Prosecco bubble shows no sign of bursting

Global sales of prosecco are booming, and champagne, the original bubbly, is taking note.
Prosecco - the smooth, drinkable sparkling of Italy - has become the best-selling sparkling wine in the world, and experts say it is eroding the more casual corner of champagne's market.

Experts say it is eroding the market share of champagne, the French wine synonymous with celebrations but with a heftier price tag.
Armando Serena, President of Asolo Montello Wine Consortium says: There was a great growth of prosecco which has surpassed champagne in terms of numbers, but obviously not in value. In any case, they are two wines that have quite different characteristics because champagne has a different structure than ours and other kinds of fragrances. Prosecco is simplicity, freshness, aroma and easiness to drink.
The Italian wine's production eclipsed champagne's five years ago and is now 75 percent higher at 544 million bottles, about two-thirds of which is exported.
However champagne still claims the revenues crown, cashing in a record 4.9 billion euros ($5.6 billion) last year on the sale of 307 million bottles, 2.8 billion euros of that in exports.
But Prosecco's bubble shows no sign of bursting, continuing its steep increase: exports this year are trending up 16 percent over last year's 804 million-euro ($913 million) high.
Adding insult to injury, sales are surging 40 percent in champagne's home country, France, according to the Coldiretti lobby. And those figures don't reflect the seasonal Christmas sales bump of 20 percent.
Champagne expert Michael Edwards says the competition between champagne and Pprosecco is hard fought.
It's got better because it has to get better and there is a very good Dutch writer who I know very well and he says 'Champagne has never been better on the one hand, on the other hand it has never been more prone to danger than it is now.
Prosecco's growing popularity, and the proliferation of sparkling wines in general fuelled by younger drinkers, is forcing champagne makers to up their game.
The Italian bubbly's success is attributed to its profile as an anytime drink, making it popular in Great Britain, the United States and Germany, markets where champagne has long flourished.
Sebastiano Bonomo, export Manager for Giusti Wine says it is very accessible: It is a wine that gathers the interest of different generations, there is the young generation, that generation that want to drink a glass of wine without being an expert in wine. Prosecco is made with a single vine variety, which is produced every year and almost everyone has had a chance to try a glass of prosecco.
With an average production cost of 3.70 euros ($4.20) per bottle, a fraction of champagne's average of 10.24 euros ($11.63), prosecco can be purchased at a price that makes it easier to buy as an after-work drink or for a casual gathering, without pomp and circumstance.
The lower price is in part made possible by a simpler production method. It has two processes of fermentation, both in large tanks, whereas champagne's second fermentation period is done while the wine is bottled.
That requires storing the champagne bottles at an angle and turning them slightly every day by hand to help the fermentation - expensive manual labor when done over thousands of bottles.
