
15ml Green Chartreuse
20ml fresh lemon juice
20ml 1883 Passionfruit syrup
Small handful of fresh mint
Dash of soda
Add all ingredients except soda into a shaker. Shake briskly and double strain into an ice filled highball glass. Top with a dash of soda and garnish with a mint sprig and a lemon wedge.
Porteno & Gardel's Bar: Smoked kingfish tartare with avocado puree & crispy tortila
Food writer Michael Shafran hosts Shaken & Stirred, which pairs signature restaurant dishes with inspired cocktails. In this episode, Michael joins chef Elvis Abrahanowicz and Ben Milgate of Sydney's Porteno, who demonstrate how to prepare a favourite from their upstairs Gardel's Bar: smoked kingfrish tartare with avocado puree & crispy tortilla. Then it's off to the bar to see mixologist Simon McGoram whip up his El Nino cocktail, a sophisticate take on a classic margarita.
NSW Suntory Cup Final 2012
Australian Club Suntory members were tasked back in June with creating an original cocktail using a minimum of 45mls from Suntory Australia's ever-diverse portfolio and submitting it on our website. Judges then blind tasted the over 550 individual entries, assessing the appearance, taste and aroma, without knowledge of the entrant's name or place of work, making for a truly level playing field where the best-tasting drinks are those chosen.
In a unique new twist on the competition this year, finalists were challenged with a night behind the stick, each making beverages of all descriptions for the invited Club Suntory members and guests, including of course their original cocktail entry. On August 20th Sydney's The Standard, was transformed for the night, with custom-built bars taking over the dance floor and the chic Midori chandelier imposingly hanging from the ceiling. With the stage set and the tunes pumping, the finalists got down to bringing their best to bear.
Judges were of course in attendance to scrutinize the 5 finalists, assessing each on technical skills, personality, passion, knowledge, customer service, cleanliness and consistency: the complete bartending package -- all in a busy bar environment! The success of the new format was evident as the behind-bar antics ensued, competitors both working hard and having fun keeping up with the hordes of thirsty supporters eager to sample their original creations and Suntory signature cocktails.
Local DJs Control Alt Delicious got the crowd pumped with some quality dancefloor beats, before AJAX (on tour around the country with the Suntory Cup) brought home the night with a smashing set.
After conferring in secret, the judges returned to announce to the packed house Taka Shino of Eau De Vie as the NSW Suntory Cup State Final winner with his 'Emerald Hill', scoring for himself not only a shot at the top prize but an exclusive Club Suntory bar kit. Simon McGoram of Gardel's Bar @ Porteño placed a very close second with 'Mast's Magical Elixir' and Kevin Peters of LoFi's 'Ruby Red Runner' was awarded 3rd place!

An afternoon concert of world-class Tango music with Bandoneonist Nestor Vaz and Pianist/Bandoneonist Emily-Rose Šárkova.
Emily-Rose is the Artistic Director of Australia’s premiere tango quintet, Tángalo, and she has put together a fantastic concert program with Nestor Vaz: intimate duo concert pieces.
Nestor Vaz (bio)
Nestor Vaz, from Montivideo, Uruguay and is a bandoneonist of considerable repute. Born in 1948, Nestor has performed on the bandoneon since the age of 14, beginning in orchestras from Uruguay. With many years of collaborations under his belt (as well as a degree in geology!), Nester has dedicated a huge part of his life to the music from the Rio de La Plata region of Argentina and Uruguay and also to the music of the great Astor Piazzolla. His activities as bandoneonist, musical director and arranger have taken him on tour to a vast number of international locations: Spain, Germany, France, Mexico, Argentina, Portugal, Canada, the Untited States and even Finland.
When he is not playing with ensembles such as Quinteto Imperial, Tango por dos and Tango 4, you may find him being a soloist in the Montevideo Municipal Symphonic Orchestra or first bandoneonist in the tango galas of Montevideo Philharmonic Orchestra. As well as being declared ‘the most illustrious citizen of the Municpality of Florida, Urugay’, he has also recently released to great acclaim a new album of original compositions entitled ‘Tango Suites’ and finished a season of ‘Hommage a Astor Piazzolla’ in Montreal, Canada.
Emily-Rose Šárkova (bio)
Emily-Rose is one of Australia’s most dynamic and versatile young musicians and tango dancers. A graduate in classical piano from the Sydney Conservatorium of Music, Emily-Rose’s is also skilled in Piano accordion, Voice, composition and has recently added the argentine tango instrument, Bandoneón, to her multi-instrumentalist palette.
During her formal training she was fortunate enough to undertake masterclasses in France and study in Germany for a year on scholarship. Since graduating in 2010 she has continued as a founding member of enchanting world music group Chaika, established highly successful Tango Quintet ‘Tángalo’ and formed a dynamic classical duo with soprano Susie Bishop. It has been said about Tángalo: “Chamber music on steroids: 4 ½ out of 5 stars.” – John Shand, Sydney Morning Herald, 2015. Emily-Rose has been invited to perform with Aria award winning group ‘Monsieur Camembert’, the Australian Brandenburg Orchestra and with renowned early music ensemble ‘The Marais Project’. Emily-Rose has toured internationally to Poland with the Klezmer Divas and in 2014 she undertook a project with Tángalo in conjunction with the Australian Council JUMP mentorship grant. This involved study and performance in Buenos Aires, Argentina and an extensive Australian tour with Latin Grammy nominated duo ‘Duo Ramirez-Satorre’.
Emily-Rose is also a skilled Argentine tango dancer and runs Sydney Tango House with her partner, Refik Unluer. She has studied in depth with such maestros as Moira Castellano, Gaston Torelli, Eugenia Parilla and Mariana Dragone.
Emily-Rose’s travels and diverse experiences flavour all aspects of her performance and teaching, making her open minded, creative and highly skilled as both a performer & teacher.

Following successful events already hosted in New York and London, Cambalache showcased Aregentine wines, winemakers and representatives from more than 25 Argentinian wineries in Pier One's Sydney Hotel, Water Room.
Drinks Network captured this event on video for LatinPR.
Andrew Maidment, head of Europe and Asia at Wines of Argentina, said Cambalache is set to give guests the chance to not only sample the wines but also get a taste for the character and warmth of Argentina.
The response we've had from wineries and local importers to this event has been incredible – finally making what will be one of the largest tastings of Argentine wine anywhere in the world in 2015, said Maidment.
Wine isn't just about slurping and spitting, it's about getting a taste for the culture of the country and Cambalache will bring a little piece of Argentina to Sydney, with an event that fully reflects the vibrancy and energy present in our wine scene today.
Cambalache – One Day in Argentina was held at Pier One Sydney Harbour in Walsh Bay on Monday 16 November 2015.
The event featured new wineries to the Australian market along with representatives from local importers, Argentine culture will be at its finest including exclusive tastings of more than 200 wines, a traditional 'Asado' lunch, live music, tango dancers and master classes.
