Today (day 63) we took an amazing home cooking class here in Hanoi. First we learned some basic phrases in Vietnamese. Then we cycled to the market and had to buy the ingredients and bargain with the sellers! We then had a fun cooking lesson and ate the food we made! Enjoy! Common ingredients include fish sauce, shrimp paste, soy sauce, rice, fresh herbs, fruit and vegetables. Vietnamese recipes use lemongrass, ginger, mint, Vietnamese mint, long coriander, Saigon cinnamon, bird's eye chili, lime, and Thai basil leaves.[2] Traditional Vietnamese cooking is greatly admired for its fresh ingredients, minimal use of dairy and oil, complementary textures, and reliance on herbs and vegetables. The population in 2015 was estimated at 7.7 million people. The city lies on the right bank of the Red River. Hanoi is 1,760 km (1,090 mi) north of Ho Chi Minh City and 120 km (75 mi) west of Hai Phong city.
From 1010 until 1802, it was the most important political centre of Vietnam. It was eclipsed by Huế, the imperial capital of Vietnam during the Nguyễn Dynasty (1802–1945). In 1873 Hanoi was conquered by the French. From 1883 to 1945, the city was the administrative center of the colony of French Indochina. The French built a modern administrative city south of Old Hanoi, creating broad, perpendicular tree-lined avenues of opera, churches, public buildings, and luxury villas, but they also destroyed large parts of the city, shedding or reducing the size of lakes and canals, while also clearing out various imperial palaces and citadels.
From 1940 to 1945 Hanoi, as well as the largest part of French Indochina and Southeast Asia, was occupied by the Japanese. On September 2, 1945, Ho Chi Minh proclaimed the Democratic Republic of Vietnam (North Vietnam). The Vietnamese National Assembly under Ho Chi Minh decided on January 6, 1946, to make Hanoi the capital of the Democratic Republic of Vietnam. From 1954 to 1976, it was the capital of North Vietnam, and it became the capital of a reunified Vietnam in 1976, after the North's victory in the Vietnam War.

Vietnamese food is truly amazing. We did our FIRST cooking class ever! A really cool experience, especially in Hanoi. We walked the local markets and learnt all about the different ingredients and their benefits to Vietnamese cuisine.
We tried a wide variety of delicious, and not so delicious..., food and then brought it all full circle and cooked some traditional vietnamese dishes.
This is the start of our journey to pursue a life fulfilling our travel passions while we document the ups and downs of embracing the 'location independent', remote working - digital nomad - lifestyle.

Vietnamese SPRING ROLLS Recipe by Auntie in HANOI | Homecooked VIETNAMESE FOOD in Hanoi, Vietnam
Today's my 2nd day in Hanoi and I was privileged to have visited a home kitchen and taste some authentic Vietnamese dishes cooked by Auntie herself.
I started my day having bacon, eggs, baguette, coffee, and spiced peanuts. Then I went straight to the local neighborhood where the homekitchen is located. I was immediately welcomed by a local Vietnamese family who turned their home kitchen into a restaurant. The neighborhood was pretty steady and laidback.
Then Auntie started cooking 3 savory dishes and 2 types of desserts. I was able to taste the following dishes:
1. Bun Nem/Fried Spring Rolls with Noodles - 35.000vnd/1.50usd
-I could say that Auntie's spring rolls are one of the best I've had. And her Nuoc Mam(fish sauce) truly has magic. Every ingredient she mixed are well balanced and has a little kick from the chillies. Loved the added crunch from the carrots and green papaya too.
2. Bun Bo Nam Bo/Mixed Beef Noodles - 35.000vnd/1.50usd
-Oh man. This was my first time having Vietnamese beef noodle salad and it was the bomb! The bowl was just loaded with perfectly seasoned and quickly stir fried beef! Add that amazing protein to the already awesome salad mix. Awesome!
3. Com Thit Lon Sot Nam/Roasted Pork Rice - 40.000vnd/1.71usd
-Normally, I would always eat or cook using beef with mushrooms. And I think it was the first time I've had pork with mushrooms. The pork was very tender and tasty. Adding the mushroom sauce just gives another level of umami goodness! Loved the crunch from the veg and the quality of the rice! A must try!
4. Che Thach Tran Chau/Coconut Pearl, Black Jelly with Sugar Syrup - 15.000vnd/.64usd
-I grew up with an easy access with a Filipino drink called, Sago't Gulaman, meaning Pearl and Jelly. Especially during my elementary days, I would always buy a plastic bag of it before or after my classes. I just love the sweetness coming from the Arnibal or Caramelized Brown Sugar. So when I got to taste this Vietnamese version, I was brought back to my childhood in a different way. This time, because of my openness to different cultures, I have learned how to appreciate differences. Auntie's coconut pearls and black jellies were made from scratch. And the major difference is she used white sugar syrup and coconut shavings on top. End result is almost the same but process and ingredients are different. It's very interesting how people can adapt from different cultures and make something their own.
5. Hoa Qua/Mixed Fruit Salad - 30.000vnd/1.30usd
-A very simple mix of fresh fruits with condensed milk, pearls, jellies, and toasted coconut. Straight up very filling yet healthy. Definitely a lot less sweeter than the Filipino version of fruit salad!
