The original Arabic booza ice cream
Levantine ice cream - or Booza - has been enjoyed by people in the Middle East for more than a century.
In Damascus the parlour that claims to have invented the dessert is visited by hundreds of people daily who form large queues to get a taste of their favourite treat.
Amid the hustle and bustle of the al-Hamiddiyah Souq in Damascus hundreds gather daily to tuck into a special treat - ice cream.
But the ordering frenzy at the Bakdash ice cream parlour isn't just for ordinary ice cream - it's for Booza - an Arabic speciality that originates from the Levantine.
Made with milk, lashings of cream and smothered with pistachio nuts, this humble delicacy is now enjoyed world wide and is a must have for anybody in Damascus.
The Damascene Syrian ice cream has become one of the most traditional aspects of Damascus. Visitors and tourists from all around Syria and the Arab world come to Damascus and specifically to al-Hamidiyya souq to taste the original Arabic booza (ice cream). It has become tradition that people who visit Damascus or the al-Hamidiyya Souq have to visit Bakdash and try the original Booza of Bakdash, says Jamal, who works at the Bakdash ice cream parlour.
The owners say that even with more than three and a half years of civil war in Syria, business hasn't been hugely affected.
The secret is in the making of Booza.
Just the right amounts of milk and cream are combined before the mixture is pounded to the right consistency with large wooden mallets.
Ice cream specialists have been making Booza here at Bakdash for almost 130 years. Established in 1885, the ice cream parlour is the oldest in the city.
And although history cites that iced desserts combining snow, fruit and honey were enjoyed by the Romans as far back as A.D. 54, owner, Samir Bakdash claims that both Booza and traditional western style ice cream were invented by his family at the parlour.
Arabian Booza was first made here at the Bakdash Parlour in al-Hamidiyya souq. We established the industry of Arabian Booza. Western style ice cream was also established here in our parlour, and then it was exported all over the world from our shop.
There are many claims to the invention of what is arguably one of the world's best loved desserts - some say the Romans - others ancient China. Some versions go as far back as the Persian Empire more than 2,500 years ago.
What's for certain is the Booza here at Bakdash is adored by pretty much everybody who tries it.
The most delicious ice cream in the world. They have spent a hundred years making the best Booza in the Levant and all of Syria, says one client.
All people from all over Syria come to Bakdash parlour to eat the most wonderful Booza, says another.
And at between USD $1 and $2 a bowl, it's a treat that's within reach.

Здесь делают традиционное арабское мороженое на молоке, без яиц и сливок, загущенное удивительным ингредиентом под названием салеп — растертыми в порошок клубнями диких орхидей. В них содержится глюкоманнан, благодаря которому мороженое получается тягучим как тесто (собственно, его и замешивают как тесто). В мороженом нет никаких искуственных добавок, да и в принципе точно так же делали мороженое и сто, и пятьсот лет назад.

Hajj Nasr Sandwich Shop - By 6 am, when Beirut is about to wake up, Hajj Nasr is getting ready to close. We arrived at 5 am to make sure he still had food. The tebleh nayyeh - Raw meat, garlic, tomatoes, mint, and the soujouk - soujouk sausage, garlic, tomatoes, pickles - sandwiches were incredible. Total price - 15,000 LBP ($9.95)
Faysal Snack ( - Great Lebanese pastries and breads. We ordered the halloumi loaf, plus some Man'ousheh (Manakish) topped with za'atar, and some spinach pastries. 19,000 LBP ($12.60) - Total price for everything
Hanna Mitri ( - If you mention ice cream in Beirut, this is the place that everyone knows and everyone loves - it’s a Lebanese ice cream icon, and it’s uniquely delicious from any other ice cream I’ve had in the world. It’s special without a doubt.
Al Soussi Restaurant ( - This is one of the most famous restaurants in Beirut, especially for breakfast. Their fattey and hummus is good, but nothing compares to their awarma and eggs.
