Gunn's Hill Artisan Cheese is a small artisan cheese plant nestled within the rolling hills of Gunn's Hill Rd. in Oxford County, Ontario. This small scale artisan cheese plant is the result of years of dreaming and planning by owner, operator and cheese maker Shep Ysselstein. The cheeses produced at Gunn's Hill Artisan Cheese are truly unique although you can taste the Swiss influence from techniques and recipes Shep learned while making cheese in the Swiss Alps.
The cheese plant is located within the heart of the Dairy Capital of Canada and is only minutes away from downtown Woodstock. The milk used to create the cheeses comes from the neighbouring family dairy farm, Friesvale Farms, where the finest Canadian milk is produced. To ensure cheeses that are of top quality and taste Gunn's Hill Artisan Cheeses are hand crafted using traditional cheese-making methods.
Visitors are welcome to visit Gunn's Hill Artisan Cheese to experience the unique area, learn about dairy farming and local agriculture, take a tour, be a cheese maker for a day, and most importantly, simply enjoy wonderfully delicious cheeses.

CurdyGirl:Gunn's Hill Artisan Cheese
I'm excited to introduce you to one of Ontario's newest cheesemakers, Gunn's Hill Artisan Cheese from Woodstock, Ontario. Shep Ysselstein is the owner and cheesemaker, he's a young guy, not even 30, and is making excellent quality Swiss-style washed rind cheeses. The hard cheese is similar to a Gruyere, the semi hard is more like a Gouda (he is Dutch after all), and he also makes a soft cheese, which I did not get to try yet. Shep has been making cheese at his dairy only since August 2011 (it's February 1, 2012 now), and the results are most impressive. This is certainly one cheesemaker to watch!

Walk in the shoes of a local cheese maker when you get a behind-the-scenes look at Gunn's Hill Artisan Cheese, nestled in the rolling countryside of Oxford County. Subscribe:
You'll be greeted with delicious artisan cheese before heading into the stunning aging rooms to learn how Gunn's Hill crafts unique artisan cheese with recipes developed by cheese maker Shep Ysselstein while studying in the Swiss Alps.
Learn about the heart that goes into each wheel of cheese, and what aging process secrets sets their cheese apart as you wash and flip them and of course, indulge in some too! Next, join the cheese maker to learn how to judge the quality of cheese and understand the various flavour profiles. You'll go head to head with the cheese maker to test your palette and learn to refine it.
Finally, wind down this experience in groups of 3 people by creating a delicious cheese fondue from scratch. Each fondue will use a different combination of Gunn's Hill Artisan Cheese. As the cheese is melting there will be time to mingle, taste different varieties of cheese and sample the fondue creations from other groups.

Elevate Canada: Raising the Grade for Food Processing
Over the past two years, Essential Skills Ontario (ESO), in collaboration with the Food Processing Human Resource Council (FPHRC) and various community service providers, have been working on an innovative workforce development demonstration initiative, Elevate Canada: Raising the Grade for Food Processing. Funded by Employment and Social Development Canada under the Adult Learning, Literacy and Essential Skills Program, Elevate has been helping bridge the gap between vulnerable adults looking for work and different sub-sectors of the food processing industry looking for workers.
Comprised of two phases, Elevate first spent time analyzing the job task requirements of entry level occupations in the food processing sector. Project staff visited four food processing facilities and conducted interviews with key managers and employees. These interviews focused on what skills were needed for each position and how those skills had been developed, with ESO staff then observing employees in their day to day work on the factory floor.
The second phase of the Elevate initiative involved working directly with service delivery partners and employers to train individuals receiving income support in Ontario with skills relevant to in-demand occupations in the food processing industry. Delivering integrated employer-tailored curriculums developed by Loyalist College through Alchemy Systems’ platform, nine different cohorts were trained across Ontario by six partner organizations:
One cohort in Strathroy, working with Fanshawe College and Bonduelle’s Frozen Foods
Three cohorts in Trenton/Belleville, working with Loyalist College, Canadian Blast Freezers and Vantage Foods
Two cohorts in Stratford, working with Partners in Employment, Rocky Mountain Chocolate Factory, Monforte Dairy, Shepherds Gourmet Dairy and Nutty Bakers
One cohort in Woodstock, working with Fanshawe College, Bright Cheese, Old Time Bakery, Kerry Ingredients, and Gunn’s Hill Artisan Cheese
One cohort in Oshawa, working with Durham Region Unemployed Help Centre, Buckingham Meat Market and Halenda’s Fine Foods
One cohort in Toronto, working with PTP Adult Learning and Employment Programs, Wildly Delicious Fine Foods, Real Food for Real Kids, Kerr’s Bros Limited and Country Fresh Packaging/Dominion Citrus
“The Elevate initiative really helped us learn just how important it is for communities to collaborate with each other in order to get people back to work,” says Lesley Brown, Executive Director at ESO. “By coming together to work for a common goal, everyone benefitted – employers, potential employees and trainers alike.”
