Wonderful flat European oysters are served in this unique place in Denmark. The oyster bar is located in the little city Glyngøre by the fjord called Limfjorden in the Northern part of Denmark. Here I meet Svend Bonde who works with shellfish. He shows me and some friends around and tells us about the flat European oyster that has lived wildly in these waters for around 7000 years. Besides the flat oyster you also find invasive oyster species from the southern part of the west coast. The oysters are being fished is a sustainable way and has MSC certification. The season for Danish oysters is about 10 weeks in the fall and 4-6 weeks in the springtime. The oysters are stored in basins with running clean water from Limfjorden. You can buy the oysters here or have them in the oyster bar. In the bar you can enjoy oysters with the local brewed beer. It is a Royal Stout brewed with oyster shells and oyster meat from the brewery FUR. In the ceiling of the oyster bar the artist Bjørn Nørgaard has created a sculpture of oyster shells called “The Oyster Mother”.
