Welcome to the University of Southampton, today I'm going to be showing you how to make the chemically perfect cup of mulled wine. To start with we will dissolve some sugar in a small amount of wine to make a nice thick syrup so I'm going to take my sugar and I'm only
going to add just enough wine to cover the sugar. Now the reason we're doing this is because we want to heat this quite hot and as we heat it the alcohol will evaporate at about 79 degrees but we need it to be at that temperature to extract the oils from our spices if we were to put all the wine in we would then evaporate all the alcohol off so what we do is we start with a small amount disperse our oils in the wine and then at the end we'll top up to get a beautiful mulled wine taste.
So I'm going to heat this using our stirrer hot plate. We're going to peel the skin of our lemons and clementines and that is because most of the limonene present is in the skin so by taking the skin and warming them in the wine we're going to get the most limonene for our fruit and therefore the most flavour so I'm just gonna take the the peeler and peel nice big chunks of the skin. And pop them in our wine. Now that I've peeled these we're gonna put them to one side and I'm gonna add the peel to our mulled wine.
Ok, so now we're going to grind our cloves and the reason we grind a lot of spices is to increase their surface area as we know when you have a larger surface area you have more surfaces exposed to the mulled wine so therefore more of the flavour can diffuse into the mulled wine. So to do that I'm going to use a mortar and pestle I'm going to tip my cloves in and get grinding! Now it's time to add it to the wine!
Next are going to grate the Nutmeg. Now nutmeg has a combination of flavour molecules camphene, pinene and trimyristin. All with their own unique properties. We're going to grate the nutmeg, again to increase the surface area and increase the number of flavour molecules in our mulled wine.
Okay, next we're going to add our cinnamon stick for that cinnamony taste the main flavour is cinnamaldehyde and cinnamaldehyde has antiseptic and antibacterial properties.
Our next ingredient is vanilla and the main flavour of vanilla is a molecule called vanilin now we're going to cut this pod in half and again that's to help release all the flavour molecules
from inside. Vanilin is a very precious molecule so much so that you can buy synthetic vanilla or vanilin and originally it was made from eugenol which is the active ingredient in our
cloves now it's often made from a by-product of paper waste or of tree bark.
So our mulled wine is now ready, we're now going to add the rest of our wine and our star anise for a perfect finish. I'm using red wine but you could use non-alcoholic wine or pomegranate juice. And our final ingredient to add is star anise which has the taste very similar to liquorice.
Now the molecule in star anise is anethole and it's 13 times sweeter than sugar so it's that perfect little finish to make a lovely glass of mulled wine. I think it's done! So the last step now is to get rid of all of those bits because all of our flavour molecules have diffused into the wine.
And there you have it, a chemically perfect mulled wine.

Southampton Town Walls & Western Esplanade
West Quay and West Gate - This area was known as the West Quay, and was the busiest part of Southampton. The Quay stretched out into the river Test, where ships unloaded their cargo. This was still part of the shore until the 1920s, when land was reclaimed to build the western docks. Imported goods from all over Europe were unloaded in the area, including wine. Wool was the main export commodity to depart from here. It was from this quay that the Pilgrim Fathers actually left Southampton to go to America in 1620, in the Mayflower and Speedwell; however, due to the Speedwell's poor condition, it was abandoned at Plymouth, and the Mayflower travelled to America alone.
The Westgate was built in 1380, and was the only access to the Quay from the town. Inside the gate was a double portcullis; 'murder holes', where weapons can be dropped from above; and cannon. The angled gun ports are quite rare in England. This gate was the second most important in the town, after the Bargate. It was through this gate that Edward III and his bowmen left for France and the Battle of Crecy in 1346; and in 1415 Henry V passed through with his troops to embark on the second largest fleet ever assembled at Southampton en route for France and the Battle of Agincourt. Only the fleet assembled for D-Day was bigger. The Pilgrim Fathers also passed through this gate.

The United States Army and Southampton from 1942 to 1945 WORLD WAR TWO
Historic England says; During World War II, Southampton was the point of embarkation for the British Expeditionary Force to France at the start of the war and after D-Day became a principal port for the invasion of Europe with around 60% of all American troops and equipment embarking from Southampton.
On the front face of the northern pier of Dock Gate 8 is a bronzed metal memorial plaque presented to the Southern Railway by the US Army in commemoration of the military personnel who embarked from the port in World War II. The inscription reads: 1939-1945/ THIS TABLET WAS PRESENTED TO THE SOUTHERN RAILWAY BY THE / 14TH MAJOR PORT, UNITED STATES ARMY, IN PROUD AND GLORIOUS/ MEMORY OF THE MEN AND WOMEN OF THE FORCES OF THE/ UNITED NATIONS WHO SAILED FROM THIS PORT DURING THE GREAT/ WAR AGAINST AGGRESSION TO SECURE THE FREEDOM OF MANKIND/ DEO J. MEYER COLONEL TC SHERMAN L KISER COLONEL TC/ DEPUTY PORT COMMANDER PORT COMMANDER. This is included on the UK National Inventory of War Memorials: reference 21625.
Service Leavers Career Transition Event, held in Tidworth, October 2011
The fourth British Forces Resettlement Services' event was held in Tidworth in October 2011. Over 500 service leavers attended. BBC South reporter, Steve Humphreys, reported from the event and this video was shown nationally on the BBC news.
