▶ Documentary The secret of the Caucasus
Georgia has protected its artistic heritage and been able to maintain the vibrancy of its unique traditions. It has conserved a biodiversity greater than that of some continents, and has a magnetism which draws people back to visit over and over again. Although as small as Switzerland, Georgia is big in all aspects; a progressive nation, European in attitude and Western in spirit; a real Caucasian country with the joy of the Mediterranean.
The vast vineyards of the Eastern Region of Kakheti, home to the largest wineries in the nation, are a clear illustration of this passion. In Georgia, there are a considerable number of grape varieties, more than anywhere else in the world. Most of them are used to make high-quality wines as prestigious as Tsinandali, Mukuzani, Theliani or Napareuli, all of which have received gold, silver and bronze medal awards in international competitions.
The care of the grape pickers and the meticulous selection process during the harvest, have led to Georgian wines enjoying worldwide recognition. According to archaeological research, Georgia is at the very cradle of wine culture, as grapes have been cultivated in this area for 7,000 years. It may even be true that the generic word for this most ancient of alcoholic drinks is derived from the Georgian word “gvino” And in some “marani”, or traditional wine cellars, such as this one in the town of Gurjaani, grapes are still pressed by foot in wooden vats to avoid crushing the seeds, which would give the wine a bitter taste.
In Kakheti, almost everything revolves around wine. Proof of this is the XVI century wine cellar in Velistsikhe, in which the traditional “kvevri” are still used: clay barrels buried underground that maintain a constant temperature to ensure optimal fermentation.
These fossilized grapes from the Neolithic Age and the discovery of vessels from the III century B.C., prove that since Prehistory, wine has played a key socioeconomic role in this region.

053 Gurjaani TV The villages of Gurjaani are emptying
In the last few years, we’ve seen more and more people leaving Kakheti either to go to Tbilisi to seek work, or to go abroad – to Greece, Turkey and Russia. The population is getting older, traditions are being lost and the workforce that Kakheti needs for its economic recovery is disappearing.

The villages of Gurjaani are emptying. Where five years ago the streets were full of young people today only the old are left.Tsitso Ghviniashvili, who lives in Gurjaani is one of those who are leaving.
SOT -Tsitso Ghviniashvili, artistI don’t have any choice, I have to leave. What else can I do?I’ve done so much here but nobody values what I do. I had a job but I had to leave it and now the outlook is really bleak.Unlike Tsitso, Marine Zardiashvili is going nowhere. But the problem of migration affects here too -She lives alone in Gurjaani. Her two sons have left to find work in Tbilisi. But Marine is managing to make a living. She received a grant for starting up a small enterprise and now has her own business growing mushrooms.
SOT
Marine Zardiashvili -businesswoman It’s not just me who is in this situation. It’s just the same for my neighbours.Over there two houses are locked up and abandoned and that way there are only pensioners. But I’m not going anywhere because I can’t leave this house. And I’m starting a little mushroom business. We’re building a greenhouse here. There are a few things still to do but it will soon be finished.
I won’t to make this work.Kakheti is famous for its viticulture and the skills and traditions needed in the vineyard are passed from generation to generation. Unlike many of his friends, wine maker Vano Kuprashvili has chosen to stay in the village and carry on the traditions inherited from his ancestors.
SOT
-Vano Kuprashvili -wine makerI guess life is better for them where they’ve gone and that’s why they’re leaving. Half the vineyards here have been sold. They can’t care for the vines any more and are abandoning them.Stand-up -According to the National Statistics Department, the population of Gurjaani has shrunk by 15,000 people in the last few years. The last census put the population of
the municipality at 55,000.If things don’t change and the migration from Gurjaani continues, that figure could be halved within a few ye

Churchkhela Store in old Tbilisi
Churchkhela (Georgian: ჩურჩხელა) is a traditional sausage-shaped candy originating from the Caucasus region. It is a very popular food, combining two of Georgia’s favorites – grapes and nuts.
Georgian soldiers relied on churchkhela as a source of shelf-stable nutrition. ( It is packed with protein and sugar). Nowadays, churchkhela are more often served at home with postprandials and coffee, but can be decorating the cheese boards as well.
Made by repeatedly dipping a long string of nuts in concentrated fresh grape juice it is delicious and nutritious and often called the Georgian ‘Snickers’!
