First he made some stellar beer. Then he invited his consumers in to watch his process at the brewery, bringing them behind the scenes every step of the way. By 1995, John’s beer had become so popular that he decided to open a larger brewery, along with a bottling plant to keep up with demand. Hi, I'm James Knott and this is your Better Beer Authority. Today, we are drinking a beer that I am excited to have on the show. Bourbon County Brand Stout from the Goose Island Beer Company in Chicago Illinois. Goose Island started as a brewpub in 1988. In 2011, their production brewery was sold to AB Inbev. They currently distribute to all 50 states.
Bourbon County Brand Stout was first brewed in 1992 to celebrate the brewery's 1000th batch of beer. This is America's first bourbon barrel aged stout and the recipe has held up well because it ranks 41st on Beeradvocate's Top Beers in the World list.
The 2012 version is 15% ABV and 60 IBUs. It is available in 4-packs of 12 oz bottles. This year Goose Island brewed 5 times more Bourbon County than last year, so it should be a little easier to find. The beer can be cellared for up to 5 years. There are two other variations available -- a coffee stout and a cherry rye version.
Drink it in a snifter for best results -- WARNING - this will make you look like a snob. Let the blind taste test begin.

When the first Goose Island Brewpub opened its doors in 1988, domestic, mass-produced beer was deeply ingrained in Midwestern culture. The craft beer industry was still in its infancy, with only a handful of brewpubs in existence in the Midwest. In his travels across Europe, beer-lover John Hall had enjoyed a distinctive local brew in each region he visited. Hall was convinced that Midwesterners could produce beers as good or better than those he'd tasted in his travels. Living on the shore of the largest system of fresh water on the planet Earth, in a city with rapidly evolving tastes -- John decided that his hometown, Chicago, would be the ideal place to do just that.
The key to building interest in craft beer, Hall decided, was to allow consumers to watch the brewing process -- while providing them with the then-novel experience of enjoying a wide variety of distinctive beers that had been produced on-site. Hall wanted to not only cater to his customers' tastes, but to challenge them as well. Goose Island's brewers set to work crafting a diverse selection of unique beers -- and on Friday, May 13, 1988 the Goose Island Brewpub was born.
It turned out that John was right; Chicagoans palates evolved rapidly once Goose Island's Brewpub opened its doors and introduced the city to distinctive craft beer. By 1995, the brewpub had become so popular that John Hall decided to open a larger brewery and bottling plant to keep up with demand. Finding still more room for growth, in 1999 Hall opened a second Goose Island Brewpub just a stone's throw away from historic Wrigley Field.
Today, Goose Island continues to brew an innovative selection of over 50 craft beers at the brewpub, the best of which are then bottled at our Fulton Street brewery. Goose Island beers are now enjoyed in all 50 states and Europe.

Like the digits suggest, it's a beer that's densely populated with flavor and loaded with character. We don't filter it, so none of its life and soul is stripped away. The first thing you notice is the hazy, cloudy appearance. That's how you know it's unfiltered. What hits you next is the spicy aroma of Cascade hops, followed by the crispy, fruity ale flavor delivered in a smooth, creamy body, the result of blending barley malt with torrified wheat. It's not like any other Goose Island Beer, but no less that you'd expect.

Goose Island Brewery is a brewery located in Chicago, Illinois, that began as a single brewpub known as Clybourn, which was opened in May 1988 by John Hall in Lincoln Park, Chicago, Illinois. The larger brewery (as we know it today) was opened in 1995, while the second brewpub, Wrigleyville, was opened in 1999. On March 28, 2011, Goose Island announced that it will sell its 58% stake in Fulton Street Brewery LLC (the legal name of Goose Island Brewing) to distribution partner Anheuser-Busch. The remaining 42% stake, owned by Craft Brewers Alliance LLC, is also to be purchased by Anheuser-Busch.
Goose Island produces several year-round and seasonal styles of craft beer, the best-known of which are 312 Urban Wheat Ale and Honker's Ale. Goose Island also offers Root Beer and various sodas including Orange Cream and Grape soda. The beers are distributed across the United States and the United Kingdom, after a large stake of the company was sold to Widmer Brothers Brewery in 2006, and the brewery was able to expand into different markets. The brewer began distributing Matilda west of the Rockies in March 2010. Goose Island outsources the production of some of its beers. Honker's Ale and IPA sold on the east coast is now brewed under contract in New Hampshire.
In November 2008, Goose Island made news when its small batch of Bourbon County Stout became available for the first time in Western states. That Russian Imperial Stout is cask-conditioned in oak Bourbon barrels, which may include Elijah Craig 18 Year Old Single barrel bourbon, the oldest Single Barrel Bourbon in the world at 18 years . . . which loses nearly 2/3 of the Bourbon barrels contents into Angel's share. See Brewing methods and Mash ingredient. Another source states that they are 25-year-old Pappy Van Winkle bourbon barrels.
Greg Hall will step down as brewmaster with the AB InBev purchase.
Goose Island has two brewpubs which both serve brunch, lunch, and dinner. The Clybourn location has specialty food items, such as duck, rabbit, and truffle aioli served with your French fries. They serve anything from a burger and fries to homemade sausages and PEI Mussels. The Wrigleyville location serves mostly pub food like burgers and chicken. The brewpubs are supplied by local farmers who raise natural meats, many of the animals are fed the same wheat and grain that was previously used to make the beer, as one sign reads Beer Fed Pork Served Here.
The Goose Island brewpubs were not a part of the sale of Goose Island Beer Company to Anheuser Busch.
Tours
The brewery conducts tours at the Clybourn Brewpub:
Saturday- 12:30pm, 2pm, and 3:30pm
Sunday- 1:30pm, 3pm, and 4:30pm
Tours are also available by special arrangement. These are popular and reservations are recommended.
One-time and very limited release
These are only some of beers that have been brewed at the Clybourn microbrewery. Every Thursday the brewpub premieres a new beer to be served exclusively at their pub or at the Wrigleyville brewpub.
